450g lamb's liver, sliced
1 tablespoon plain flour
1 small handful fresh sage leaves, finely chopped
175g smoked back or streaky bacon, cut into pieces, or pancetta cubes
1 medium onion, peeled and finely sliced
1 teaspoon olive oil
3 tablespoons good, aged balsamic vinegar
250ml good, hot lamb stock

Steps:

  • In a shallow bowl mix together the flour, seasoning and sage leaves. Toss the liver in the seasoned flour. Heat a large non-stick frying pan cook the bacon or pancetta and onions for 3-4 minutes until crispy. Remove and keep warm. In the same pan heat the oil and cook the liver for 1-2 minutes on each side, to seal. Remove the liver from the pan and keep warm with the bacon. Add the balsamic vinegar to the pan and stir in the stock, return the liver and bacon to the pan and simmer for 5 minutes. Serve with crispy onions, mashed potatoes and carrots.

1 pound calves' liver, sliced
1 (5.5 ounce) package pork flavored seasoning coating mix (e.g. - SHAKE-N-BAKE)

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Transfer bacon to a plate, reserving a small amount of grease in the pan and the rest aside.
  • Pour seasoning coating mix into a large resealable plastic bag. Place calves' liver in bag one slice at a time; seal, and toss to coat.
  • Cook liver in bacon grease over medium high heat, turning occasionally to brown both sides. Depending on the size of your skillet you may need to work in batches and add more bacon grease. Liver is done when juices run clear. Return bacon to the skillet during the last 2 minutes of cooking to warm through. Serve hot with your favorite side dish.

4 rashers smoked streaky bacon
2 tbsp plain flour, seasoned
pinch dried sage (optional)
6 slices lamb's livers (about 400g/14oz)
1 tbsp olive oil
1 onion, thinly sliced
300ml beef stock
2 tbsp ketchup

Steps:

  • Cook the bacon in a large non-stick frying pan until crisp. Meanwhile, mix the flour and sage, if using, and use to dust the liver. Remove bacon from the pan and set aside. Add the oil to the pan and brown the liver for about 1 min on each side. Remove from the pan, then fry the onion until softened. Stir in stock and ketchup, then bubble for 5 mins.
  • Put the liver back in the pan and cook for 3 mins until cooked through. Serve with the bacon broken over the top and some mash. (see related recipes)

2 pounds sliced beef liver
1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed
salt and pepper to taste

Steps:

  • Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  • When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

1 lb calves liver
2 eggs beaten with a little water
1 sleeve crushed saltine crackers
1 c bacon drippings
salt and pepper to taste

Steps:

  • 1. Rinse the calves liver under cold running water. Cut out any tough areas (Usually where the veins run through the liver.)
  • 2. With a very sharp knife slice the liver into thin strips then cut into thinner strips that resemble french fry cuts.
  • 3. Put the crushed saltine in a quart size zip top baggie.
  • 4. Put a good amount of bacon drippings in a cast iron skillet over medium heat. [You don't want the dripping so hot they smoke.]
  • 5. Drag a few of the bacon strip through the egg wash and shake of excess. Then drop into the baggie and coat with saltine crumbs.
  • 6. Gently lay the liver strips into the hot bacon drippings with enough room that you can turn them easily. Brown on all sides and remove to a plate covered in several layers of paper towel. Continue until all liver is cooked. [Note: The liver cooks very quickly so don't over cook it.] Eat.

1 cup whole milk
8 bacon slices, halved crosswise
3 medium onions, halved lengthwise, then cut lengthwise into 1/4-inch slices
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Soak liver in milk in a bowl 20 minutes.
  • While liver is soaking, cook bacon in a 12-inch nonstick skillet over moderate heat, turning over occasionally, until crisp. Transfer bacon to paper towels to drain and reserve 2 1/2 tablespoons fat in skillet, transferring remaining fat to a small bowl.
  • Cook onions with salt and pepper to taste in fat in skillet over moderate heat, stirring frequently, until golden brown, 12 to 15 minutes. Transfer onions to a bowl and add bacon. Keep warm, covered.
  • Pat liver dry and discard milk. Stir together flour, salt, and pepper on a sheet of wax paper and dredge liver in flour mixture, shaking off excess.
  • Add 1 1/2 tablespoons reserved bacon fat to skillet and heat over moderately high heat until hot but not smoking, then sauté liver, turning over once, until browned but still pink inside, about 4 minutes total. Serve liver topped with onions and bacon.

450g lambs' or calves' liver, sliced (thawed, if frozen)
4 tsp plain flour
20g butter
1 tsp sunflower oil
1 medium onion, fairly thinly sliced
2 rindless lean back bacon rashers (about 55g), each cut into 2cm wide strips
500ml beef stock, made with 1 stock cube
2 tsp tomato ketchup
flaked sea salt
freshly ground black pepper

Steps:

  • Rinse the liver in a colander under cold water and drain it well on kitchen paper. Put 2 teaspoons of the flour in a large bowl and season with plenty of salt and pepper. Add the liver to the bowl and turn it in the flour until lightly coated. Melt half the butter with the oil in a large non-stick frying pan over a medium heat. Tap the excess flour off each slice of liver and add them to the pan using tongs. Cook for 1½-2 minutes on each side until lightly browned but not completely cooked through, then pop them on to a plate. Turn down the heat and melt the remaining butter in the same pan. Add the sliced onion and cook for a minute or so, stirring to separate the layers. Next, add the bacon and cook together for another 5 minutes or until the onion is softened and pale golden brown, stirring often. Sprinkle the remaining flour over the onion and bacon and cook for a few seconds, stirring. Pour the hot stock slowly into the pan, stirring constantly. Bring to a simmer, stir in the ketchup and cook over a medium heat until the gravy is thickened and glossy. Put the liver back in the pan and heat it through in the onion gravy for 2-3 minutes until hot, stirring. Season to taste with salt and pepper. Serve the liver and bacon with a small portion of mashed potatoes and lots of freshly cooked greens.

25g/1oz butter
2 tbsp sunflower oil
4 tbsp plain flour

125g/4½oz rindless streaky bacon rashers, each cut into 4-5 pieces
1 beef stock cube
500ml/18fl oz just-boiled water
1-2 tsp tomato ketchup
salt and freshly ground black pepper

Steps:

  • Rinse the liver in a colander under cold water and drain well on kitchen paper. Melt half of the butter with the oil in a large non-stick frying pan over a high heat.
  • Put three tablespoons of the flour in a large bowl and season with salt and freshly ground black pepper.
  • Coat half the liver in the seasoned flour, shake off any excess, then fry each slice in the hot fat for 1-2 minutes on each side until lightly browned, but not completely cooked through.
  • Transfer the slices to a plate and repeat with the remaining liver.
  • Reduce the heat and melt the remaining butter in the same pan. Add the sliced onion and cook for a minute or so, stirring to separate the layers.
  • Add the bacon to the pan and cook, stirring from time to time, for 8-10 minutes or until the onion is pale golden-brown and the bacon is beginning to crisp.
  • Sprinkle the rest of the flour over the onion and bacon and stir it for a minute or so.
  • Dissolve the stock cube in the just-boiled water and pour slowly into the pan, stirring constantly.
  • Bring to a simmer and cook over a medium heat until the gravy is thickened. Add a dash of tomato ketchup and season with salt and freshly ground black pepper.
  • Return the liver to the pan with the onion gravy for just 1-2 minutes to warm it through and finish cooking.
  • Serve the liver and bacon with some mash and freshly cooked greens.

1 pound beef liver (cut into strips)
3 large onions (sliced)
4 slices bacon
5 tablespoons butter (divided)
salt (to taste)

Steps:

  • Add milk to a shallow bowl. Soak liver in the milk for about 20 minutes to remove any bitterness.
  • Meanwhile, cook your bacon in a large skillet. Drain on paper towels and cut into 1/2" chunks. Set aside.
  • Reserve 1 1/2 tablespoons of bacon grease and add 2 tablespoons of the butter to the bacon grease in the same skillet. Add onions and cook over a medium heat stirring occasionally until caramelized, about 25 minutes. Remove onions to a dish, sprinkle with salt and set aside.
  • Pat liver dry and discard the milk. Return skillet to high heat and add the remaining 3 tablespoons of butter to the pan. When the butter foam subsides, the butter is hot enough. Arrange the liver in the pan being certain not to crowd the pan. I worked in two batches. Sauté for 3 minutes regulating the heat so that the butter remains hot, but does not burn. Turn liver over and sauté about 2 minutes more. The inside meat should still be pink.
  • Serve liver topped with onion and bacon.

1 large onion, halved and thinly sliced
pinch of sugar
1½ tsp balsamic vinegar
6 rashers of thinly sliced dry-cured streaky bacon, rind removed
275-350g/10-12oz calves' liver, very thinly sliced
15g/½oz seasoned flour for dusting
1 tbsp sunflower oil
salt
freshly ground black pepper
225g/8oz swede, peeled and cut into chunks
225g/8oz carrots, peeled and cut into chunks
225g/8oz potatoes, peeled and cut into chunks
25g/¾oz butter
handful of rocket
salt
freshly ground black pepper

Steps:

  • Preheat the grill to high. Melt the butter in a large frying pan and fry the onions and sugar over a medium heat, stirring frequently, for 7-8 minutes until nicely browned.
  • Season with salt and pepper, add the balsamic vinegar and leave it to bubble up for a few seconds. Keep warm.
  • Grill the bacon until beginning to crisp at the edges. Keep warm.
  • Season the liver on both sides with salt and pepper and then coat lightly in the seasoned flour. Pat off the excess.
  • Heat another large frying pan over a high heat. Add the oil and then the slices of liver and cook them over a high heat for 30 seconds on each side, the object being to have the liver nicely browned on the outside, yet still pink and juicy on the inside.
  • To make the root vegetable and rocket purée, cook the swede, carrots and potatoes in boiling salted water for 20 minutes, until tender. Then drain, place in a blender with the butter and blitz into a smooth purée.
  • Finally, return the purée to the pan and leave on a gentle heat, until the mixture has dried out. Add the rocket, salt and pepper and serve with the pan-fried-liver, bacon and caramelised balsamic onions.
