1 (16-ounce) package frozen potato and cheddar pierogies
8 slices bacon, chopped
4 garlic clothes, minced
2 (8-ounce) packages cream cheese softened and cubed
1 cup chicken broth
Salt and pepper, to taste
2 cups cheddar cheese
4 green onions, chopped
1/4 cup seeded plum tomatoes, chopped

Steps:

  • Preheat oven to 400°F. Arrange the pierogies in a lightly greased 9 x 9-inch baking dish. In a medium skillet cook the bacon until crisp. Removed to a paper towel lined plate. Add garlic to the drippings in the pan and cook for 30 seconds. Add cream cheese to pan and cook until cream cheese begins to melt stirring frequently. Gradually whisk in chicken broth until smooth. Season sauce with salt and pepper to taste. Pour the cream cheese mixture evenly over the pierogies. Bake for 15 minutes or until bubbly and heated did through. Remove from oven and top with cheese bake for an additional five minutes or until cheese is melted. Top with cooked bacon, green onions and tomato before serving .

A favorite dish in our family is pierogi-tasty pockets of dough filled with cottage cheese and onions. Making pierogi is time-consuming, so my mom created this easy casserole.-Sandy Starks, Amherst, New York

1 package (16 ounces) spiral pasta
1 pound sliced bacon, diced
2 medium onions, chopped
2 garlic cloves, minced
1/2 pound fresh mushrooms, sliced
2 cans (14 ounces each) sauerkraut, rinsed and well drained
3 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 cup milk
1/2 teaspoon celery seed
1/8 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 tablespoons drippings. , In the drippings, saute onions until tender. Add garlic; cook 1 minute longer. Add mushrooms; cook until tender. Stir in sauerkraut and half of the bacon. In a large bowl, combine the soup, milk, celery seed and pepper. Drain pasta., Place a fourth of the pasta in two greased 13-in. x 9-in. baking dishes. Layer each with a fourth of the sauerkraut and soup mixture. Repeat layers. , Cover and bake at 350° for 25 minutes. Uncover; sprinkle with remaining bacon. Bake 10-15 minutes longer or until heated through. Let stand for 5-10 minutes before serving.

Full of flavor, this pierogi casserole is nothing short of rich and hearty. It's a wonderful change from the usual humdrum casserole.

5 medium (2-1/4" to 3" dia, raw)s potatoes, peeled and cubed
½ cup milk
½ cup butter, melted
½ pound bacon, diced
1 onion, chopped
6 cloves garlic, minced
½ (16 ounce) package lasagna noodles
2 cups shredded Cheddar cheese
salt and pepper to taste
1 (8 ounce) container sour cream
3 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes in a large pot with water to cover over high heat. Bring to a boil and cook until the potatoes are tender. Remove from heat, drain, then combine with the milk and 6 tablespoons of butter, mash and set aside.
  • Melt the remaining 2 tablespoons of the butter in a large skillet over medium high heat. Saute the bacon, onion and garlic in the butter for 5 to 10 minutes, or until the bacon is fully cooked.
  • Cook the lasagna noodles according to package directions and cool under running water.
  • Place 1/2 of the mashed potatoes into the bottom of a 9x13 inch baking dish. Top this with 1/3 of the cheese, followed by a layer of lasagna noodles. Repeat this with the remaining potatoes, another 1/3 of the cheese and a layer of noodles. Then arrange the bacon, onion and garlic over the noodles, then another layer of noodles, and finally top all with the remaining cheese. Season with salt and pepper to taste.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 30 to 45 minutes, or until the cheese is melted and bubbly. Serve with sour cream and chopped fresh chives.
