DUCK SAUCE



Duck Sauce image

A basic recipe that is simple and relatively inexpensive to make. (Or be creative and add extras to suit your taste...crushed red pepper, plum preserves, etc.)

1 cup applesauce
1/2 cup apricot preserves
2 tablespoons honey
2/3 cup cider vinegar
1/4 teaspoon crushed garlic

Steps:

  • Add ingredients to a small sauce pan.
  • Cook on medium heat until hot (stirring so it doesn't stick to the pan).
  • Cool and serve.

After trying a few recipes I developed my own version. I think it's the best!

Number Of Ingredients 8

5 cups coarsely chopped mixed fruit (apples, plums, and pears)
1 cup water
¾ cup apple juice
1 teaspoon soy sauce
1 tablespoon apricot preserves
½ cup packed light brown sugar
½ teaspoon garlic powder
½ teaspoon dry mustard

Steps:

  • Place fruit in a stock pot over medium high heat. Add water, apple juice, soy sauce, apricot preserves, brown sugar, garlic powder, and dry mustard. Bring to a simmer, stirring frequently to dissolve brown sugar. Reduce heat, and continue simmering for 40 minutes, or until fruit is completely soft. Remove from heat and allow to cool.
  • Blend sauce in a food processor or blender until completely smooth, adjusting consistency with additional water, if desired. Cover, and refrigerate until ready to use.

This is from a Resort in S. Florida called Bahia Mar Resort. This is used with Recipe #59423 that I have posted. Prep time includes time to cook, sorry. It includes time to prepare veggies/fruits, cook, cool and process, etc. Time is an estimate.

4 fresh ripe mangoes, peeled, sliced and seeded
6 overripe bananas, peeled, sliced
1/2 cup white raisins
1 cup orange juice
1 red pepper, fine julienne strips
1/4 cup prepared horseradish
1 tablespoon fresh minced ginger
4 ounces major gray chutney
1/2 cup white wine
1/2 cup spring onion
3 tablespoons cornstarch, to thicken

Steps:

  • Prepare vegetables and fruit.
  • Cook white wine with mangoes, ginger, red pepper.
  • When the alcohol is cooked off, add the remaining ingredients.
  • Allow it to simmer until all is cooked and blended through.
  • Let cool.
  • Puree in a food processor until smooth.
  • Serve with Caribbean Springrolls (Recipe #59423) or as a barbecue glaze on chicken, pork or fish.

8 ounces boneless skinless chicken breasts
1 stalk celery, sliced on bias
1 carrot, match stick julienne
3 ounces red onions, julienne
2 ounces red cabbage, julienne
1 teaspoon minced fresh ginger
2 teaspoons sesame oil
2 teaspoons teriyaki sauce
1 teaspoon minced fresh garlic
1 tablespoon mangolade Chinese duck sauce (see Bahia-Mar Resort's Mangolade Duck Sauce)
4 wonton skins (each 5-inchx5-inch)
1 tablespoon spring onion, finely sliced, green part only
vegetable oil, and sauteeing (for frying)

Steps:

  • Julienne chicken and saute.
  • Prepare all vegetables and saute starting with a little vegetable oil.
  • Add garlic, ginger, red onion, cabbage, carrot and celery.
  • Pour in the sesame oil, add chicken, teriyaki sauce, mangolade duck sauce and the spring onions.
  • Let cook.
  • Lay out the wonton skin, and put 3-4 ounces of the veggie/chicken mix in the middle of the skin, and roll just as you would roll a cigar, closing the end to prevent 'leakage'.
  • Place the spring rolls in frying oil (350°F) until golden brown.
  • Drain on a paper towel.
  • Serve on the Mangolade Duck Sauce with a generous sprinkle of finely sliced spring onions.
