BACON-WRAPPED ROSEMARY CHICKEN
Discovered this recipe years ago and is a family favorite. It is a great recipe for beginning cooks because it is very easy with tasty results! For a variation, try other herbs rather than rosemary such as sage, tarragon or thyme.

Steps:
- Heat the oven to 425°F.
- Cut chicken breasts into 4-6 ounce pieces.
- Sprinkle the chicken with salt and pepper.
- Wrap a slice of bacon around each piece of chicken and place in baking dish.
- Sprinkle with rosemary.
- Roast for 15 minutes at 425°F.
- Reduce heat to 375°F and continue roasting until done. It won't take long--be careful not to over cook chicken (chicken is done when juices run clear when pierced).

- Pound chicken breasts slightly with a meat mallet to uniform thickness; sprinkle with salt and pepper. Place flour in a shallow bowl. Dip chicken in flour to coat both sides; shake off excess., In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan. Cook chicken in butter and reserved drippings 4-6 minutes on each side or until a thermometer reads 165°. Remove and keep warm., Add garlic, rosemary and pepper flakes to skillet; cook and stir 1 minute. Add broth and lemon juice; bring to a boil. Cook until liquid is reduced by half. - 1. Fry bacon in a large skillet over medium high heat until crispy, about 5 minutes. Transfer the bacon with a slotted spoon to a paper towel lined plate. Spoon off all but 2 tablespoons of bacon fat. 2. Meanwhile, place the flour in a shallow dish. Season chicken breasts with salt and pepper. Dredge the chicken in the flour, shaking off excess. Melt the butter with the reserved bacon fat in the skillet over high heat. When the foaming subsides, reduce the heat to medium-high and cook the chicken till browned on both sides and the thickest part of the chicken registers 160. 3 to 5 minutes per side. Transfer the chicken to a plate(leave fat in pan) and tent with foil. 3. Reduce the heat to medium and add the garlic, rosemary, and pepper flakes. Cook until the garlic is browed about 2 minutes. Stir in the broth and lemon juice and simmer, scraping up the browned bits, until slightly thickened about 4 minutes. 4. Return the chicken and bacon to the pan and simmer, turning the chicken once or twice, until the sauce is thick and glossy, 2 to 3 minutes. SEason with salt and pepper to taste and serve.
CHICKEN CACCIATORE WITH HARISSA, BACON, AND ROSEMARY

- Put a drizzle of oil into a large sauté pan on a high heat. Use scissors to snip the bacon into bite-size pieces. Add them to the pan once hot and fry for a couple of minutes, stirring every so often, until they are browned.
- While the bacon cooks, season the chicken pieces well with salt and pepper.
- Remove the bacon from the pan, leaving the fat behind, and set aside to drain on paper towels. Put the chicken in, top side down, reduce the heat to medium and leave to cook for about 4 minutes.
- Meanwhile, trim and finely slice the green onions (both the green and the white bits) and mushrooms and peel and finely chop the garlic. Run your fingers down the length of the rosemary stalks to release their leaves and finely chop them too. Set everything aside.
- The chicken pieces should now be golden brown underneath, so flip them over and leave to cook on the other side for about 3 minutes.
- Once the chicken is golden brown, turn down the heat to low and add the prepared mushrooms, garlic and rosemary, along with the tomatoes, Madeira (or red or white wine or stock), harissa paste or tomato purée and oregano, and crumble in the bay leaf.
- Give it a good stir and then leave to bubble away for 15-20 minutes, stirring from time to time so that it does not stick to the bottom.
- When the chicken dish is about halfway through cooking, add the reserved cooked bacon and green onions, then put the kettle on. Use the boiled water to cook the pasta in a large saucepan according to the package's instructions. Once it is cooked, drain the pasta and then return it to the pan with the lid on to keep warm if necessary.
- Check to see if the chicken is cooked-if the juices run clear, it is ready. Taste the sauce, adding a little sugar and/or a pat of butter if the sauce is still a bit acidic from the tomatoes. Add a drizzle of water if the sauce is too thick and let it bubble away for a bit longer if too thin.
- Divide the pasta among four plates, top with a piece of chicken breast or two thighs, spoon some sauce over and scatter with some ripped-up basil or parsley leaves, if using.

- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Sprinkle 1 teaspoon garlic powder on a chicken breast and season with salt and pepper. Lay one rosemary sprig on the chicken breast. Wrap the bacon around the chicken to hold the rosemary on. Secure the bacon with a toothpick or an additional thick rosemary stem.

- Place bacon in a large frying pan and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain bacon slices on paper towels and snip into bits.
- Drain bacon grease from the pan and add olive oil and butter to the same pan. Add garlic and brown slightly over medium heat, 1 to 2 minutes. Add chicken, salt, and pepper; brown until chicken is staring to crisp but is not too done, about 8 minutes. Remove chicken and drain on a paper towel.
- Drain most of the oil and butter from the pan, leaving just a small amount for flavor. Add chicken broth, tomato paste, wine, and bacon bits; bring to a boil.

- Fry bacon in large skillet over medium-high heat until crisp, about 5 minutes. Transfer bacon with slotted spoon to plate lined with paper towels. Spoon off all but 2 tablespoons bacon fat.

- Make a slurry with the cornflour and water, then add to the sauce. Simmer for several minutes until the sauce is creamy and thickened. Add half the bacon to the pan, along with the sun-dried tomatoes. Adjust seasoning if needed. Scatter the remaining bacon on top and finish with fresh parsley, if you like. Serve with lemon wedges on the side.
