An old recipe I have in my fish collection that's simple, fast and tasty. I've also used this with Walleye and Bass fillets.

MAYONNAISE BAKED FISH
Really simple recipe that even pleases the non fish lovers among us! My favorite fish to use is tilapia, but any mild, white fish will work nicely.

Steps:
- Preheat the oven to 375 degrees F. Line a large baking sheet with a nonstick silicone liner, and lay the salmon, skin side down, on top. Set aside.
- Combine the mayonnaise, mustard, honey and chives in a medium bowl and stir to thoroughly combine. Reserve half of the sauce. Spoon the remaining sauce over the fish, spreading it evenly all over the top and sides of each fillet. Sprinkle with salt and pepper.
- Roast just until the fish is opaque in the center, 7 minutes. Increase the oven to broil. Broil the fish for 6 to 7 minutes, but keep your eye on it to avoid overcooking. Garnish with chives and serve with the reserved sauce.
BAKINBABY'S DIJON BAKED COD
This comes from a Costco Cod package from Copper River Seafoods in Alaska. We like to bake our fish, so this is one of our favorites. Most ingredients are on hand like; mayonnaise, Dijon, lemon juice, parmesan, etc. and so low in fat!

COD BAKED IN MAYONNAISE
This comes from The Encyclopedia of European Cooking. It is one of the easiest dishes you could cook. The book recommends you serve it with mashed potatoes. I made this in little individual ovenproof bowls and served it as a starter.

- Salmon ... Be sure to take the salmon out of the refrigerator to take the chill off. Line a baking sheet with either parchment paper or foil for easy clean up. Spray lightly with a non-stick spray and lay the salmon on skin side down.
- Mustard Mayonnaise ... In a small bowl, add the mayonnaise, dijon mustard, lemon zest, salt and lemon pepper and mix well. Spread over the top of the salmon.
- Bake ... I start out baking them on the middle shelf at 400 degrees for 10-15 minutes (it depends on the thickness of your fish). Then the last 5 minutes, turn on the broiler and move the shelf up in the oven and broil approximately 5 minutes until the crust starts to get brown. You don't want to over cook your salmon.
