6 medium carrots
1 cup uncooked couscous
1/2 cup slivered almonds
1/2 cup raisins
1/4 cup of fresh mint, chopped
1 tablespoon olive oil
sea salt
fresh ground pepper
4 skinless salmon fillet, 7 ounces each
lemon wedge

Steps:

  • Preheat oven to 450 degrees F.
  • Slice the carrots lengthwise and then in 1/8 inch diagonal sections.
  • In a 9x13 inch baking pan, mix together the carrots, couscous, almonds, raisins, mint, oil, salt and pepper and 1 1/4 cups of water.
  • Place the salmon fillets on top of this mixture and season generously with more salt and pepper.
  • Cover the pan with a piece of aluminum foil.
  • Bake for 30-35 minutes, or until fish is opaque.
  • Transfer fish to plates.
  • Fluff couscous with a fork and place next to salmon on plates.
  • Serve with lemon wedges.

1 tablespoon olive oil
4 pieces salmon
1 lime
1 tablespoon butter
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
2 1/4 cups water or 2 1/4 cups chicken stock
1/2 teaspoon salt
2 teaspoons butter
10 ounces couscous
1 cup diced tomato
1 cup crumbled feta cheese
1/2 cup green onion

Steps:

  • Preheat the oven to 350 degrees F.
  • Add a drizzle of olive oil to glass pan and place the salmon. Squeeze the juice of 1 lime over the top of the salmon and sprinkle with the House Seasoning. Top with pads of butter. Wrap in the foil and bake for 25 to 30 minutes. Serve on a bed of couscous.
  • House Seasoning: Combine all ingredients in a bowl.
  • Couscous: Combine water or chicken stock, salt and butter in a saucepan, over medium heat and bring to a boil. Stir in couscous. Add diced tomatoes, crumbled feta, and green onions. Remove from heat, cover and let stand for 5 minutes.
  • Uncover, fluff with a fork, and serve hot or cold.

1 pound salmon fillets, about 3/4 inch thick
1 package (5.6 ounces) toasted pine nut couscous mix
1 1/2 cups hot water
1 tablespoon olive or vegetable oil
1 tablespoon lemon juice
1/2 teaspoon dried dill weed
1 small zucchini, coarsely chopped
1 small yellow summer squash, coarsely chopped
1/4 teaspoon dried dill weed
Toasted pine nuts, if desired

Steps:

  • Heat oven to 350°. Spray square baking dish, 8x8x2 inches, with cooking spray. Cut fish into 4 serving pieces.
  • Stir couscous, seasoning packet from couscous mix, water, oil, lemon juice, 1/2 teaspoon dill weed, the zucchini and summer squash in baking dish. Place fish on couscous mixture. Sprinkle fish with 1/4 teaspoon dill weed.
  • Cover and bake 20 to 25 minutes or until liquid is absorbed and fish flakes easily with fork. Sprinkle with pine nuts.

2 (4 ounce) salmon fillets, 1-inch thick
1/4 teaspoon lemon pepper or 1/4 teaspoon black pepper
1 teaspoon low sodium soy sauce
4 orange slices, thin
1 cup broccoli floret (very small pieces)
1/2 cup low sodium chicken broth
1/3 cup water
1 garlic clove, minced
1/8 teaspoon salt
1/2 cup regular couscous or 1/2 cup whole wheat couscous

Steps:

  • Preheat oven to 450°F Lightly coat a nonstick baking pan with cooking spray or olive oil.
  • Rinse fish and pat dry with paper towel. Season with lemon pepper.
  • Place fish in prepared pan, tucking under any thin edges. Drizzle with soy sauce. Arrange orange slices on top of fish. Cover with aluminum foil and bake 8 to 12 minutes, or until fish flakes easily when tested with a fork.
  • Meanwhile, in a medium saucepan, combine broccoli, broth, water, garlic and salt. Bring to just boiling; reduce heat and cover pan. Simmer about 3 minutes.
  • Stir in the couscous, remove pan from heat and cover. Let stand 5 minutes.
  • To serve, spoon couscous mixture onto a serving platter (or divide between two plates). Arrange fish and orange slices on top of couscous.
