- ON PREP DAY Combine all of the ingredients and knead by hand (mix first in a large bowl, then turn out and knead) or in a stand mizer fitted with the dough hook, until the dough is elastic. It will be lumpy, of course, but the dough itself should be stretchy. Cover the bowl with plastic wrap and let the dough rise until it has doubled in size, about 1 hour in a warm room. Meanwhile, spray a 9 x 5-inch loaf pan with baking spray. Turn the dough out onto a lightly floured surface and pat it into a rough 8-inch square. Fold the top half to about the middle of the dough and press the edge down to secure it. Fold the top over again, this time to within about an inch or so of the bottom. Press the edge to seal. Now grab the bottom of the dough and pull it up to meet the dough roll you've created and seal the seam. Pinch the ends closed and place the dough, seam side down, in the prepared loaf pan. Cover the pan with plastic wrap and refrigerate the dough overnight or up to 24 hours before baking. The dough should be fully risen after about 6 hours, but a longer rest is good for it. ON BAKING DAY Take the pan out of the refrigerator and heat the oven to 350 degrees Fahrenheit. Put a rack in the center of the oven. Remove the plastic and bake the bread until it is richly browned and the internal temperature reaches 195 degrees Fahrenheit on an instant-read thermometer, about 55 minutes. Transfer the bread from the pan and cool completely on a wire rack before slicing.
BACON-TOMATO CHEESE TOASTS

- Preheat the oven to 400 degrees. Core the tomatoes and thinly slice. Place in a colander in the sink and sprinkle with 1/2 teaspoon salt; let drain for at least 15 minutes.
- Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 10 minutes; transfer to a paper-towel-lined plate. Pour off and reserve the drippings, leaving 1 tablespoon in the skillet; toast the bread on one side in the drippings until golden (do this in batches, adding more drippings as needed). Place the bread, toasted-side down, on a baking sheet.
- Combine the cheeses with the mayonnaise, scallions and parsley in a bowl. Spread the cheese mixture on the toasts, reserving about 1/3 cup. Crumble the bacon on top. Shake any excess liquid from the tomatoes; distribute the zucchini and tomatoes among the toasts. Dot with the reserved cheese mixture and season with pepper. Bake until golden brown, 15 to 20 minutes. Serve warm.
TOMATO-GARLIC BREAD

- Split a baguette lengthwise and slice into pieces; arrange on a baking sheet. Combine 3 tablespoons olive oil, 1 finely chopped garlic clove and a pinch of salt. Brush on the bread, then top each piece with a slice of tomato and some grated parmesan. Bake at 400 degrees F until lightly toasted, about 8 minutes.
ROASTED-GARLIC TOAST WITH TOMATO
Martha likes to use a rustic boule with a bit of rye in it for a denser, moister crumb. It toasts up beautifully without drying out and makes the ideal canvas for meltingly tender garlic confit, juicy Campari tomatoes, and fresh parsley.

- In a saucepan over medium heat, stir together tomatoes, garlic, salt, lemon zest, and brown sugar. Cook, stirring constantly, until tomatoes release their juices, about 5 minutes. Reduce heat to low.
- Cut each half of ciabatta into 2 or 3 pieces. Place cut-side up on a baking sheet, and bake in preheated oven until golden brown.

- Preheat the broiler.
- Cut the bread into slices 1 to 2 inches thick.
- In a small bowl, mix butter, olive oil, garlic, oregano, salt and pepper. Spread the mixture evenly on the bread slices.
- On a medium baking sheet, arrange the slices evenly and broil 5 minutes, or until slightly brown. Check frequently so they do not burn.
- Remove from broiler. Top with cheese and return to broiler 2 to 3 minutes, until cheese is slightly brown and melted. Serve at once.

- Split the bread in half lengthwise and place it on a baking sheet. Drizzle the cut side with the olive oil. Bake until golden brown and toasted, 5 to 8 minutes.

- Put oven rack in middle position and preheat oven to 375°F.
- Stir together cheese, bacon, onion, horseradish, salt, and pepper in a bowl with a rubber spatula until blended well.
- Spread about 1 1/2 tablespoons mixture evenly to edges of each slice of bread with a small offset spatula or butter knife. Arrange slices in 1 layer on a large baking sheet and freeze, covered with wax paper, until firm, about 15 minutes.

- Heat Oven to 350 Degrees.
- Coat two 8 1/2 x 4 1/2 x 2 1/2- inch loaf pans with non-stick cooking spray.
- Stir together baking mix, shredded cheese and salt to taste in a large bowl.

- Add eggs, milk and tomatoes to well.
- Stir just until the dry ingredients are moistened.
