800 grams Pollock
2 Tbsps lemon juice
Bell pepper
1 Tbsp butter
1 garlic clove
200 milliliters white wine
500 grams Beefsteak tomato
1 bunch Dill
300 grams Sour cream
2 Tbsps Horseradish
salt

Steps:

  • Rinse pollock, pat dry, sprinkle with lemon juice and rub with salt and pepper to taste. Cut bell pepper in half, remove seeds, rinse and cut into strips. Heat butter in a pan and sauté the bell pepper strips.
  • Peel garlic and squeeze through a press into the pan. Pour in wine, season with salt and pepper and simmer over medium heat for 10 minutes. Blanch tomatoes in boiling water, rinse with cold water, peel and cut into slices.
  • Grease a baking dish and layer in the tomato slices, overlapping slightly. Rinse dill, set aside a few stems and finely chop the rest. Mix chopped dill with sour cream and horseradish and season with salt and pepper.
  • Distribute bell pepper strips on the tomato slices. Arrange pollock over the vegetables and top with sour cream mixture. Place in the oven and cook for 20 minutes at 200°C (approximately 400°F). Garnish with reserved dill before serving.

  • Preheat the oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray it with cooking spray.
  • Season fish fillets with herbs, salt, and pepper. Place on the prepared baking sheet.

I'm always looking for ways to enjoy baked fish. This recipe works not just for pollock but for just about any fish fillet. Cook time will depend on the thickness and size of your fillets. I used frozen pollock fillets, thawed.

4 -6 fish fillets
1/3 cup sour cream
1/4 cup grated parmesan cheese
2 tablespoons melted butter
salt and pepper, to taste

Steps:

  • Preheat oven to 350 degrees.
  • Cover half sheet pan with foil and spray with non stick cooking spray.
  • Mix all ingredients except fish.
  • Spread mixture on one side of each fillet.
  • Bake uncovered for 15 to 25 minutes (depending on the thickness of you fish) till fish is done.

50g crustless white bread (ours was from a tiger loaf)
2 garlic cloves , roughly chopped
6 anchovy fillets in oil from a jar, drained
2 tsp olive oil
2 tsp chopped rosemary leaves
4 skinless frozen pollock fillets (about 400g)
salad or new potatoes and green beans, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a baking tray with baking parchment and set aside.
  • Tear the bread into a food processor, add the garlic, anchovies, oil and rosemary, then season and pulse to make rough crumbs. Arrange the frozen fillets spaced apart on the baking tray and pile the crumbs on top. Bake for 22-25 mins until the fish is cooked and the topping crispy. Serve with a salad or new potatoes and green beans.
