BAKED BRIE IN PHYLLO WITH MANGO CHUTNEY
An easy recipe for baked brie. The gooey brie mixed with the crunchy phyllo and the tangy mango chutney makes the perfect appetizer or party pleaser! It wows company every time I make it. Red pepper jelly also works well instead of the mango chutney.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place on sheet of phyllo on your work surface. Brush with 1 tablespoon of olive oil. Lay a second sheet on top of the first, and brush with an additional tablespoon of olive oil. Place the third sheet on top. Place the brie towards the middle of one of the narrow edges of phyllo dough and roll up. Fold the ends of the phyllo under the brie, place onto a baking sheet, and brush with the remaining tablespoon of olive oil.
- Bake in preheated oven until phyllo is golden, about 15 minutes. Place onto serving platter, and spoon the mango chutney over top.

Steps:
- Preheat oven to 350 degreesF.
- Place Brie on a cookie sheet and spread the chutney on top, leaving a 1/2 inch border Place the almonds around the border.
- Bake for 15 minutes.
- Carefully transfer warm brie to a cheese board and surround with apples and french bread.

- Place the cheese in an ungreased ovenproof serving dish. Top with chutney and bacon. Bake, uncovered, at 400° for 10-12 minutes or until cheese is softened. Serve with crackers.

CHUTNEY BAKED BRIE
Steps:
- Preheat oven to 350 degrees F.
- With a sharp knife, cut through the wax on the top of the brie in a large circle (basically the top of the brie), but don't remove it.
- Place the brie on a pie plate and bake in the oven for about 10 minutes, or until the cheese has softened and the cut part of brie has lifted. Take the brie out of the oven and gently remove the wax off the top of the brie.
- Sprinkle the brie with curry powder. Spread the mango chutney on top. Sprinkle toasted pecans on the chutney.
- Return the brie to the oven for 5 to 10 minutes, or until the cheese has clearly become melted and bubbly.
- Serve with sliced baguette or crackers.

Steps:
- Roll puff pastry to 10-inch circle (or use one 10-inch sheet); place on a greased baking sheet.
- Cut Brie in half crosswise; place bottom half on center of pastry.
- Spread Brie with chutney and sprinkle with pecans.
- Place remaining half of Brie, rind side up on top of Chutney.
- Wrap pastry around Brie, pleating edges and sealing seam. Brush with beaten egg.
- Bake at 400F for 30-35 minutes or until golden brown. Cool 5-10 minutes before serving.
BAKED BRIE WITH TOMATO CHUTNEY
Steps:
- To make Tomato Chutney: In a heavy saucepan, combine all ingredients. Cook over moderate heat, stirring occasionally, 30 minutes. Reduce heat to low and simmer mixture, stirring occasionally, 30 minutes longer, or until thickened and reduced to about 2 ½ cups. Chutney keeps, chilled and covered, about 3 months. To make baked Brie: On a lightly-floured surface, roll out 1 sheet of pastry 1/8 inch thick (about 15 inches in diameter) and, using Brie as a guide, cut out a round the size of the Brie. With a 2 ¾ inch star-shaped cutter, cut out 5 stars from the trimmings. Halve Brie horizontally. Roll out remaining sheet of pastry 1/8 inch thick and transfer to a shallow baking pan, about 15 ½ X 10 ½ inches. Centre bottom half of Brie, cut side up, on pastry in pan and spread ½ cup of the chutney to within ½ inch of the Brie edge. Top with remaining half of Brie, cut side down. Without stretching pastry, wrap up over Brie and trim excess to leave a 1 inch border over top of Brie. Brush border with some egg and and top with reserved pastry round, pressing edges of dough together gently but firmly. Brush top of pastry with remaining egg wash and arrange stars decoratively over. Lightly brush stars with egg, being VERY careful not to let egg drip over edge of stars, which would prevent the pastry from rising. With the back of a table knife, gently score side of pastry with vertical marks, being careful not to pierce dough. Chill Brie, uncovered, 30 minutes to set egg wash. (may be made up to 1 day ahead and kept chilled, loosely covered) Preheat oven to 425F. Bake in middle of oven 20 minutes, or until puffed and golden. Let stand 20 minutes before serving for a very runny center, 40 minutes for a less-runny cheese. Serve with remaining chutney.
BAKED BRIE
Steps:
- Unwrap the brie and pile the cranberry chutney on the top (use about a cup +-). Top with nuts. Take the thawed sheet of puff pastry and roll it with a rolling pin (if you want) just to smooth it out and stretch it a bit. Lay it over the top of the brie and chutney and then turn the whole thing upsidedown. Pull the pastry up around and over the bottom of the brie and trim it to 1/2 inch over edge. Smooth it as best you can, pressing down, and turn it over to seal the bottom. If you want, you can cut shapes to put on the top from the excess pastry that you cut off. Just wet your finger and then the spot where you want to put the shape to seal it down. bake at 350 for 30-40 minutes. Serve with French bread.
BAKED BRIE WITH BLUEBERRY CHUTNEY
This is from Arielle's Archives, but isn't on the site anymore, and it is wonderful to serve as an appetizer. I used dried onions and bottled grated ginger to save time and it is still very good. Enjoy!

Steps:
- Combine all ingredients, except Brie, in a medium saucepan.
- Bring to a boil, at medium heat, and boil for 1 minute, stirring constantly to avoid sticking or burning.
- Remove from heat, discard the cinnamon stick and chill in a covered container until flavors are well blended and mixture is cold.
- Preheat oven to 350 degrees.
- Bake Brie on an ungreased cookie sheet for 10 to 12 minutes, or until soft.
- Place on a serving plate and top with the cold blueberry chutney.
- Serve with crackers.

- Combine sugar and juice drink in a medium saucepan; bring to a boil over medium heat, stirring until sugar dissolves. Add cranberries and next 6 ingredients; return to a boil. Reduce heat, and simmer, uncovered, 5 minutes or until thickened, stirring often. Cool completely (mixture will thicken as it cools).
