Bacon Wrapped Asparagus Bundles image

These bundles can be easily prepared on an outdoor grill or in a hot oven.

1 1/2 pounds asparagus spears, trimmed 4 to 5 inches long tips
Extra-virgin olive oil, for drizzling
A few grinds black pepper
4 slices center cut bacon or pancetta
Chopped chives or scallions, optional garnish

Steps:

  • Preheat oven, if using, to 400 degrees F.
  • Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
  • To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
  • For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

2 Tbsp. extra virgin olive oil
1 Tbsp. GREY POUPON Dijon Mustard
1/2 tsp. garlic powder
12 slices OSCAR MAYER Turkey Bacon

Steps:

  • Heat oven to 425°F.
  • Combine vegetables in large bowl. Whisk next 4 ingredients until blended. Add to vegetables; mix lightly.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Place bacon slices in single layer on prepared baking sheet; top evenly with beans and carrots, placing vegetable pieces crosswise along length of bacon slices. Roll up, starting at one short end of each bacon slice. Place, seam sides down, on baking sheet.
  • Bake 30 min. or until bacon is crisp, turning after 15 min.

2 Tbsp. GREY POUPON Savory Honey Mustard

Steps:

  • Toss water chestnuts with teriyaki sauce. Let stand 10 min.; drain.
  • Heat oven to 375ºF. Brush crackers with syrup. Top each with 1 water chestnut slice; wrap with bacon piece, overlapping ends under cracker. Place on foil-covered baking sheet.
  • Bake 25 min. Heat broiler. Transfer topped crackers to broiler. Broil, 6 inches from heat, 3 min. or until bacon is crisp. Transfer to plate; top with mustard and peppers.

Steps:

  • Preheat oven to 325°. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Drain on paper towels., Lightly grease 6 muffin cups with 1 teaspoon butter. Cut 6 bacon strips crosswise in half. Line bottom of each muffin cup with 2 bacon halves. Line sides of each muffin cup with 1 or 2 whole bacon strips. 1 pound fresh green beans, trimmed
cooking spray
1 (12 ounce) package thin-sliced smoked maple bacon, cut in 1/2
½ cup butter, melted
½ cup brown sugar
4 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1 tablespoon minced garlic

Steps:

  • Fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add green beans and cook uncovered until tender-crisp, 2 to 3 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.
  • Spray a 9x13-inch baking dish with cooking spray.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until almost browned but flimsy, and not yet crisp, 6 to 8 minutes. Drain bacon slices on paper towels and let cool slightly, about 5 minutes.
  • Wrap 8 to 10 green beans with bacon and place into the prepared dish. Repeat with remaining green beans and bacon.
  • Combine butter, brown sugar, Worcestershire, soy sauce, and garlic in a bowl. Pour over green bean bundles. Cover with aluminum foil and marinate in the refrigerator, 2 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).

  • Saute garlic and parsley over low heat, then set aside to steep.
  • Remove ends from asparagus that are tough.
  • Lay 4 stalks of asparagus in the center of each strip of bacon and sprinkle with salt and pepper.

1 lb bacon
1 cup brown sugar (approximately)

Steps:

  • Preheat broiler.
  • Pour drained green beans into large bowl.
  • Season with salt, pepper and garlic powder.
  • Cut each bacon slice into 3 equal portions.
  • Wrap 6-8 beans with bacon piece, securing with toothpick.
