Savory Cheese Muffins With Bacon and Chives image

A delicious savory muffin - great for breakfast on the go, or serve with soup or salad. You can also substitute minced ham for the bacon, if you like. Note to World Tour participants - this recipe is typical of the fresh cheese and farm fresh ingredients found in Wisconsin - the MidWestern U.S. region.

4 slices bacon, thick sliced
2 tablespoons butter
1/4 cup minced fresh chives
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 eggs
1 cup milk
1 cup cheddar cheese, shredded

Steps:

  • Cook bacon until crisp.
  • Cool and crumble.
  • Set aside.
  • Preheat oven to 350.
  • Prepare muffin tin by spraying with vegetable oil spray.
  • Melt butter over medium heat in a small skillet.
  • Remove from heat and add chives.
  • Cool to room temperature.
  • In a medium bowl combine eggs and milk using a whisk.
  • Add butter/chive mixture, cheese and crumbled bacon.
  • In a small bowl, combine flour, baking powder, salt and sugar.
  • Stir to mix.
  • Add to egg mixture, stirring only until blended thorougly.
  • Spoon mixture into prepared muffin cups, filling about 2/3 full.
  • (An ice cream scooper is a great tool for this purpose.) Bake 20- 25 minutes, or until muffin tops just begin to brown.
  • Remove from oven and remove muffins from tin.
  • Cool them on a wire rack.

7 slices bacon
3 cups flour
3 tablespoons sugar
4 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
3/4 cup (1 1/2 sticks) cold unsalted butter, cut into small pieces or grated
1 1/2 cups shredded Cheddar cheese
1/4 cup chopped fresh chives
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • In a heavy-bottomed skillet over medium-high heat, cook the bacon until crisp and brown. Transfer to paper towels and drain. Chop and set aside.
  • Whisk the flour, sugar, baking powder, salt, and baking soda in a large mixing bowl.
  • Using a food processor, pastry cutter, or fingertips incorporate the chilled butter into the dry ingredients until the mixture resembles coarse meal. Add the Cheddar cheese, fresh chives, and cooked bacon. Mix to distribute the ingredients evenly.
  • Add the buttermilk and stir just until moistened. Using 1/2 cup dough for each biscuit and using a cup measure or an ice cream scoop, drop the biscuits onto the prepared baking sheet, spacing the mounds about 2-inches apart.
  • Bake until the biscuits are golden brown on top, about 15 to 20 minutes or until a tester comes out clean. Serve the biscuits warm with melted butter.

3/4 cup cornmeal
6 tbsp unsalted butter, cubed, at room temperature
2 tbsp sugar
1 1/2 tsp kosher salt
3 eggs
3/4 cup all-purpose flour
6 tbsp rye flour
1 1/2 tbsp baking powder
1/2 cup plus 1 tbsp canola oil
3 tbsp plus 2 tsp maple syrup
1 cup plus 2 tbsp buttermilk
1/2 cup diced cheddar (1" cubes) plus 1/4 cup grated
6 tbsp grated Parmesan, divided
11 slices cooked bacon, coarsely chopped
1 1/2 tbsp bacon fat, cooled
1/4 cup fresh chives and/or parsley, finely chopped
chopped rosemary, for garnish

Steps:

  • Preheat oven to 400° with rack near top. Line two 12-cup muffin pans with 15 liners, spacing them evenly between the 2 pans.
  • In the bowl of a stand mixer fitted with paddle attachment, cream butter, sugar, and salt for 1-2 minutes, until fluffy. Incorporate eggs slowly, 1 at a time, beating well after each addition. Add all-purpose flour, cornmeal, rye flour, and baking powder and mix until incorporated. Add canola oil, maple syrup, and buttermilk. Scrape mixer bowl well, making sure everything is incorporated. Add diced cheddar, 4 tbsp Parmesan, bacon, and chives. Mix just until dispersed, folding by hand to be sure.
  • Fill muffin cups to the very top.
  • Toss grated cheddar with remaining 2 tbsp Parmesan in a small bowl; sprinkle evenly over muffins. Bake for about 15 minutes, until nicely browned. Garnish with chopped rosemary.

2 cups all-purpose flour
1 1/2 tablespoons Splenda Sugar Blend for Baking
2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 teaspoons garlic powder
1/4 cup fresh chives, snipped
1/3 cup parmesan cheese, grated
1 cup light cheddar cheese (I recommend Cabot 50% light)
1/2 cup Egg Beaters egg substitute
1/2 cup skim milk
1/2 cup 98% fat-free cream of mushroom soup
1/2 cup vegetable oil

Steps:

  • Cook bacon and crumble.
  • Preheat oven to 400 degrees. Lightly grease muffin pan.
  • In a large mixing bowl combine flour, sugar, baking powder, salt, garlic powder, chives, cheese and bacon. In a small bowl combine remaining ingredients. Mix wet ingredients into dry, just until moistened.

1-1/4 cups whole milk
3/4 cup mashed potato flakes
1 large egg
1/3 cup canola oil
1 cup shredded cheddar cheese
1-2/3 cups all-purpose flour
3 tablespoons sugar
2 tablespoons minced chives
1 tablespoon dried parsley flakes
2 teaspoons baking powder
1 teaspoon salt

Steps:

  • In a small saucepan, bring milk to a boil. Remove from the heat; stir in potato flakes. Let stand for 2 minutes. Stir until smooth; cool slightly. , Transfer to a large bowl. Beat in the egg, oil and cheese. Combine the flour, sugar, chives, parsley, baking powder and salt; stir into potato mixture just until moistened (batter will be thick). , Fill greased muffin cups three-fourths full. Steps:

  • Preheat oven to 400°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Allow drippings to cool slightly (about 30 minutes). Reserve 1/3 cup drippings (discard remaining or save for another use). , Sift flour, sugar, baking powder and salt together.
