EASY BAKED MOZZARELLA STICKS
Gooey cheese and rich crescent rolls combine to make an easy snack or accompaniment to a fast pasta dinner. And the whole dish requires only 3 ingredients! Use butter or garlic-flavored crescent rolls.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Unroll crescent roll dough on work surface and separate into 4 rectangles, pressing perforations together to seal. Cut each rectangle into 2 smaller rectangles. Place 1 slice of mozzarella cheese on each; roll up tightly and press edges together to seal. Arrange seam side-down on a baking sheet.
- Bake in the preheated oven until golden brown, 11 to 13 minutes.
- Warm pizza sauce in a small saucepan over medium-low heat, about 5 minutes. Use warmed sauce as a dipping sauce for mozzarella sticks.

Steps:
- Preheat a toaster oven on broil setting, or set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Spray a small baking sheet with cooking spray.
- Insert toothpick vertically into each cheese stick half to mid-way point. Beat egg in a small bowl. Place bread crumbs in a separate small bowl.
- Dip each cheese stick into egg, then press into bread crumbs. Repeat dipping in egg and breadcrumbs for a double-thick coating. Place cheese sticks on prepared baking sheet and spray with additional cooking spray for uniform browning.
- Broil in preheated oven until golden brown, 4 to 5 minutes. Allow cheese sticks to set before serving, about 1 minute.

MOZZARELLA STICKS

- Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.
- Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the Marinara Sauce.
- In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

- In a small bowl, beat eggs& water.
- In a plastic bag, combine bread crumbs, italian seasoning, garlic powder, and pepper.
- Coat cheese sticks in flour, then dip in egg mixture and bread crumb mixture.
- Repeat egg and bread crumb coatings.
- Cover and chill for at least 4 hours or overnight.
- Place on an ungreased baking sheet& drizzle with butter.
- Bake, uncovered, at 400 degrees for 6-8 minutes or until heated through.
- Allow to stand for 3-5 minutes before serving.
- Use marinara or spaghetti sauce for dipping.

Baked Mozzerella Sticks with all the flavor of deep frying. Freezing them is a MUST, I always leave them in for at least an hour before and after breading. To avoid cheese explosions cut cheese sticks into smaller "bites".

- Remove wrappers and cut cheese in half to give you 24 pieces. Freeze cheese until hard and frozen, about 30 minutes.
- In three separate shallow dishes, place egg, flour and breadcrumbs, each in their own dish. Whisk egg. To breadcrumbs dish, add panko, parmesan and parsley.
- Line a large baking sheet with aluminum foil and spray with nonstick cooking spray. Dip frozen cheese sticks in flour, shaking off excess, then into the egg, then coat with the crumbs. Repeat for each cheese stick, placing them on the lined baking sheet. Freeze on sheet at least 15 minutes, or until ready to bake (this is a must or they will melt before the crumbs get golden).
- When ready to bake, preheat oven to 400 degrees F. Arrange oven rack in the bottom third of your oven.
- Bake 4 to 5 minutes, turn sticks over, and bake an additional 4-5 minutes, watching sticks closely so they don't melt. Serve hot with marinara sauce or Ranch dressing for dipping.
