1 pound fresh carrots, peeled
1 teaspoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon dried thyme
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 450°. Cut carrots crosswise in half and then lengthwise into 1/2-in.-thick sticks. Toss carrots with oil, salt, pepper and thyme; spread evenly in a greased 15x10x1-in. baking pan., Roast until tender and lightly browned, stirring once, 12-15 minutes. Toss with cheese.

2 tablespoons unsweetened applesauce
1 tablespoon finely chopped onion
1/4 teaspoon salt

  • In a small bowl, combine the first six ingredients. Transfer to a baking sheet coated with cooking spray. , Bake at 425° for 10-15 minutes or until golden brown. Sprinkle with Parmesan cheese. Serve immediately.

2 pounds (1kg) carrots, washed and halved
1/4 cup olive oil
4 large cloves garlic, (minced (or 1 tablespoon minced garlic))
1/4 cup grated parmesan cheese
2 tablespoons Panko bread crumbs, ((or normal breadcrumbs))
Salt and pepper, (to taste)
Fresh chopped parsley, (optional)

Steps:

  • Preheat oven to 400°F (200°C). Lightly grease or spray a baking sheet with cooking oil spray.
  • Arrange carrots on baking sheet. Add the olive oil, garlic, parmesan, bread crumbs, salt and pepper. Toss all ingredients together to completely coat the carrots. Spread out and bake for 20-25 minutes or until tender. Toss with a spatula half way through.
  • Remove from oven and serve immediately. Top with fresh parsley if desired.

I made this for Christmas, and one of my guests said the carrots were 'off the chain!' The flavor was amazing! The cheese was nicely crusted combined with the carrot and a little garlic! YUM! A nice change from the ordinary green veggie and still healthy!

1 pound carrots, peeled
1 tablespoon olive oil
½ teaspoon garlic salt
¼ cup grated Parmesan cheese, or more to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Stir olive oil and garlic salt together in a small bowl; pour into a large resealable plastic bag. Add carrots to the plastic bag, seal, and shake to coat carrots completely in oil mixture. Arrange coated carrots onto the prepared baking sheet.
  • Roast carrots in preheated oven until crisp-tender, about 45 minutes. Sprinkle 1/4 cup Parmesan cheese over carrots and continue roasting until cheese is lightly browned, 5 to 10 minutes. Garnish with additional Parmesan cheese to serve, according to your taste.

An old family recipe. I haven't tried it in awhile, but it is a good "make ahead" when you have a house full of company.

2 cups grated carrots
1 teaspoon grated onion
3/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon paprika
1 1/2 cups dry breadcrumbs
1 1/2 cups milk
2 eggs
3 tablespoons butter
1/4 cup grated parmesan cheese
1/2 teaspoon parsley flakes

Steps:

  • Grate onions and carrots.
  • Add salt, pepper, paprika and 1 cup of the bread crumbs.
  • Heat milk to boiling point; pour over slightly beaten eggs, beating so eggs won't cook.
  • Add to carrot breadcrumb mixture.
  • Spoon mixture into into buttered baking dish.
  • Mix the remainder of breadcrumbs, parmesan cheese and parsley together.
  • Sprinkle on top of carrot mixture and dot with butter.
  • Bake at 350 degrees for 45 minutes.

1 cup mayonnaise
1/4 cup fresh basil leaves
1 lemon, zested and juiced
1/2 clove garlic, finely grated
Kosher salt
Nonstick cooking spray, for the wire rack and carrots
1 1/2 cups panko breadcrumbs
1 cup grated Parmesan
1 tablespoon dried parsley
1/8 teaspoon cayenne
Kosher salt
1 tablespoon milk
3 large eggs
4 medium carrots, cut into thin 3-inch batons
2 tablespoons all-purpose flour

Steps:

  • For the aioli: Combine the mayonnaise, basil, lemon zest and juice and garlic in a blender and blend until almost smooth. Season with salt. Transfer to a bowl and refrigerate until ready to serve.
  • For the carrot fries: Preheat the oven to 425 degrees F. Fit a large baking pan with a wire rack and spray the rack with cooking spray.
  • Mix together the panko, Parmesan, parsley, cayenne and 1/2 teaspoon salt in a wide shallow bowl. Whisk the milk and eggs together in another shallow bowl.
  • Toss the carrots with the flour. Working with a few carrots at a time, shake off the excess flour, then dip them in the egg. Let the excess egg drip off, then toss them in the panko mixture, patting them so the crumbs adhere. Arrange them on the wire rack in a single layer.
  • Spray the coated carrots thoroughly with cooking spray, then bake until golden brown and crisp-tender, 10 to 15 minutes.
  • Serve the carrot fries with the aioli for dipping.

¼ cup parmesan cheese
1 tablespoon garlic powder
1 teaspoon pepper
¼ cup fresh parsley, chopped

1 teaspoon pepper

Steps:

  • Preheat oven to 400°F (200˚C).
  • Slice the top and bottom off of carrots then slice them in half, slice each half into thirds lengthwise.

6 tablespoons Italian dressing, divided
2 -3 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 450 degrees.
  • Line a shallow baking pan with foil, set aside.
  • Cut carrots into 1 1/2 inch thick slices; if the carrots are thick you might want to cut in half lenghtwise before slicing to promote even roasting.
  • Place the cut carrots on prepared pan, toss with 2 tablespoons of the dressing.
  • Cover with foil and bake for 20 minutes.
  • Remove foil, stir and continue to bake an additional 20 to 25 minutes or until carrots are crisp-tender, stirring occasionally.
