LAD's Baked Spareribs with Sauerkraut and Potatoes image

My Aunt,who was a wonderful cook used to invite my family over for New Year's Eve dinner. She served chitterlings as part of the dinner. My Father and I did not eat chitterlings (still don't!) so she would make this dish for us. It was always delicious. She was one cook who did not share recipes so when I began to cook,I guessed...

slab of spareribs
salt,black pepper and garlic power,to taste
paprika
2 jars sauerkraut
small red potatoes

Steps:

  • 1. Season the ribs with salt,pepper,garlic and paprika. Let marinade several hours or overnight. Place the ribs and a small amount of water to prevent burning in a 350 degree oven,cover and bake until tender.
  • 2. Cut larger potatoes in half,sprinkle with salt and pepper,remove the ribs,cut in serving size pieces. Place potatoes in the same baking dish,add undrained sauerkraut and place the ribs on top,bake until potatoes are tender. The juice from the sauerkraut and from the ribs help cook the potatoes.

Easy weeknight barbecue, with a deliciously different mustard based barbecue sauce that comes together quicker than you might think. This makes a sweet sauce. If you like yours more tangy, you can reduce the sugar and increase the vinegar. I like it on the potatoes, too. Round out the meal with some green veggies or a crisp salad, and shake up your usual routine.

1 tablespoon oil
1/4 cup onion, minced
1 roasted garlic clove, minced
1/4 cup spicy brown mustard
1/2 cup light beer
1/4 cup brown sugar
2 tablespoons apple cider vinegar
1/2 cup kosher salt
2 teaspoons smoked paprika
2 tablespoons brown sugar
fresh ground black pepper, to taste
4 medium russet potatoes, cut into wedges
2 tablespoons oil
1 1/2 lbs country-style pork ribs

Steps:

  • Saute onion in 1 tbps oil until softened, add remaining sauce ingredients, and cook until reduced to a thick barbecue sauce consistently, about 20-30 minutes. Puree in blender or with stick blender, if desired. Allow to cool to room temperature.
  • Preheat oven to 400°F.
  • Meanwhile, sprinkle ribs generously with rub. You will probably not use all the rub, leftovers are good on chicken, vegetables, etc. Allow to sit while the sauce finishes reducing.
  • Toss potatoes with remaining oil and a little more rub.
  • Cook ribs on charcoal or indoor grill, on medium heat until cooked through and nicely browned, about 20 minutes.
  • Meanwhile, bake potatoes on a large baking sheet, about 20 minutes.
  • Toss ribs in sauce, reserving some for dipping, if desired.

  • Preheat oven to 275 degrees Fahrenheit. Line a baking sheet or roasting pan with aluminum foil.
  • Remove the membrane from the back of the ribs. Just slide your fingers around the side to loosen it up and rip it right off. Use a paper towel to provide a better grip if slippery.
  • In a small bowl, stir together the ingredients for the dry rub, paprika, salt, pepper, onion powder, garlic powder, and ground mustard. Rub this mixture generously over the outside of the ribs to coat. Place seasoned ribs in a single layer onto prepared baking sheet or roasting pan.
  • Cover pan with aluminum foil. Cook in the preheated 275F degree oven for 3 1/2 to 4 hours until ribs are tender.
