Steps:

  • In a large skillet, saute mushrooms in 2 tablespoons butter until tender. Place chicken in a greased shallow 3-qt. baking dish; sprinkle with salt and pepper. Melt remaining butter; drizzle over chicken. Combine broth and sherry; pour over chicken. Spoon mushrooms over top. , Cover and bake at 400° for 20-25 minutes or until a thermometer reads 170°.

It's a creamy chicken comfort food recipe with mushrooms that I have had a lot of good comments on when I make it at home. If you have a rice cooker, cook some rice while the chicken is resting. It's a great base for the chicken and creamy sauce.

3 skinless, boneless chicken breast halves
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper, or more to taste
2 tablespoons olive oil
1 medium white onion, chopped
2 tablespoons chopped fresh parsley
1 teaspoon poultry seasoning
¼ teaspoon cayenne pepper
1 (7 ounce) can whole mushrooms, drained
1 (10.5 ounce) can condensed cream of chicken soup
1 cup heavy cream
¼ cup buttermilk
4 slices Swiss cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Season chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add onion and cook until it is semi-transparent, about 5 minutes. Add parsley and stir until coated. Place chicken in the skillet and brown, about 5 minutes per side. Add poultry seasoning and cayenne, making sure chicken is coated. Transfer chicken to a 9x13-inch dish. Cover with mushrooms and set aside on a warming plate.
  • Combine soup, heavy cream, and buttermilk in a mixing bowl. Add the onion mixture and combine. Pour over the chicken. Cover the tops with Swiss cheese, making sure all areas are covered.

4 skinless, boneless chicken breast halves

1 tablespoon garlic powder
1 tablespoon onion powder
1 ½ teaspoons ground paprika
3 tablespoons olive oil, divided
2 medium onions, chopped
6 cloves garlic, minced
1 ½ (8 ounce) cans sliced mushrooms, drained and chopped
salt to taste
2 tablespoons dry white wine
½ teaspoon dried parsley, or to taste
ground black pepper to taste
2 tablespoons dry bread crumbs, or as needed
5 (5 ounce) skinless, boneless chicken breast halves
1 (10.5 ounce) can condensed cream of mushroom soup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking tray with foil. Mix garlic powder, onion powder, and paprika together in a small bowl.
  • Heat 1 tablespoon oil in a skillet over medium-high heat. Add onions and garlic and saute for 1 minute.
  • Set aside 1/3 of the mushrooms for garnish; add remaining mushrooms to the skillet and season with salt. Saute until soft, 2 to 3 minutes. Add wine and cook for 1 to 2 minutes, scraping any browned bits of food off the bottom of the pan with a spoon. Add parsley and pepper, then mix in just enough bread crumbs to bind. Remove from the heat.
  • Cut a slit in each chicken breast to form a pocket. Stuff mushroom mixture into each pocket. Season one side of each breast with salt, then with the 1/2 of the spice mixture.
  • Heat remaining 2 tablespoons oil in a large skillet over medium heat. Place chicken breasts, seasoned-sides down, in the hot skillet and let them brown for about 2 minutes. Season the tops with the remaining spice mixture, flip, and brown for 2 more minutes. Transfer to the prepared baking tray.
  • Spoon reserved mushrooms over the chicken breasts, then pour condensed soup over top.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

seasoning salt (or use white salt)
black pepper

1 (10 ounce) can cream of mushroom soup, undiluted
1 (10 ounce) can sliced mushrooms, well drained (squeese out excess moisture with hands)
1/2 teaspoon black pepper (can use more)
1/4 cup grated parmesan cheese (or to taste)

Steps:

  • Set oven to 425 degrees.
  • Melt butter in a greased 13 x 9-inch baking dish for about 5 minutes or until the butter is hot and melted.
  • Season the breasts with seasoned salt, pepper and garlic powder.
  • Dip the chicken pieces in about 1/2 cup buttermilk, then dredge in flour.
  • Arrange the chicken in baking dish with melted butter breast-side down.
  • Bake in a 425 degree oven for 25 minutes; remove from oven turn chicken over and bake for another 10 minutes more.
  • In a bowl stir together 1 cup buttermilk with the undiluted soup, well drained mushrooms and black pepper to taste.
  • After 10 minutes of baking, pour the sauce over the chicken, then sprinkle with Parmesan cheese.
  • Return to oven and bake for another 10-15 minutes or until the chicken is done and the sauce is heated through and bubbly.

4 large boneless skinless chicken breasts
1/4 cup all-purpose flour, divided
2 tablespoons margarine
1 cup sliced mushrooms
1 cup low sodium chicken broth
1/2 teaspoon salt
1/8 pepper, to taste
1/3 cup mozzarella cheese
1/2 cup parmesan cheese
1/4 cup scallion
1/4 cup sherry wine

Steps:

  • Flatten chicken if needed as you want it to fry quickly.
  • Measure flour onto a flat plate and lightly coat chicken. Preserve 1/2 tablespoon of flour and set aside.
  • Melt margerine in a large skillet and brown chicken two to three minutes each side and place in a greased baking dish.
  • Preheat oven to 375.
  • Saute mushrooms in the same skillet (do not wash as you want to preserve the juices) until tender.
  • Add chicken broth, salt, and pepper and bring to a boil. Let boil for 3 minutes, add sherry and remaining 1/2 tablespoon of flour. Be sure to gradually add the flour by sprinkling in and mixing while allowing it to dissolve. Adding it too fast will result in clumps of flour in your mushroom sauce. Let the mixture reduce by half of your original liquid.
  • Pour mixture over chicken and bake uncovered in oven for 12-15 minutes.
  • Remove chicken from oven and layer half of the parmesan cheese, then sprinkle on green onions. Add the remaining parmesan and mozzarella on top and bake for an additional five to six minutes.
  • Enjoy :).

3/4 cup chicken broth
1 ounce dried wild mushrooms, thoroughly rinsed under running water,and drained (such as cepes, morels, etc, all one kind or a mix)
1/2 lb fresh cultivated mushroom, wiped clean with damp paper towel (button)
5 tablespoons unsalted butter
1/4 cup finely-chopped shallot (or 3 green onions, finely-chopped, plus 1 T minced garlic)
salt and pepper, to taste
1/3 cup medium port wine
1/3 cup heavy cream
6 boneless skinless chicken breast halves

Steps:

  • In a small saucepan, bring broth to a boil; pour over the wild mushrooms in a small bowl and let stand for about 2 hours.
  • Thinly slice cleaned mushroom caps, discarding stems.
  • In a skillet over medium to medium-to-low heat, melt butter and gently saute shallots or onion/garlic mixture for about 5 minutes (do not brown).
  • Drain liquid from wild mushrooms and reserve.
  • Finely chop the wild mushrooms and add them and the fresh mushrooms to the skillet with the shallots (or onion/garlic mixture) and saute over medium heat, stirring occasionally, for about 7- 10 minutes.
  • Preheat oven to 325 degrees Fahrenheit.
  • Add the reserved mushroom liquid, Port, and cream to the skillet and simmer for about 5 minutes, or until slightly thickened.
  • Pour mushroom mixture into a shallow baking dish and arrange chicken breast halves in a single layer on top of the mushrooms.
  • Sprinkle chicken with salt and pepper and cover the dish tightly with aluminum foil.

1/2 cup finely snipped fresh basil leaf
8 portabella mushrooms, each about 4 to 5 inches in diameter

1 -2 garlic clove, peeled and minced
1/3 cup chopped green onion
2 tablespoons chopped green peppers, and sweet red and yellow peppers
1 -2 tablespoon minced Italian parsley (no stems)
1 teaspoon dried Italian herb seasoning (optional)
salt, and freshly ground black (optional) or white pepper (optional)
shredded mozzarella cheese (as desired) or cheese, of choice (as desired)

Steps:

  • Preheat oven to 350°F.
