Bacon cheeseburger meatballs are our favorite party appetizer for football games, tailgating, backyard parties and cookouts!

2 lbs ground beef (80/20)
5 strips bacon
1 tsp salt
1/2 tsp black pepper
1/2 tsp onion powder
1/4 tsp garlic powder
12 cherry tomatoes (halved)
4 slices American cheese
3 leaves lettuce (large pieces, we used Buttercrunch lettuce)
pickle spheres
jalepeno slices
mustard, mayo, ketchup, BBQ, chipotle sauce (for dipping)

Steps:

  • Preheat oven to 350F.
  • In a large bowl combine ground beef and seasonings. Use a 1-2 Tablespoon cookie scoop to make your meatballs. You should end up with about 24 meatballs. Line them in rows of 6 on a baking sheet. You can line the baking sheet with tinfoil to catch drippings for easy cleanup. Bake for 15 minutes.
  • While the meatballs are cooking, cut five strips of bacon into 5 equal pieces per bacon strip. Cook in a skillet over medium heat. Remove and set aside until cool enough to handle.
  • Cut each piece of cheese into 6 rectangles.
  • Halve the 12 cherry tomatoes (or more if you end up with more meatballs).
  • Cut your lettuce into about 1 - 2 inch square pieces.
  • Put together your layers with a meatball on the bottom, followed by a piece of cheese, then bacon, lettuce, and topped with a halved cherry tomato.
  • Serve with ketchup, mustard, or any other burger style dipping sauce.

1½ c cheddar cheese (shredded)
⅓ c ketchup

Steps:

Steps:

  • Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  • Combine all of the ingredients in a large bowl except for the cheese cubes.
  • Mix until fully combined and divide the meat mixture into 16 equal portions.
  • Flatten each portion and place a cube of cheese in the middle of it. Fold the edges over the cheese and roll it into a ball.
  • Place the meatballs on the prepared pan and cook for 20-25 minutes or until they reach 165°F.

1/4 cup mayonnaise
2 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons pickle relish
1 tablespoon apple cider vinegar
8 slices thick-cut bacon
4 sesame seed hamburger buns, split
2 pounds ground beef (80-percent lean)
Kosher salt
4 thin slices sharp white Cheddar
4 thin slices red onion
8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
  • Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.

1 pound ground chuck
1 tablespoon Worcestershire sauce
1 package onion soup mix
1/2 cup panko bread crumbs
1 tablespoon coarse black pepper
1 tablespoon beef stock
8 to 10 bocconcini mozzarella balls
1/4 cup olive oil
1 yellow onion, finely diced
2 tablespoons minced garlic
2 tablespoons freshly chopped basil leaves
2 tablespoons freshly chopped oregano leaves
1 tablespoon coarse ground black pepper
2 (14-ounce) cans crushed tomatoes
2 (14-ounce) cans diced tomatoes in puree
1/2 teaspoon crushed red pepper flakes
1 tablespoon chicken bouillon

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the bacon slices on a sheet pan. Put in the oven and bake until crisp, about 8 to 10 minutes. Remove the bacon from the pan to a cutting board and chop. Set aside.
  • In a large bowl, mix together the beef, Worcestershire, onion soup mix, bread crumbs, black pepper, stock and the chopped bacon.
  • Form portions of the meat around bocconcini to make smooth balls. Arrange the meatballs on a sheet pan with a rack and bake until thoroughly browned, about 10 to 15 minutes.
  • Add the oil to a medium saucepan over medium-high heat. When the oil is hot add the onion, garlic, basil, oregano and pepper and saute for a few minutes. Stir in the crushed and diced tomatoes, red pepper flakes and the bouillon. Lower the heat and simmer for 10 to 15 minutes.
  • Remove the meatballs from the pan to a serving platter and serve with the marinara sauce.

1 pound sliced bacon, diced
5 pounds ground beef chuck
1 large onion, chopped
¼ cup steak sauce
salt and pepper to taste
1 pound American cheese slices

Steps:

  • Preheat a grill for high heat.
  • Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
  • Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

1 envelope onion soup mix
1 pound ground beef
2 tablespoons all-purpose flour
2 tablespoons 2% milk
1 cup shredded cheddar cheese

COATING:
2 large eggs
1 cup crushed saltines (about 30 crackers)
5 tablespoons canola oil

Steps:

  • In a large bowl, combine egg and soup mix. Crumble beef over mixture and mix well. Divide into 36 portions; set aside. In another large bowl, combine the flour and milk until smooth. Add cheese and bacon; mix well. , Shape cheese mixture into 36 balls. Shape one beef portion around each cheese ball. In a shallow bowl, beat eggs for coating. Place cracker crumbs in another bowl. Dip meatballs into eggs, then coat with crumbs. , Heat oil in a large cast-iron or other heavy skillet over medium heat. 8 garlic cloves, minced

  • Spray 3 1/2- or 4-quart slow cooker with cooking spray.
