- In a large nonstick skillet coated with cooking spray, cook chicken over medium heat for 4-6 minutes on each side or until a thermometer reads 170°; remove and keep warm., In the same skillet, saute the mushrooms, garlic, basil and Italian seasoning until mushrooms are tender. Stir in spaghetti sauce and wine. Add chicken; cover and simmer for 10 minutes or until heated through. Serve with pasta.

Chicken Marinara Bake is an easy, family-favorite dinner featuring chicken breasts baked in a flavorful marinara sauce and topped with melty mozzarella cheese!

- Preheat the oven to 350° and allow to come to temperature. Place a large skillet over medium-high heat. Have ready a 9x13" casserole dish.
- Pat the chicken dry with a paper towel, and drizzle with 1 tablespoon of oil. Sprinkle over 1 tablespoon of seasoning, and rub to adhere.
- Add 2 tablespoons of oil to the heated pan, and allow to come to temperature. Add the chicken and sear for 3- 4 minutes, just until golden-brown. Flip the chicken and sear for 2-3 minutes more. Transfer to a plate and set aside.
- Add the onion and sauté 5-8 minutes, or until softened. Add the garlic and sauté 1 minute more.
- Add the canned tomatoes, sugar, salt, and pepper and stir. If using basil, add it to the pan, stir, and remove from the heat.
- If desired, for a smoother sauce, puree using an immersion blender or a blender with the feed tube removed and a dish towel covering its place.
- Add a thin layer of sauce to the bottom of the casserole dish and add the chicken breasts. Spoon a generous amount of marinara sauce over each chicken breast and divide the Mozzarella cheese amongst the chicken.
- Transfer to the oven and bake for 25-27 minutes, or until the chicken breasts are cooked through. Serve and enjoy.

- Preheat oven to 350 degrees F (175 degrees C).
- Coat the bottom of a 9x13 inch casserole dish with olive oil, and sprinkle with garlic and hot red pepper flakes.

- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a rimmed baking sheet.
- Place beaten eggs in a shallow bowl. Place bread crumbs in a separate bowl and mix with 1/2 cup of the shredded cheese.

- Preheat the oven to 450°F and prepare a baking dish with non-stick spray. Place the chicken breasts in a plastic bag, remove the air and seal it. Gently pound the chicken a rolling pin or something flat and heavy to flatten the chicken breasts to be the same size. This will help all the chicken breasts cook at the same time.
- Add the breadcrumbs, panko, and parmesan cheese in one of the deep dishes or a bowl and stir everything together. Melt the butter and place it in the other dish to create an assembly line to bread the chicken.
- Dip one chicken breast in the butter and allow the excess to drain off. Next, place the buttered chicken breast in the bread crumb mixture and fully coat the chicken on both sides. Place the breaded chicken in the prepared baking dish. Repeat with all of the chicken breasts. Once all of the chicken has been breaded, spray the top of the chicken with a little more oil spray. Place the dish in the oven and bake for 25 minutes.
- Remove the pan from the oven and spoon some of the sauce on top of each piece of chicken. Sprinkle cheese on top of the sauce and return to the oven. Cook for another 5 minutes. I like to broil the top of the chicken for 2-3 minutes at the very end of cooking.
- Remove the dish from the oven and sprinkle the fresh basil on top. Enjoy!

- I made this Chicken Marinara recipe after thinking about ways I could put a spin on a more traditional chicken parmesan…and I think you’ll notice that it is indeed very similar. Here, I skip the process of breading, and frying up the chicken, which saves a lot of time and effort. But, I still use a combination of a great marinara sauce, some mozzarella cheese, and a good hot over that combines the flavors into a wonderful combo. - Most important is to make sure you don’t try out the chicken breasts. - To make the marinara sauce- In a food processor combine stewed tomatoes, tomato paste, parsley, garlic, oregano, salt, and pepper. Blend until smooth. In a large skillet over medium heat add olive oil. Add onion and sauté for 2 minutes. Add the blended tomato sauce and the white wine. Simmer for 30 minutes, stirring occasionally.
- While marinara sauce is simmering pre-heat the oven to 350 degrees. Place chicken breasts between 2 sheets of wax paper and pound until they are about a ½ inch in thickness. In a pie plate combine bread crumbs and parmesan cheese. In a bowl beat the eggs together. In a separate pie plate add the flour. Dredge chicken breasts first in the flour, then in the egg and then in the breadcrumb mixture.
- Heat about a ½ inch of oil in a large skillet over medium-high heat. Add chicken breasts and sauté until browned on both sides (cook until only browned, do not cook all the way through). Place chicken breasts onto a lightly greased oven safe baking dish. Spread a thin layer of that marinara sauce over each chicken breast (continue simmer marinara sauce). Place into the oven and bake at 350 degrees for 25 minutes or until the chicken is fully cooked (the internal temperature has reached 165 degrees). During the last few minutes of cooking top each chicken breast with shredded mozzarella cheese.
- While the chicken is in the oven, cook linguini according to package directions. Once the chicken is done baking, serve with linguini and leftover marinara sauce.
