MISS LESLIE'S HAM SALAD ON BISCUITS
One great perk that comes along with working in and around food is that you are often surrounded by others who love to cook and eat as much as you do. Serious recipe swapping and swiping occurs as a result. Now, I don't know if Leslie makes anything of mine at home, but this recipe for her ham salad that she passed on to me one day at work is gonna be made in my kitchen, frequently!

Steps:
- Prepare bake-off biscuits to package directions, 8 to 10 minutes in the oven. Cool biscuits on wire rack.
- Combine all remaining ingredients in a bowl and adjust seasonings, to taste.
- Split cool biscuits and fill with Leslie's DEEELICIOUS ham salad.
LESLIE'S HAM SALAD
Steps:
- 1. To mellow the minced onion, soak it in cold water for 10 minutes, then drain it well, pat dry, and put it in a serving bowl. Pulse the ham in a food processor until chunky and add it to the red onion. Pulse the celery, pickles and jalapeno in the processor until chopped and add to the ham. 2. Add the scallions to the ham mixture along with mayonnaise, mustard, and pepper. Refrigerate the salad, covered, until thoroughly chilled, about 1 hour. 3. Toss the watercress and arugula together and divide among 4 plates. Divide the ham salad evenly on the greens and serve with the toasts.
LESLIE'S HAM LENTIL SOUP
I originally called this my 'experimental lentil' soup, patching together various other lentil soup recipes. I've been making it every fall for a decade now. What's listed here is a single recipe, though I can't remember the last time I've made such a small batch. It's great for freezing in individual servings for lunches.

Steps:
- Bring water and chicken bouillon granules to a boil in a stock pot, stirring to dissolve bouillon. Place ham bone in boiling broth, reduce heat to medium-low, and stir in lentils. Simmer until lentils begin to soften, about 10 minutes.
- Stir celery, carrots, green bell pepper, onion, marjoram, and bay leaf into broth and simmer until lentils and vegetables are tender, 10 to 20 minutes. Turn off heat and remove ham bone from soup. Cut ham from the bone, cube the meat, and return meat to soup, discarding the bone.

LESLIE'S PASTA SALAD
I got this recipe from my sister-in-law. It's a little different than most, but very flavorful and pretty filling. I use it as a side dish, or even just to snack on.

Steps:
- Cook Pasta according to directions.
- In large tupperware bowl combine Pasta, Olive Oil, Seasoning Salt (we use Lawreys).
- Let marinate in refridgerator 24 hours, tossing pasta with a fork a few times every few hours.
- Next day: sautee onion.
- Dice pepper and celery. ( I use about 2 or 3 stalks of Celery).
- Add to pasta with remaining ingredients.

LESLIE'S RAFFERTY'S SUNSHINE CHICKEN SALAD
One of my favorite chicken salads is at Rafferty's Restaurants in the southeastern United States. Here's my friend Leslie's take on this light delicious salad. Serve it up with some warm croissants and some fruit.

- Combine chicken, celery, parsley and grapes.
- Combine rest of ingredients in separate bowl and mix well then pour over chicken.
- Sprinkle with almond slivers.
- Chill 1 hour before serving.
- Time does not include cooking the chicken or chilling.
