PINEAPPLE BAKE



Pineapple Bake image

A mixture of pineapple, flour, butter eggs and cinnamon. Excellent side dish with ham or pork roast. My in-laws are from Pennsylvania; this recipe is from some of the aunts who live there. A Christmas dinner must-have!

¼ cup butter, melted
¼ cup all-purpose flour
4 eggs, beaten
1 cup white sugar
1 (20 ounce) can crushed pineapple, in juice
1 pinch ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the butter, flour, eggs and sugar until well blended. Stir in the crushed pineapple. Transfer to a small casserole dish, and sprinkle cinnamon over the top.
  • Bake for 1 hour in the preheated oven, uncovered. Serve warm.

  • Preheat the oven to 350 degrees. Cut off the very top of the pineapple and discard. Place pineapple in a roasting pan. Roast the whole pineapple for about 1 hour, then remove from the oven and, as soon as it is cool enough to handle, cut it first into 8 thick rounds, crosswise. Cut these slices in half and arrange on a platter. Squeeze the lime juice over the pineapple, dust with cayenne pepper, and sprinkle with a little chopped parsley. 1 cup packed light-brown sugar

As it turned out, it has become a family favorite. I have taken it to several pot lucks and everyone wants the recipe. It is a good side dish for about any kind of meat.

1 lime, halved
1/4 cup turbinado sugar
2 teaspoons coarse salt
1/2 teaspoon chili powder

Steps:

  • Preheat the oven to 450 degrees. Line a baking sheet with a nonstick baking mat or parchment paper.
  • Slice pineapple crosswise into 1/4-inch slices, and place in a single layer on the baking sheet. Squeeze lime juice over pineapple slices. Combine the sugar, salt, and chili powder in a shallow dish. Coat each pineapple slice on both sides with sugar mixture and return to the baking sheet. Transfer pineapple slices to oven, and roast until very soft and beginning to brown, about 15 minutes.
