I stumbled across this recipe while looking for something different to take to a brunch. Boy, am I glad I did! Everyone asked for the recipe and was surprised it called for only five ingredients. It's the perfect treat to bake for an informal get-together. -Traci Collins, Cheyenne, Wyoming

12 bacon strips, diced
1 loaf (1 pound) frozen bread dough, thawed
2 tablespoons olive oil, divided
1 cup shredded part-skim mozzarella cheese
1 envelope (1 ounce) ranch salad dressing mix

Steps:

  • In a large skillet, cook bacon over medium heat for 5 minutes or until partially cooked; drain on paper towels. Roll out dough to 1/2-in. thickness; brush with 1 tablespoon of oil. Cut into 1-in. pieces; place in a large bowl. Add the bacon, cheese, dressing mix and remaining oil; toss to coat., Arrange pieces in a 9x5-in. oval on a parchment-lined baking sheet, layering as needed. Cover and let rise in a warm place for 30 minutes or until doubled., Bake at 350° for 40 minutes. Cover with foil; bake 15 minutes longer or until golden brown.

Steps:

  • Preheat the oven to 425 degrees F.
  • Stuff each date with 1 to 2 almonds. Wrap each date with half a piece of bacon and secure with a toothpick.

8 bacon strips, chopped
8 green onions, thinly sliced
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
2 large eggs, room temperature
1 cup sour cream
1/4 cup butter, melted
1-1/2 cups shredded Asiago cheese, divided
2/3 cup pitted dates, chopped

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan., Add green onions to drippings; cook and stir over medium-high heat until tender, 1-2 minutes. Cool slightly., In a large bowl, whisk flour, baking powder, sugar, salt and cayenne. In another bowl, whisk eggs, sour cream and melted butter until blended. Add to flour mixture; stir just until moistened. Fold in 1 cup cheese, dates, bacon and green onions (batter will be thick)., Transfer to a greased 9x5-in. loaf pan; sprinkle with remaining cheese. Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cool in pan 10 minutes before removing to a wire rack. Serve warm.

2 tablespoons vegetable oil, plus more for greasing the pan
1/2 cup chopped pitted dates, plus 12 dates, peeled, halved lengthwise and pitted
1 cup all-purpose flour
3/4 cup yellow cornmeal
1 tablespoon sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 teaspoons chopped fresh rosemary
1 egg
1 cup milk
8 strips bacon, fried, drained and diced
2 tablespoons maple syrup
Pinch cayenne pepper

Steps:

  • Preheat the oven to 375 degrees. Grease a 9-inch springform pan with vegetable oil. Line the inside perimeter of the pan with the halved dates, putting the rounded side of the dates toward the pan. Set aside.
  • In a mixing bowl, stir together the flour, cornmeal, sugar, baking powder, salt, pepper and rosemary. In another bowl, whisk the egg and milk together. Whisk in the 2 tablespoons of vegetable oil. Add the flour mixture, the chopped dates and the bacon and stir just to combine.
  • Scrape the mixture into the prepared pan. Bake until the bread is lightly browned and firm to the touch, about 20 to 25 minutes.
  • Mix the maple syrup and cayenne together. Remove the sides of the pan and brush the dates and the top of the bread with the maple syrup. Cut into thin wedges and serve warm with roast chicken, lamb or pork.

A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

Black pepper (optional)

Steps:

  • Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
  • Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
  • Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.
