- To prepare herbed mayo: In a medium bowl, combine mayonnaise, dried herbs, Worcestershire sauce and lemon juice, mixing well. Cover and refrigerate.
- Cut each strip of bacon in half and cook in a skillet over medium heat until crisp.
- Remove and drain on paper towels. Pour off all but 1 tablespoon bacon drippings from the pan.
- Add mushroom slices and soy sauce to the pan.
- Over medium heat, saute mushrooms until browned and soft, about 5 to 10 minutes. Drain on paper towels.
- Preheat grill for medium heat and lightly oil the grate.
- To prepare burgers, mix ground beef, garlic granules, and salt and pepper together in a bowl. Form into patties. Place on prepared grill and grill 3 to 5 minutes per each side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).
- During last 2 minutes of cooking, top with cheese and cover to melt cheese.
- Meanwhile, heat oven to 400 degrees, arrange hamburger buns on a foil-lined cookie sheet and lightly toast hamburger buns in the oven on each side.
- When toasted, remove buns to serving plates and spread some of the herbed mayonnaise on each bun.
- To serve, put cheese-topped patties on each bun, add desired hamburger trimmings, finish with the top bun and enjoy.

- Heat oven to 400°F.
- In 5-quart Dutch oven, cook beef, onion and garlic over medium-high heat 7 to 9 minutes, stirring occasionally, until beef is no longer pink. Add mushrooms; cook, stirring occasionally, 4 to 6 minutes longer or until mushrooms are tender and brown. Stir in broth, tomatoes, grill seasoning, salt and pepper. Heat to boiling; reduce heat. Cook uncovered 10 minutes, stirring occasionally.

- Slice the bacon into lardons and slowly sauté in a large stock pot to render fat. When crispy remove the bacon from pan & drain on a paper towel.
- Increase the heat to medium and brown the ground beef. Drain fat if desired.
- Add the onions and mushrooms, season with salt, black & red peppers and steak seasoning. Sauté for about 5 minutes until veggies just soften. Add the garlic & sauté until fragrant, about 30 seconds.

- In a large sauce pan or dutch oven, over medium-high heat, fry the bacon until crisp. Remove bacon and set aside, leaving ¼ of the drippings in the pot.
- Add the beef to the pot, don't move it or break it for 3-4 minutes, so it gets nice and brown. Start crumbling the beef and cook until browned and no longer pink. Drain and set aside.
- Reduce heat to medium low, add the butter and once melted, add diced onion. Cook until tender, about 5 minutes.
- Add the rest of the veggies: carrots, celery and potatoes. For extra flavor, cook the veggies for 7-10 minutes until tender or proceed to adding the chicken broth.
- Add 3 cups of chicken broth and the dried herbs: red pepper flakes, parsley, basil and oregano. Season with salt and pepper.
- Stir and add back in the beef, stir and if the soup is too thick, add one more cup of broth. Bring to a boil. Reduce heat and simmer, covered, until potatoes are tender, 10-12 minutes.
- Reduce heat to low. Stir in sour cream and heavy cream. Taste and adjust for salt and pepper.
- Turn off the heat and stir in the cheese until it melts.
- Stir in ¾ of the bacon.
- Serve garnished with the remaining bacon and fresh parsley.

- In a large saucepan or dutch oven pan, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside. Add the diced shallots to the bacon grease and cook for about 3 minutes, until tender. Add the mushrooms, rosemary and garlic to the pan. Cook for about 5 minutes, until the mushrooms are tender and golden. Return the cooked bacon to the pan.
- Sprinkle the flour over the mushrooms and bacon and stir to coat. Cook for about 1 minute, stirring constantly.
- Pour the chicken broth into the pan. If desired, add a splash of marsala wine. Stir to combine. Bring the mixture to a simmer, stirring frequently. It should begin to thicken as it simmers. Simmer for a few minutes, then reduce heat and add the half and half.
- Remove about a cup of the soup with a bunch of the mushrooms When cool enough to safely handle, blend the cup of soup until smooth. Return the blended mixture to the pan with the rest of the soup.
- OR just use a stick blender right in the pan to make a lovely smooth soup.
- Season with the salt and pepper.

- Combine onion, bell peppers, and garlic in the bowl of a food processor; pulse until finely chopped but not quite pureed.
- Transfer onion mixture to a saute pan over medium heat; cook until reduced to a moist paste, about 20 minutes. When done, set aside to cool.
- Grate Cheddar and Asiago cheeses into a bowl using the finest teeth of a box grater.
- Place ground beef in a large mixing bowl. Add onion mixture and salt; mix thoroughly by hand until evenly combined. Add grated cheese mixture, a bit at a time, and mix until thoroughly combined. Add panko and mix until evenly distributed. Form into 8 balls and press into patties, using a hamburger maker if you have one. Wrap patties in waxed paper and refrigerate for at least 4 hours, but preferably overnight.
- Remove burgers from the refrigerator. Preheat an outdoor grill for 375 degrees F (190 degrees C) and lightly oil the grate.
- While the grill is preheating, cook bacon in a large skillet and over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Drain all but 1 tablespoon bacon grease from the skillet and add mushrooms. Saute over medium heat until soft, about 5 minutes. Set aside.
- Cook burgers on the preheated grill until no longer pink in the center, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). During the last few minutes of cooling, add 2 slices bacon and 1 slice American cheese to each burger.
- Remove burgers from the grill. Place on Kaiser rolls and add mushrooms.

This recipe came from a friend of mine. I changed it a bit, I have a habit of browning my hamburger in bacon grease after I browned my bacon when any recipes call for both. My kids hate veggies, I made this one week-end for me and DH to have for a meal and left overs the next day. My college kids came home (3 of them) they asked me what was in the pot and boom, not a tsp. was left after we ate. It wasn't even lunch time yet!!! Oh, my teen son saw them eat it and he joined in also!!!! They still hate veggies but not this stuff!

- In a heavy pot with tall sides (a small to medium sized stock pot works great) over medium heat, fry the bacon. Remove to a plate lined with a paper towel to drain. Let cool, then roughly chop and set aside.
- Drain the bacon grease and return pot to the burner. Add the hamburger, breaking it into smaller chunks. Sprinkle with Lipton Onion Soup mix and stir. Once the hamburger is thoroughly browned, remove to another plate lined with a paper towel to drain. Set aside.
- Drain any hamburger grease from the pot and add the butter. Once it is mostly melted, add the onion, mushrooms, and garlic. Stir well. Cook until thoroughly softened, about 15 minutes.
- Add the browned hamburger back to the pot, followed by the beef broth, tomatoes, cheddar cheese soup, half and half, Worcestershire sauce, ketchup, mustard, cumin, chili powder, garlic powder, Lawrys salt, and black pepper. Let the soup heat up as you occasionally stir it. Once hot, stir in the sour cream and chopped bacon. Let it cook another minute or so, then serve with a garnishing of dill pickle chips and shredded cheddar cheese, with toasted garlic buns for dipping.

- Cook the bacon: In a large heavy-bottomed pot set over medium-low heat, add the olive oil and bacon. Cook, stirring often until the bacon is crispy and the fat has rendered out, for 6 to 7 minutes. Transfer about half of the bacon into a small bowl. It will be used as a topping for the soup.

- Add the cheese: Over very low heat, add the cream cheese and cheddar cheese. Stir gently until both cheeses melt into the soup. Don't bring the soup to a boil once the cheeses are added. They will break and you'll end up with a grainy soup.
