OLD FASHIONED BAKED BEANS
Deliciously thick, sweet, smoky and savory, these from-scratch Old Fashioned Baked Beans are sure to be a hit at your next BBQ, picnic, potluck or family dinner!

Steps:
- Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
- In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up. In the meantime preheat the oven to 325 degrees F.
- Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken. NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed.Add more salt the pepper to taste.Serve immediately or let cool completely and refrigerate until ready to serve. Can be reheated on the stovetop or in the microwave.
- SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.

BAKED BROWN BEANS (LIGHT)
Don't tell anyone about the "light" word in the title here; they won't know or care, these home baked beans are so darn good. Even people who have grown up expecting baked beans to taste like certain canned brands smack their lips over these beans. These are very little work to make aside from chopping an onion. All the time is in the cooking time, which doesn't involve you, anyway. It's just nice to know that food that is supposed to be good for you actually is. The total yield of the recipe is 6 cups (1.5 litres.)

- Rinse the navy beans. No need to presoak for either cooking method below.
- 1a) Pressure cooker (recommended): Put them in a pressure cooker along with the 10 cups of water, oil, and bay leaves. Put them right in -- as in, not in a steamer basket. Cook on high for 35 minutes. (In a Nutricook™, use the starch setting.) If the beans aren't soft after 35 minutes, bring them back up to pressure for another 5 minutes or so.
- OR
- 1b) If you don't have a pressure cooker, put the dried beans in a pot on stove with the water and bay leaves (omit oil), cover, bring to a boil, then reduce to a slow simmer. Let cook for around 2 hours until the beans are soft.
- When the beans are cooked, right away reserve 2 cups (500 ml) of the cooking water. Drain the beans. You can freeze the rest of the broth in a tub as a rich tasting, healthy stock for future cooking (recommended), or discard.
- Assemble in your slow cooker the 2 cups (500 ml) of bean stock, and all the remaining ingredients from the onion down to and including the Kitchen Bouquet. Stir to mix, then add the drained beans. Cook on low for 4 to 6 hours, or on high for 2 hours.

BROWN SUGAR BAKED BEANS

- Preheat the oven to 350 degrees F.
- Put the bacon in a large, cold skillet and cook over medium heat until the fat renders and the bacon is almost crisp, about 8 minutes. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add 1 of the cans of beans with their liquid. Drain and rinse the remaining beans, then add them to the skillet. Add the ketchup, sugar, mustard, vinegar, Worcestershire, 1/2 teaspoon salt and pepper to taste. Bring to a low simmer, then transfer to a small baking dish. Bake uncovered until thickened and bubbly, about 50 minutes. Serve warm.
GRANDMA BROWN'S BEANS
Grandma Brown's canned baked beans are available in the northeast USA but not common elsewhere. They are very simple with only 6 ingredients named on the can. This is a process to recreate them faithfully. Note that these beans are not tomato based, they are thick not saucy, and they are only mildly sweet. The final product either from the can or from the recipe is easily modified to your taste by adding bacon, tomato ketchup, brown sugar, spices. But they are great the way they are. They taste like beans!

- add 1 teaspoon baking soda to 6 cups water.
- bring water to a boil.
- sort through beans for debris.
- add navy beans to water.
- boil 10 minutes.
- turn off heat.
- cover pot.
- let sit overnight.
- rinse beans well.
- add beans and all other ingredients to oven proof pot with tight fitting lid.
- stir well.
- add water until beans are just covered.
- cover pot with lid.
- bake 5 to 6 hours at 300°F.
- every hour stir and add water to cover if beans are drying out.
- final product should be a thick and not runny.
