This is a favorite on Easter. Everyone kept going back until the ham was gone. They loved this glaze which, by the way, I got from a church member.

- Preheat oven to 350 degrees F (175 degrees C). Place ham in a large baking dish.
- Bake in the preheated oven for 45 minutes. Whisk brown sugar, ginger ale, mustard, and cinnamon together in a bowl; brush over ham. Continue baking ham until the meat pulls away easily from the bone, about 45 more minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

GLAZED BAKED HAM

- Preheat the oven to 325 degrees F.
- Score the surface of the ham about 1/8-inch deep in a diamond pattern. Insert a clove into the middle of each diamond.
- Bake the ham for 2 to 2 1/2 hours, or longer depending on package directions.
- Heat the brown sugar, mustard, vinegar and soda in a small saucepan until bubbly. Cook until thick, about 15 minutes.
- After 2 hours of baking time, brush the glaze on the ham in 20-minute intervals until nice and glossy.

- Heat oven to 325 degrees F. Line a shallow roasting pan with foil.
- Remove all packaging materials and place ham on its side, fat side up, on a rack in the prepared pan; cover loosely with aluminum foil.
- Heat approximately 15 to 20 minutes per pound until heated through. For instance, I roasted a 10-lb. ham for 2 ½ hours.
- While the ham is in the oven, prepare the glaze: In a small bowl, whisk together brown sugar, molasses, vinegar, and yellow mustard.
- Once heated through, remove ham from oven. Increase oven temperature to 400 degrees F. Uncover ham, brush or spoon glaze over surface. Return to oven, uncovered, and heat for 10 more minutes.
- Remove ham from oven and let stand, covered, for 10-15 minutes before slicing and serving.

VIRGINIA HAM WITH HONEY-MUSTARD GLAZE
A baked ham is an ideal centerpiece for a holiday table: It's equally delicious served warm or at room temperature, and the leftovers are excellent in everything from soups to sandwiches to frittatas.

- Preheat oven to 325 degrees with a rack in lower third. Line a roasting pan with a rack. Wrap ham in parchment-lined foil. Transfer to pan, with thicker rind side facing up. Bake 2 1/2 hours. Meanwhile, in a medium bowl, stir together honey, Dijon, brown sugar, and cloves.
- Unwrap ham. When cool enough to handle, use a thin-bladed knife to peel rind from ham and trim fat all over to 1/2 inch. Score skin and fat with tip of knife in opposite directions, to create a 3/4-inch-wide diamond pattern.
- Return ham to oven and bake, uncovered, 30 minutes. Baste with some of honey-mustard mixture and continue to bake, basting every 30 minutes, until a thermometer inserted into thickest part of flesh near (but not touching) bone registers 145 degrees, about 2 hours more. (If necessary, add water to pan, 1/4 cup at a time, to prevent scorching, and tent with foilif ham begins to blacken.)
- Let ham stand at least 20 minutes before carving, or let cool completely and serve at room temperature. Thinly slice against the bone; serve.
PINEAPPLE GLAZED HAM
Steps:
- Preheat oven to 325°F.
- In a saucepan, stir together pineapple juice, brown sugar, Dijon mustard and ground cloves. Bring to a boil and then simmer, stirring occasionally, until the mixture becomes slightly syrupy (about 10-15 minutes). Set aside.
- Line a roasting pan with aluminum foil. Place ham in the pan, flat-side down. Using a sharp knife, score surface of ham with ¼-inch-deep cuts in a diamond pattern. Arrange pineapple and cherries evenly on ham; secure with wooden toothpicks. Spoon some of the glaze over the ham.
- Bake at 325°F for a total of about 2 - 2 ½ hours, basting with the extra glaze and pan juices every 30 minutes. Shield the ham loosely with aluminum foil when it reaches the desired color, to prevent excess browning. The ham is done when a meat thermometer inserted into the thickest portion registers 140°F.
- Let the ham stand for at least 15 minutes, remove toothpicks, and carve.

- Heat oven to 180C/160C fan/gas 4. Put the ham on a wire rack or trivet set over a large roasting tin, pour in 480ml warm water and cover tightly with foil. Put the ham in the oven, immediately reduce the heat to 160C/140C fan/gas 3 and cook for 5 hrs.
- Meanwhile, put the maple syrup, apricot jam and brown sugar in a heavy-based pan and stir in 50ml water. Bring to the boil, then remove from the heat and leave to cool.
- Take the ham out of the oven. Increase the temperature to 200C/180C fan/gas 6. Open the foil, being careful of the hot steam. Remove the rind from the ham by inserting a sharp knife under it at the opposite end to the knuckle bone, gently lifting it away from the fat (try to keep as much fat on the leg as possible so that it will protect the ham and stop it drying out).
- Decorate the ham by scoring the fat with a knife to make large diamond shapes, taking the knife from one corner to the other, then making parallel scores 4cm apart. Repeat in the opposite direction. Put a clove in the corner of each diamond. Brush the ham with the sugar mixture, pushing it into the scores with the brush.
- Return the ham to the oven, placing it back on the trivet over the water. Bake for a further 45 mins until deeply coloured. Serve hot or cold. Will keep in the fridge for up to one week.

Steps:
- With a knife, score the fat on the top part of the ham to form diamonds or squares.
- Be careful to only score the fat & not the meat. Place in a foil lined roasting pan & seal tightly with foil.
- Place in a roasting pan & Bake in a preheated 325 degree F. oven. It should bake a total of 15 minutes per pound. At 1 hour prior to the completion of the baking time, remove from oven.
- In a bowl, add pineapple juice & 1 cup honey & ½ cup brown sugar. Blend together & brush over the ham.
- Place pineapple slices on ham & with a wooden toothpick attach the maraschino cherry in the center of each pineapple ring.
- Push a whole clove into the fat between each of the pineapple slices. Secure the cherries with the toothpicks.
- Cover the ham lightly (like a tent) with foil & return the ham to the oven & bake for the final 1 hour, basting every 15 minutes.

- Let ham sit covered at room temperature 2 hours (or 1 hr for a 6-7 lb ham) before roasting, then remove packaging.
- While ham is coming to room temperature, make the sauce. In a small saucepan over medium heat, combine apricot preserves, honey, brown sugar, dijon, and butter. Bring to a simmer and cook 1 minute, whisking constantly then remove from heat. The sauce should be the consistency of loose honey.
