MAC 'N CHEESE WITH BACON AND CHEESE



Mac 'N Cheese with Bacon and Cheese image

Kosher salt
1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
  • Preheat the oven to 400 degrees F.
  • In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
  • While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
  • To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

1/4 teaspoon white pepper
1 cup chopped seeded tomatoes

Steps:

  • Cook pasta according to package directions. Meanwhile, in a Dutch oven, melt butter over medium heat. Stir in flour until smooth; gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Reduce heat to medium. Stir in the cheese, salt, mustard and pepper. Cook and stir until cheese is melted. Drain pasta; stir into cheese sauce. Cook and stir for 3 minutes or until heated through. Stir in tomatoes just until combined.

1 lb. sourdough bread, cut into 1/2-inch cubes
1 small onion, chopped
8 slices OSCAR MAYER Bacon, chopped
3 plum tomatoes, seeded, chopped
8 eggs
1/2 cup milk
8 KRAFT Singles, halved diagonally

Steps:

  • Heat oven to 350ºF.
  • Place bread cubes on rimmed baking sheet; bake 10 min. or until lightly toasted. Meanwhile, cook and stir bacon and onions in skillet on medium heat until bacon is browned and onions are tender.
  • Combine bread cubes, onions and bacon in large bowl. Stir in tomatoes. Spoon half the bread mixture into 13x9-inch baking dish sprayed with cooking spray; top with half the cheese slices. Repeat layers. Whisk eggs and milk until well blended; pour over bread mixture.
  • Bake 35 min. or until center is set. Let stand 5 min. before serving.

250 g uncooked macaroni
4 slices bacon, chopped
30 g butter
1 medium onion, chopped
1 green capsicum, chopped (optional)
2 tablespoons plain flour
1 (454 g) can tomato soup
1/2 cup water or 1/2 cup milk
250 g cheese, grated
salt and pepper

Steps:

  • Cook macaroni in boiling salted water until tender (approx. 10 minutes), drain.
  • Add butter and saute bacon, onion and green capsicum for few minutes or until the bacon is cooked.
  • Add flour, stir for a minute then add the soup and milk/water, stirring until mixture boils and thickens.
  • Add 3/4 of the cheese and stir until it melts.
  • Season to taste.
  • Combine with the macaroni and pour into a buttered casserole dish.
  • Top with remaining cheese and bake in a moderate oven about 20 minutes or until heated through.

1 lb penne pasta
2 tablespoons unsalted butter
3 tablespoons flour
1/8 teaspoon nutmeg
1 quart milk
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 lb shredded gruyere cheese
1/2 lb cheddar cheese
3 ripe plum tomatoes, diced
1 lb bacon, cooked and crumbled
3 tablespoons olive oil

Steps:

  • Heat oven to 350 degrees F.
  • Generously butter a 1/12 quart baking dish.
  • Add 1/4 cup of the bread crumbs; shake to coat dish evenly.
  • Heat large pot of salted water to a boil.
  • Cook pasta until al dente, about 7 minutes.
  • Drain.
  • Place in large bowl.
  • Melt butter in large saucepan.
  • Whisk inflour; cook, stirring, 2 minutes.
  • Add nutmeg; cook 1 minute.
  • Whisk in milk all at once.
  • Heat to boil; simmer, stirring, 5 minutes.
  • Season with salt and pepper.
  • Remove from heat; stir in cheeses until melted.
  • Add sauce to pasta, mix well.
  • Spoon 1/2 mixture into prepared baking dish.
  • Add tomatoes and bacon in an even layer.

  • Combine 1/2 cup of the remaining bread crumbs with olive oil in small bowl.
  • Sprinkle over macaroni.

1 (16 ounce) package elbow macaroni
1 (8 ounce) package sharp white Cheddar cheese, shredded
½ (8 ounce) package cream cheese
3 ounces Parmesan cheese, grated, or more to taste
1 tablespoon salt
½ teaspoon ground black pepper
1 large leek
3 large plum tomatoes

Steps:

  • Bring water to a boil in an 8-quart stockpot.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, 8 to 10 minutes. Drain bacon on a paper towel-lined plate.
