You will never want to buy fries anywhere else after you see how easy and delicious they come out at home! You can actually taste the potatoes and not the bread crumbs, oil, and salt. Add any other spices of your choice.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Pour olive oil into a large resealable plastic bag and add potatoes. Seal the bag and shake to coat every piece with oil.
- Combine Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in a second resealable bag. Pour oiled potatoes into the bag, seal, and toss well to coat.
- Spread potatoes on the prepared baking sheet.
- Bake in the preheated oven for 15 minutes. Flip potatoes over and bake until crisp on the outside and soft on the inside, about 15 minutes more.

- Preheat the oven to 400 degrees F.
- Peel potatoes and cut into half-inch thick slices (lengthwise) cut again into 1/2-inch thick fries. Place the potatoes into a pot with cold water and 1 tablespoon of salt. Bring up to a gentle boil and simmer until a paring knife tip goes through easily. Cooked about 3/4 of the way through.
- Drain carefully and put in a bowl. Add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown.
- When brown, sprinkle with Parmesan and continue to bake until well-browned and crispy and the cheese is melted and caramelized, about 6 to 7 more minutes. Remove and let cool for 2 minutes. Serve.

- Preheat an oven to 425 degrees F (220 degrees C).
- Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
- Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. Sprinkle the fries with the remaining 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt to serve.

- Preheat oven to 425 degrees. Add half the oil to the pan and place in the oven.
- While pan heats up, cut potatoes. Once preheated, add to the sheet pan. Be careful as the pan and oil will be HOT!
- Salt the potatoes and place in the oven. Do not stir.
- Cook for 20 minutes. At the 20 minute mark, carefully flip potatoes using a metal spatula. Make sure you do not rip off the crispy skin. Return to the oven and cook an addition 10 minutes.
- While fries cook, add the remaining oil to a small sauce pan. Add garlic and cook 1 minute, or until fragrant. Set aside until potatoes are done.
- When fries are done, add to a big serving bowl. Drizzle with garlic oil and then top with herbs and parmesan cheese. Serve immediately.

- For the fries: Peel and rinse the potatoes. Cut lengthwise into 4 or 5 pieces, then cut the pieces into sticks. Place in a large bowl and cover with cold water.
- For the garlic parmesan butter: Cut the rind off the parmesan (save the cheese for topping). In a small saucepan over medium-low heat, combine the butter, garlic cloves and parmesan rind (skin-side down) and let the butter melt.
- For the garlic aïoli: Combine the egg yolks, reserved garlic, lemon juice and salt in a food processor. Blend for 30 to 45 seconds to break down the ingredients.
- When you’re ready to make the fries, grate the reserved parmesan and set aside for topping. Drain the potatoes and lay them on 2 baking sheets lined with paper towels.
- Heat a few inches of vegetable oil in a heavy pot until a deep-fry thermometer reaches 300 ̊. Working in three or four batches, fry the potatoes until soft but not browned, 4 to 5 minutes.
- Once all the potatoes have been fried, turn up the heat and bring the oil to 400 ̊. Working in batches, fry the potatoes again until golden and crisp, about 2 minutes.
- Put the fries in a large bowl and toss with the salt, garlic powder, half of the grated parmesan and half of the parsley. Transfer to a serving plate and drizzle with the garlic parmesan butter.
