Provided by Suzy Karadsheh

Categories     Entree

Time 22m

Number Of Ingredients 12

1.5 lb Cod fillet pieces, (4-6 pieces)
1/4 cup chopped fresh parsley leaves
5 tbsp fresh lemon juice
5 tbsp extra virgin olive oil
2 tbsp melted butter
5 garlic cloves, (minced)
1/3 cup all-purpose flour
1 tsp ground coriander
3/4 tsp sweet Spanish paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together the lemon juice, olive oil, and melted butter in a shallow bowl (do not add the garlic yet). Set aside.
  • In another shallow bowl, mix the all-purpose flour, spices, salt and pepper. Set next to the lemon sauce.
  • Pat the fish dry. Dip the fish in the lemon sauce then dip it in the flour mixture. Shake off excess flour. Reserve the lemon sauce for later.
  • Heat 2 tbsp olive oil in a cast iron skillet (or an oven-safe pan) over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add the fish and sear on each side to give it some color, but do not fully cook (about 2 minutes on each side). Remove the skillet from heat.
  • To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets.
  • Bake in the heated oven until the fish flakes easily with a fork (10 minutes should do it, but begin checking earlier). Remove from the heat and sprinkle chopped parsley. Serve immediately.

They closed after years in business and we are happy to share a version of their most requested recipe. COD PROVENçAL

Cod Provençal image

Gordon cooks a one-pan dish for two that has all the flavours of the sun-drenched south of France

Provided by Gordon Ramsay

Categories     Dinner, Main course

Time 55m

Number Of Ingredients 13

2 cod fillets, skin on, each weighing about 175g, see box, far right
1 tsp coarse salt flakes
2 red peppers
1 garlic clove
1 lemon
2 fennel bulbs
6 tbsp olive oil
350g very ripe cherry tomato , halved
1 tbsp balsamic vinegar
handful pitted black olives
1 tbsp caper in brine, drained
small handful each lemon thyme, oregano and basil leaves, with a few smal basil leaves kept aside
20 marinated anchovy fillets, roughly chopped

Steps:

  • Neatly trim the cod fillets. Score the skin of each fillet 3-4 times at regular intervals. Lay the fish in a shallow dish and sprinkle both sides of the fillets with the salt and some freshly ground black pepper. Set aside or chill overnight, see box, far right.
  • Deseed and finely slice the peppers, then finely grate the garlic and lemon zest over the peppers. Carefully slice the fennel on a mandolin, or as finely as possible with a sharp knife, then tip half the fennel into a bowl of iced water and set aside.
  • Brush the salt off the fish or, if it has dissolved, wipe the brine off with kitchen paper. Heat 2 tbsp of olive oil in a large non-stick pan, cook the fish, skin side down, for 4 mins until the skin is crisp and browned, then remove from the pan.
  • Put 1 tbsp more oil into the pan. Fry the fennel and the marinated peppers together for 4-5 mins until soft and starting to brown. Throw in the tomatoes and the balsamic vinegar, then continue to cook for 2-3 mins until they soften and release their juices. Scatter over the olives, capers and herbs, then toss everything together.
  • Nestle the fish fillets, skin side up, among the vegetables, then lower the heat and simmer, uncovered, for 5-6 mins until the fish is just cooked through. Lift the fish from the pan and give the sauce a final simmer and stir, then turn off the heat. This dish is better served warm rather than hot, so don't worry about the vegetables or fish resting before you serve.
  • Drain the reserved fennel and pat dry with kitchen paper. Toss with the juice from half the grated lemon, 2 tbsp olive oil and the anchovies. To serve, spoon the vegetables into the middle of two large dinner plates. Sit the cod, skin side up, on top of the vegetables and top with a neat bundle of fennel salad. Drizzle everything with a touch more oil, then scatter with the small basil leaves.

HEALTHY & EASY BAKED COD RECIPE BY TASTY

Healthy & Easy Baked Cod Recipe by Tasty image

Here's what you need: atlantic cod fish, salt, freshly ground black pepper, garlic powder, all purpose flour, paprika, coriander powder, cumin powder, shredded parmesan cheese, olive oil, asparagus, baby carrots, baby potato, unsalted butter, shallot, unsalted chicken broth, homemade tomato sauce, lemon juice, fresh parsley

Provided by Luna Regina

Yield 4 servings

Number Of Ingredients 19

4 fillets atlantic cod fish
½ teaspoon salt, divided
¼ teaspoon freshly ground black pepper
1 teaspoon garlic powder, divided
⅓ cup all purpose flour
½ teaspoon paprika
½ teaspoon coriander powder
½ teaspoon cumin powder
1 oz shredded parmesan cheese, divided
2 tablespoons olive oil, divided
8 oz asparagus
6 oz baby carrots
12 oz baby potato, chopped into small chunks
3 tablespoons unsalted butter, divided
1 tablespoon shallot
¼ cup unsalted chicken broth
½ cup homemade tomato sauce
½ tablespoon lemon juice
fresh parsley, for garnish

Steps:

  • Prep:
  • Marinate the cod fish fillets with ¼ teaspoon of salt, ground black pepper, and ½ teaspoon of garlic powder. Let the cod fish sit for 10 minutes.
  • While waiting for the fish to absorb the marinade, make the coating by whisking together flour, paprika, coriander powder, cumin powder, and ½ ounce of parmesan cheese.
  • Coat the fish evenly with the above mixture. Set aside.
  • Spread baby potatoes, baby carrots, and asparagus on a baking tray, drizzle 1 tablespoon of olive oil over them and toss together. Remove the asparagus and set aside, save for later.
  • Preheat the oven to 400°F.
  • Cook:
  • Put the baby potatoes and baby carrots in the oven to bake at 400°F for 20 minutes.
  • In the meantime, sear the coated cod fish. On a cast-iron pan, heat olive oil over high heat. Add the cod fish in. Turn the heat down to medium after 2 minutes.
  • Add 1 tablespoon of butter to the pan, let it melt and blend with the cod fish.
  • Sear the first side of the cod fish for 4 minutes. Flip and continue with the second for 3 minutes. Remove from heat.
  • Transfer the seared fish and asparagus onto the baking tray together with the baby potatoes and baby carrots. Bake for 10 minutes at 400°F.
  • In the meantime, make the sauce. On the same pan used for the cod fish, turn on high heat and add successively to the pan: shallot, 2 tablespoon of butter, ½ teaspoon of garlic powder, and tomato sauce. Whisk together and turn the heat off.
  • Continue to add chicken broth, lemon juice, and ¼ teaspoon of salt to the pan. Whisk again to combine. Transfer to a small bowl. Set aside.
  • Transfer the baked cod fish onto a clean plate, and drizzle the sauce all over. Sprinkle ½ ounce of parmesan cheese and parsley on top.
  • Serve and enjoy.
