BAKED CHICKEN THIGHS



Baked Chicken Thighs image

These easy baked chicken thighs are breaded in panko with some heat from Sriracha sauce. Feel free to increase the amount of hot sauce.

1 cup all-purpose flour
1 teaspoon kosher salt, divided
1 ⅓ teaspoons ground black pepper, divided
2 eggs, beaten
¼ cup milk
1 tablespoon Sriracha sauce
½ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon granulated onion
1 ½ cups unseasoned panko bread crumbs
8 skin-on, bone-in chicken thighs

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper.
  • Combine flour, 1/3 teaspoon kosher salt, and 2/3 teaspoon black pepper in a shallow bowl.
  • Combine eggs, milk, Sriracha sauce, 1/3 teaspoon kosher salt, and 1/3 teaspoon black pepper in a shallow bowl.
  • Combine panko bread crumbs, 1/3 teaspoon kosher salt, 1/3 teaspoon black pepper paprika, garlic powder, and granulated onion in a shallow bowl.
  • Dredge chicken thighs first in flour mixture, then egg mixture, and finally in panko mixture, shaking off excess after each step. Place coated chicken thighs onto the prepared baking sheet, skin-side up.
  • Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

This Indian Style Baked Chicken Thighs recipe took me by surprise! I originally designed this recipe with leftover ingredients, and I this recipe turned out to be just as delicious, if not more so!

3 Boneless Skinless Chicken Thighs (boneless and skinless)
1/2 cup Full-Fat Coconut Milk
4 cloves Garlic (crushed)
2 teaspoons Minced Ginger (grated)
1 teaspoon Turmeric
1/2 teaspoon Cayenne Pepper
2 teaspoons Garam Masala
1/4 cup Onion (finely chopped)
2 teaspoons Cilantro

Steps:

  • In a quart ziplock bag put in the chicken, followed by all the other ingredients.
  • Zip the top of the bag securely and then start smooshing all the ingredients together until well mixed.
  • Let the bag rest overnight or at least an hour to let the flavors meld.
  • Heat oven to 425 degrees. Put the chicken and the sauce in a foil lined pie pan. I used a foil pan just because I wanted to be lazy and not have to mess with cleaning up.
  • Cook for 20 minutes or until internal temperature reaches 165 degrees.
  • I served this with roasted cauliflower that I cooked at the same time, and in a separate pan. I also made Thai Chicken thighs so that I had two different flavors of chicken to serve.

As a college student, this is an easy recipe that requires minimum preparation work! You can season it with other spices. I do mine with cayenne powder and black pepper.

4 chicken thighs
4 teaspoons garlic powder
4 teaspoons onion flakes

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place thighs in a baking dish. Season chicken thighs on all sides with garlic powder and onion flakes.
  • Bake chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).
