With only 15 minutes of prep time, this rich spread for toasted baguette slices is easy to make and hard to resist.

2 cup pasta sauce
1 garlic, minced
8 ounce fresh bocconcini mozzarella or mozzarella cheese, cut in cubes
1 tablespoon extra virgin olive oil
0.25 cup torn fresh basil leaves
Parmesan-Toasted Baguette, (recipe below)
8 baguette-style French bread
1 tablespoon olive oil
2 tablespoon finely shredded Parmesan cheese

Steps:

  • Heat oven to 350 degrees F. In four 12- to 16-ounce or one 1-1/2-quart shallow ovenproof dish layer pasta sauce, garlic, and mozzarella. Bake 20 minutes or until mozzarella is melted. Remove from oven; drizzle olive oil. Top with basil. Serve with bread or Parmesan Toasted Baguette slices. Makes 4 servings. Parmesan Toast
  • Preheat broiler. Lightly brush one side of bread slices with oil. Place bread slices, oil sides up, on a baking sheet. Broil 3 to 4 inches from the heat about 15 seconds or until toasted (watch carefully to avoid burning). Sprinkle with cheese. Broil about 15 seconds more or until cheese is melted.

2 cups white wine
2 carrots
2 celery stalks
1 head garlic, cut in half lengthwise
1 onion, peeled and quartered
1 bay leaf
1 bouquet garni
2 artichokes
2 to 3 lemons, juiced
Salt and freshly ground black pepper
1/4 cup olive oil
1 tablespoon chopped fresh parsley
Pinch crushed red pepper flakes
Sugar
Red wine vinegar
5 cherry or grape tomatoes
1/2 cup balsamic vinegar
10 small basil leaves
10 fresh mozzarella bocconcini
Special equipment: 6-inch wooden skewers

Steps:

  • For the stock: Combine 6 cups water, the wine, carrots, celery, garlic, onion, bay leaf and bouquet garni in a large pot and bring to boil. Then reduce to a simmer and cook for 30 minutes. Strain and set aside.
  • For the vegetables: Trim and peel the artichokes to the heart and remove the choke. Drop the artichoke hearts in a bowl of water with a squeeze of fresh lemon juice to prevent oxidation.
  • Cook the artichoke hearts in the vegetable stock until tender, 6 to 8 minutes. Chill in the refrigerator until ready to serve.
  • Cut the artichokes into bite-size pieces and toss in a bowl with some salt, pepper, a few drizzles of olive oil, the parsley, red pepper flakes, a little lemon juice, a few pinches sugar and a splash of red wine vinegar.
  • Cut the tomatoes and marinate with some salt and pepper, a few drizzles of olive oil and a little red wine vinegar.
  • Heat the balsamic vinegar in a small saucepan and simmer over medium heat until reduced to a syrup. Chill the reduced balsamic vinegar until ready to serve.
  • Alternate the tomatoes, artichokes, basil leaves and mozzarella on each skewer.
  • Drizzle a little balsamic reduction over each skewer and season with salt and pepper.

4 loaves ciabatta, sliced in 1/2 lengthwise
1 cup prepared pesto

Steps:

  • Core the tomatoes and slice each tomato and each ball of mozzarella into 1/4-inch thick slices.
  • Place the sliced ciabatta loaves on a work surface, and spread each half evenly with 1/8 cup pesto. Place 4 slices of tomato and 3 slices mozzarella side by side on the top of each half loaf and sprinkle with salt and pepper. Place 4 basil leaves on top of each sandwich.

2 cans (28 ounces each) whole peeled tomatoes
2 tablespoons extra-virgin olive oil
2 garlic cloves, smashed and peeled
3/4 pound spaghetti
2 cups packed basil leaves (from 1 bunch), torn if large
3/4 pound fresh mozzarella, cut into 1/2-inch pieces (2 1/2 cups)

Steps:

  • Preheat oven to 400 degrees. Set a large pot of salted water to boil. In a food processor, pulse tomatoes until coarsely chopped. In a large skillet, heat oil over medium-high. Add garlic and cook until fragrant, about 1 minute. Add tomatoes and bring to a boil. Cook at a rapid simmer until sauce thickens, about 12 minutes. Meanwhile, cook pasta 5 minutes (it will still be crunchy). Drain pasta and return to pot. Add tomato sauce, basil, and half the mozzarella and toss to combine. Transfer mixture to a 3-quart baking dish and top with remaining cheese. Bake until cheese is golden and edges are bubbling, about 25 minutes.

1 cup mozzarella cheese
4 tablespoons olive oil

Steps:

  • 1. Preheat oven (or toaster oven) to 400 degrees F.
  • 2. Cut tomatoes into thick slices, and place them on a foil-lined baking sheet.
  • 4. Salt and pepper lightly, add basil (as much or little as you like) and cook tomatoes for 10 minutes, or until tender but not mushy.
  • 5. Turn off oven. Top tomatoes with cheese and drizzle with olive oil. Allow to sit in hot oven just long enough for the cheese to melt.

2 tbsp olive oil
1 onion, finely chopped
300g arborio rice
small glass of white wine (optional), or 100ml extra stock
750ml hot vegetable stock
100g cherry tomatoes, halved
small handful of basil leaves, finely shredded, plus a few extra small leaves to serve
25g parmesan or vegetarian alternative, finely grated
150g ball mozzarella, torn into small chunks
25g dried breadcrumbs (panko are good but any will do)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Heat half the oil in an ovenproof pan or casserole dish, then stir in the onion and cook over a low heat for 8-10 mins until golden. Scatter over the rice and mix well until coated. Pour over the wine, if using, and cook for 2 mins until absorbed. Pour over the hot stock, then give the rice a quick stir. Put the dish in the oven and bake the rice for 10 mins.
  • Remove from the oven and stir through the tomatoes, basil, half of the parmesan and some seasoning. Flatten everything out roughly with the back of a spoon, then nestle the chunks of mozzarella evenly into the risotto. Sprinkle over the breadcrumbs and the remaining parmesan, and drizzle with the rest of the olive oil. Put the dish back in the oven, and bake everything for another 10-15 mins until the rice is just cooked through, heating it under the grill if you want a deep, golden crust. Leave to stand for a few minutes, scatter with a few extra basil leaves and serve scooped straight from the dish.

2 garlic cloves, chopped
2 x 400g cans chopped tomatoes
good pinch chilli powder
400g spaghetti, broken into short lengths
handful basil leaves, plus a few extra
250g pack mozzarella, sliced
50g grated parmesan (or vegetarian alternative)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in large pan, add the garlic and fry for 1 min. Add the tomatoes, chilli and seasoning, bring to the boil and simmer for 10 mins.
  • Meanwhile, cook the spaghetti, then drain. Mix the spaghetti with the tomato sauce and basil, then spoon half into a large ovenproof dish. Arrange half the mozzarella over the top and sprinkle with half the Parmesan. Repeat the layers, then bake for 15-20 mins until lightly browned on top. Scatter with extra basil and serve with a big green salad.

28 oz crushed tomato, 2 cans
½ cup water
¼ cup olive oil
½ cup fresh basil, torn
2 tablespoons dried oregano
4 cloves garlic, minced
2 teaspoons salt, plus more for sprinkling
1 teaspoon black pepper
4 large tomatoes, thinly sliced

Steps:

  • Preheat oven to 450°F (230°C).
  • In a large bowl, mix together the crushed tomatoes, water, olive oil, basil, oregano, garlic, salt, pepper, and fusilli.
  • Pour the pasta mixture into a greased roasting pan and smooth the top into an even layer.
  • Line the top of the mixture with the sliced tomatoes and sprinkle with salt.
  • Bake in the oven for 40-45 minutes, until the pasta is fully cooked. Serve and sprinkle with garnish of choice.
