Simple, delicious homemade bread! Great for kids who are anxious to help out with dinner. Simply 'squish' ingredients in a large resealable bag before lightly kneading and baking!

3 cups all-purpose flour, divided
3 tablespoons white sugar
1 (.25 ounce) package rapid rise yeast
1 cup warm water
3 tablespoons non-fat dry milk
3 tablespoons olive oil
1 ½ teaspoons salt

Steps:

  • In a large resealable freezer bag, combine 1 cup of flour, sugar, yeast and warm water. Squeeze most of the air out of the bag, and seal. Squish with your hands until the well blended. Set aside to rest for 10 minutes at room temperature, or until bubbles appear.
  • In a separate bowl, stir together 1 cup of flour, dry milk, oil and salt. Pour into the resealable bag and squeeze out most of the air. Seal, and squish until well blended. Add the last cup of flour to the bag, and continue mixing in the same manner until well blended.
  • Remove the dough from the bag, and place on a floured surface. Knead for 5 to 8 minutes. Form into a small loaf, and place in a greased 8x4 inch loaf pan. Cover with a towel, and allow to rise for about 30 minutes, or until your finger leaves an impression when you poke the top of the loaf gently.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bake the bread for 35 minutes in the preheated oven, until golden brown.

1 cup old-fashioned oats
1/2 cup butter, cubed
1/3 cup molasses
5-1/2 to 6-1/2 cups all-purpose flour
5 teaspoons active dry yeast
2 teaspoons salt

Steps:

  • In a large bowl, pour boiling water over oats. Stir in butter and molasses. Let stand until mixture cools to 120°-130°, stirring occasionally., In another bowl, combine 3-1/2 cups flour, yeast and salt. Beat in oat mixture until blended. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. This is my mother-in-laws famous brown bread recipe. We find these rolls at every family gathering! I reach for this recipe over and over again when we are craving bread for it has so few ingredients and so easy to make. My kids make a meal out of it in the mornings especially when they get to slather their own homemade strawberry jam over the top! Makes 3 loaves or 48 rolls

Number Of Ingredients 8

3 3/4 cups warm water
1/4 cup warm water (100 to 110 degrees F)
1 1/2 tablespoons salt
1 cup molasses
1/2 cup melted Crisco
1 fresh yeast cakes or 3 teaspoons dry yeast
1 teaspoon sugar
6 -10 cups flour

Steps:

  • Mix the yeast, sugar, and 1/4 cup of warm water.
  • Let sit for 5 minutes.
  • (Yeast is good if it foams!) In large bowl combine water, salt, molasses, and Crisco.
  • Stir until salt dissolves.
  • Add the yeast mixture and stir well.
  • Sift in 6 cups of flour and stir until mixed well.
  • Keep adding flour until mixture becomes too hard to stir.
  • Flop the dough onto a well floured surface and knead 6-8 minutes.
  • Place dough in large greased bowl, cover, set in warm place and let raise until double in size.
  • Punch dough down and with greased hands form into 3 loaves and place in greased loaf pans or form into approx.
  • 48 rolls and place in greased pans.
  • Preheat oven to 350.
  • Let formed dough rise.
  • Cook in preheated oven at 350 for 40-45 minutes.
  • Let bread/rolls sit in pans for 5-10 minutes then finish cooling on wire racks.
  • Brush butter over the tops and ENJOY!

Number Of Ingredients 9

1 cup yellow cornmeal
1 cup whole wheat flour
1 cup whole grain rye flour*
2 teaspoons baking soda
1 teaspoon salt
2 cups buttermilk
1 cup robust-flavored (dark) molasses
1 cup raisins or dried currants
*Available at natural foods stores and some supermarkets.

Steps:

  • Generously butter one 9 x 5 x 2 1/2-inch metal loaf pan or 2 clean 28-ounce food cans. Mix first 5 ingredients in large bowl. Whisk buttermilk, molasses and raisins in medium bowl to blend. Add buttermilk mixture to dry ingredients; stir until well blended.
  • Transfer all of batter to prepared loaf pan or divide batter between prepared cans (pan or each can will be about 3/4 full). Butter 1 piece of foil large enough to cover top of pan or each can and to overlap sides by 2 inches. Tightly cover top of pan or each can with foil, buttered side down. Tie kitchen string around foil. Place pan or cans in large wide pot. Pour enough water into pot to come halfway up sides of pan or cans. Bring water to boil. Reduce heat to low; cover pot tightly and simmer until tester inserted into center of bread comes out clean, adding more water to pot as necessary to keep water halfway up sides of pan or cans, about 3 hours.
  • Remove pan or cans from pot. Cool bread in pan or cans 15 minutes. Gently shake to remove bread from pan or cans. (Can be made 1 day ahead. Cool completely. Return bread to pan or cans. Wrap tightly with foil. Store at room temperature. Before serving, if desired, steam in pan or cans, covered with foil and secured with kitchen string, on rack set over simmering water until heated through, about 15 minutes.) Cut bread into 1/3-inch-thick slices. Serve warm or at room temperature.

1 ⅓ cups all-purpose flour
1 cup packed brown sugar
4 teaspoons baking soda
1 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
  • In a large bowl, stir together the whole wheat flour, all-purpose flour, brown sugar, baking soda, and salt. Pour in buttermilk, and stir until all of the dry mixture has been absorbed. Divide the batter evenly between the prepared loaf pans.
  • Bake for 1 hour in the preheated oven, or until a knife inserted into the crown of the loaf comes out clean. Serve warm. Store leftover bread wrapped in plastic wrap in the refrigerator. This reheats well.

1 cup all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2/3 cup firmly packed brown sugar
1/4 cup unsulfured molasses
2 cups buttermilk
1 cup raisins
3/4 cup coarsly chopped walnuts

Steps:

  • Preheat oven to 350°F, and grease and flour a loaf pan, 9 1/4 by 5 1/4 by 2 3/4 inches, knocking out excess flour.
  • In a large bowl whisk together dry ingredients. Stir in remaining ingredients until just combined.
  • Pour batter into prepared pan and bake in middle of oven until a tester comes out clean, about 1 hour. Cool bread in pan on a rack 5 minutes. Turn loaf out onto rack and cool completely before slicing.

4 1/2 cups, plus 2 tablespoons unbleached all-purpose flour (1 1/4 pounds), plus more for dusting
1/2 cup granulated sugar
1 tablespoon kosher salt
4 sticks (2 cups) unsalted butter, room temperature, cut into tablespoons, plus more for pan
2 large eggs, plus 1 large egg yolk
2 sticks (1 cup) unsalted butter, cut into pieces
1 cup light-brown sugar
1 teaspoon ground cinnamon
Pinch of kosher salt
1 large egg, lightly beaten

Steps:

  • Dough: In a small bowl, sprinkle yeast over milk; stir until dissolved. Let sit until foamy, about 5 minutes. Stir in vanilla seeds. In the bowl of a mixer fitted with the dough-hook attachment, mix together 4 1/2 cups flour, granulated sugar, salt, and 1/2 stick butter on low speed until butter is incorporated and mixture resembles coarse meal, 3 to 4 minutes. Add yeast mixture; mix until dough just comes together. Add eggs and yolk; mix until just combined, 2 to 3 minutes (do not overmix).
  • Turn dough out onto a lightly floured surface, making sure to include any loose bits left at bottom of bowl. Gently knead to form a smooth ball, about 30 seconds. Wrap tightly in plastic; refrigerate at least 2 hours and up to overnight.
  • In the bowl of a mixer fitted with the paddle attachment, beat together remaining 3 1/2 sticks butter and 2 tablespoons flour. Shape mixture into a 12-by-10-inch rectangle on a piece of plastic wrap. Refrigerate 15 minutes or up to 1 day. On a lightly floured surface, roll out dough to an 18-by-10-inch rectangle, a little over 1/4 inch thick, keeping the corners as square as possible. Remove any excess flour with a dry pastry brush. Remove butter mixture from refrigerator and let stand at room temperature until it is the same consistency as the dough. With a short side facing you, place butter mixture over two-thirds of the dough. Fold the unbuttered third over as you would a business letter, followed by the remaining third. This seals in the butter.
  • Roll out dough again to an 18-by-10-inch rectangle, then fold into thirds as described above; refrigerate 1 hour. This completes the first of three turns. Repeat rolling and folding process two more times, refrigerating at least 1 hour between turns. To help you remember how many turns have been completed, mark the dough after each one: make one mark for the first turn, two for the second, and three for the third.
  • Wrap tightly in plastic and refrigerate at least 4 hours and up to overnight. Dough can also be frozen, tightly wrapped in plastic, up to 2 weeks (thaw in refrigerator overnight before using).
  • Filling: Melt butter in a small saucepan over medium heat. Continue to cook, stirring constantly, until deep golden brown, about 11 minutes. Immediately transfer to a large heatproof bowl and let cool to room temperature, about 10 minutes. Stir in brown sugar, cinnamon, and salt.
  • Butter a 14-inch round cake pan. On a lightly floured surface, roll out dough to a 20-by-16-inch rectangle. Spread filling on lower half of dough, leaving a 1/2-inch border. Fold top half of dough over filling, pressing edges to seal. Using a pizza wheel or sharp knife, cut dough lengthwise into six equal strips. Coil strips into S shapes and arrange in a circle in pan. Loosely cover with plastic wrap and set aside to rise in warm spot until puffy and full of air, about 45 minutes to 1 hour.
  • Preheat oven to 375 degrees. Brush top and edges of dough with egg wash. Bake until golden brown, firm to the touch, and an instant-read thermometer inserted into center reads 205 degrees, 35 to 40 minutes. Let cool in pan 5 minutes. Run a knife around edges of pan to loosen, then invert onto a wire rack. Re-invert onto a second rack so top side is up; let cool completely. Pastry is best served the same day.
