4 slices bacon
1 1/2 sweet yellow onion chopped
2 yukon gold potatoes
2 T Olive Oil
2 T butter
Salt
Pepper
Onion powder
garlic powder
Sharp cheddar shredded
fried eggs

Steps:

  • Slice bacon into small pieces and add to a hot cast iron skillet. Once bacon starts to render fat a bit, add onions and cook. Turn down to medium low. Meanwhile cube yukon gold potatoes into small cubes. I don't peel them, but you can if you want. Just cut off any big eyes or blemishes... Add potatoes. Season with salt, pepper, onion powder and garlic powder. This is an exercise in patience. every few minutes stir the contents, scraping the bottom of the pan. Once the bacon grease is absorbed, add a little of the olive oil and butter and continue to cook. Keep this up until the potatoes are tender and everything is crusty and brown. taste occassionally to see if more seasoning is required. Amount of salt depends on the bacon. Once crusty, fry 2 eggs over easy for each serving. put potatoes on a plate, top with shredded cheddar cheese and 2 fried eggs. Enjoy!

2 teaspoons garlic-infused oil
1 tomato, diced
2 teaspoons Worcestershire sauce
2 tablespoons chopped fresh parsley leaves
Freshly ground black pepper
Serving suggestion: bread

Steps:

  • Cut each piece of bacon into 3 or 4 pieces. Heat oil in a skillet. When oil is hot, fry bacon until crispy (the bacon will also give up flavorful fat of its own). Remove the bacon to a piece of kitchen towel.
  • Add the diced tomato, with all its seeded, gluey interior, into the hot oily pan, which will cause a great spitting and sizzling, and stir for a couple of minutes. Add the Worcestershire sauce and stir again, then put the bacon back into the pan, mixing it into the tomato before transferring to a plate.
  • Scatter with some parsley and freshly ground black pepper, and serve with bread to dip in the oily juices.

6 pieces peppered bacon, chopped
4 large eggs
2 sweet potatoes, peeled and diced into 1/2-inch pieces
4 parsnips, peeled and diced into 1/2-inch pieces
2 cups Brussels sprouts, quartered
1 medium red onion, chopped
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 Roma tomato, diced
1 cup crumbled goat cheese
1/4 cup fresh parsley leaves
8 leaves basil, chiffonade

Steps:

  • Line a plate with a paper towel and set aside. Heat a large nonstick skillet over medium-high heat. Fry the bacon, stirring occasionally, until crisp, 4 to 5 minutes. Remove the bacon to the lined plate with a slotted spoon or spatula.
  • Remove all but 2 tablespoons of grease from the skillet, reserving the remaining grease. Fry the eggs in the bacon fat for 2 to 3 minutes. Remove to a plate and cover with a paper towel to keep warm.
  • Add 1 more tablespoon bacon grease and turn up the heat to high. Add the sweet potatoes, parsnips, Brussels sprouts, onion, garlic and some salt and pepper, then cook, stirring occasionally, for 3 to 4 minutes. Deglaze the pan with 1/4 cup of water, then put the lid on and steam for 1 to 2 minutes.
  • Place fried eggs on top of hash and sprinkle over the bacon, diced tomatoes, goat cheese, parsley and basil.

10 cups large chunks of peeled potatoes
8 slices bacon
3 large onions, sliced
1 ½ teaspoons salt

Steps:

  • Place potatoes in large pot. Fill the pot with cold water until it is half an inch above the top of the potatoes. Add the salt to the water and stir briefly to dissolve. Bring water to a boil and cook until tender, about 15 to 20 minutes. Drain and set aside to cool.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, drain, cool and crumble. Leave bacon fat in skillet and return to stove.
  • Add potato chunks, onion and crumbled bacon to skillet. Cook over medium high heat until potatoes begin to brown and onions are translucent, about 25 minutes.

  • Place the potatoes and carrots in a large pan of boiling water. Cook for 10 minutes, add the greens and continue to cook for a further 5 minutes.
  • Place the bacon rashers and shallot in a large frying pan and cook until the bacon becomes crispy.
  • Meanwhile, drain the vegetables and either mix together or mash to combine well. Preheat the grill.
  • Add the potato mixture to the pan and roughly spread out. Dot with the butter and season. Place under a hot grill and cook until browned.
  • Either serve from the pan or turn out onto a plate and cut into wedges.
  • Serve with your favourite ketchup or chutney or make a nutty herb pesto by whizzing together some hazelnuts, olive oil, seasoning, basil, mint and parsley.

Steps:

  • In 12-inch skillet, cook bacon until crisp. Using slotted spoon. Remove from pan to small bowl. Cover and refrigerate. Drain drippings, reserving 1 tablespoon in pan. Add onion, bell pepper and mushrooms; cook 4 minutes over medium heat, stirring occasionally. Stir in mustard, salt and pepper. In large bowl, beat milk and eggs with wire whisk.
  • Spray 13x9-inch (3-quart) baking dish with cooking spray. Spread half of hash browns in baking dish. Spread onion mixture evenly on top. Sprinkle with 1 cup of the cheese. Spread remaining hash browns over top. Pour egg mixture on top. Cover; refrigerate 8 hours or overnight.
  • Heat oven to 325°F. Uncover; bake 50 to 60 minutes or until thermometer inserted in center reads 160°F. Sprinkle with remaining 1 cup cheese and the bacon. Bake 3 to 5 minutes longer or until knife inserted in center comes out clean, top is puffed and cheese is melted. Let stand 5 minutes.

I hadn't made it for a long time but made it this Christmas Eve to serve with cabbage rolls - it was a HUGE hit. So, I thought I would share. There are several hash brown casseroles already posted but none with bacon.

2 lbs frozen hash browns
1 (10 ounce) can low-fat cream of chicken soup
1/2 cup margarine
2 cups light sour cream
8 ounces cheddar cheese, shredded
1/2 lb bacon
salt & pepper, to taste

Steps:

  • Thaw hash browns for 30 minutes.
  • While hash browns are thawing, prepare the bacon: Using clean scissors, cut the bacon into thin strips horizontally. Fry until crispy or desired doneness. (The scissor method saves the hassle of trying to crumble the bacon after it is cooked.).
  • In a large bowl, mix together soup & sour cream & salt and pepper.
  • Add melted margarine & mix well.
  • Add the cheese & bacon and then the hash browns. Continue mixing until well combined.
  • Spread mixture into 9 X 13 pan, lightly coated with cooking spray.
