2 tenderflake frozen deep dish pie shells, defrosted
1 egg, lightly beaten
3/4 cup unsalted butter
3/4 cup brown sugar
3/4 cup whipping cream
1/4 cup molasses
3 egg yolks
1/4 cup cornstarch
1 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon clove
1/2 teaspoon salt
1 1/4 cups milk
1/2 cup whipped topping
white icing

Steps:

  • 1. Preheat oven to 375°F (190°C).
  • 2. Bake one pie shell according to package directions. Remove the second pie shell from the foil pan and place on a lightly floured work surface. Using a 2" (5 cm) gingerbread man-shaped cookie cutter, cut 8-10 pieces and place on a parchment paper-lined baking sheet. Brush lightly with egg and bake for 10 minutes or until golden brown. Remove from the oven and cool.
  • 3. Heat butter and brown sugar in a small saucepan over medium heat, stirring occasionally until bubbly. Whisk in cream and molasses and stir until it begins to simmer.
  • 4. Whisk together egg yolks, cornstarch, spices and salt in a small bowl. Slowly add a small amount of the hot mixture into the egg mixture, stirring constantly. Add the egg mixture back into the hot cream mixture and continue to stir over medium heat until thickened and just starting to boil.
  • 5. Pour the filling into the baked pie shell. Cover the surface with plastic wrap directly on the filling and chill until set, at least four hours.
  • 6. Decorate the gingerbread man pastry shapes with icing. Arrange shapes on top with whipped topping just before serving.

My dad would always tell me his mother made gingerbread with hot water and that it was dense and rich with molasses. Over the years I looked for such a recipe, to no avail. Then one day I was given a book compiled by an elderly woman who recalled recipes from her childhood in Virginia, and there it was! I made one slight change, substituting shortening for lard. For gingerbread lovers, this classic version is wonderful, whether you eat it hot and dripping with butter or at room temperature.

1/2 cup butter, cubed
1/4 cup shortening, cubed
1 cup boiling water
2 large eggs, room temperature
1-1/2 cups molasses
2 cups all-purpose flour
1 tablespoon ground ginger
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. Grease a 9-in. square baking pan; set aside. In a large bowl, mix butter, shortening and boiling water until smooth; cool slightly. Beat in eggs and molasses until well blended. In another bowl, whisk flour, ginger, baking powder, cinnamon, salt and baking soda; gradually beat into molasses mixture. Transfer to prepared pan., Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool completely on wire rack. If desired, sprinkle with confectioners' sugar before serving.

Steps:

  • Preheat oven to 350 degrees (175 degrees C). Grease and lightly flour one 8 inch square baking pan.
  • Cream shortening and sugar until light. Add the egg and molasses and beat thoroughly.
  • Sift together the flour, salt, baking soda, ground ginger, and ground cinnamon.
  • Bring water to a boil and add alternately with flour mixture to the creamed mixture, beating well after each addition. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes. Serve warm and enjoy.

1 cup Gold Medal™ all-purpose flour
1 cup Gold Medal™ whole wheat flour
1/2 cup mild-flavor (light) or full-flavor (dark) molasses
1/2 cup hot water
1/4 cup packed brown sugar
1/4 cup butter or margarine, softened
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg
3 tablespoons granulated sugar
1 tablespoon cornstarch
1 1/4 cups water
1 egg yolk, beaten
1 tablespoon grated lemon peel
2 tablespoons lemon juice

Steps:

  • Heat oven to 325°F. Spray 9x5-inch or 8x4-inch loaf pan with cooking spray. In medium bowl, beat all gingerbread ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 1 to 2 minutes, scraping bowl occasionally, until well mixed. Pour into pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center comes out clean.
  • Meanwhile, in 1-quart saucepan, mix granulated sugar and cornstarch. Gradually stir in 1 1/4 cups water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Stir in egg yolk. Boil and stir 1 minute; remove from heat. Stir in lemon peel and lemon juice.
  • Cool gingerbread 10 minutes; remove from pan. Serve warm or cool gingerbread with warm or cool lemon sauce.

1 teaspoon pumpkin pie spice
¾ teaspoon ground ginger

½ cup applesauce
1 egg, beaten

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).Grease a cookie sheet.
  • In a medium bowl, stir together the baking mix, white sugar, pumpkin pie spice and ginger. Mix in the molasses, applesauce and egg until the mixture forms a ball. Turn out onto a lightly floured surface and knead for 10 turns. Place onto the prepared cookie sheet and pat into a 10 inch circle.
  • Bake for 15 minutes in the preheated oven. Cut into wedges while still warm and serve with vanilla ice cream.
