GARLIC SALMON
A large salmon filet, steamed in foil and cooked either in the oven or barbecue. It's seasoned with minced garlic, fresh baby dill, lemon slices, fresh ground pepper and green onions.

Steps:
- Preheat oven to 450 degrees F (230 degrees C). Spray two large pieces of aluminum foil with cooking spray.
- Place salmon fillet on top of one piece of foil. Sprinkle salmon with salt, pepper, garlic and chopped dill. Arrange lemon slices on top of fillet and place a sprig of dill on top of each lemon slice. Sprinkle fillet with chopped scallions.
- Cover salmon with second piece of foil and pinch together foil to tightly seal. Place on a baking sheet or in a large baking dish.
- Bake in preheated oven for 20 to 25 minutes, until salmon flakes easily.

BAKED SALMON LOAF
Steps:
- Gather all the ingredients.
- Grease an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan . Preheat the oven to 350 F.
- Flake the salmon and combine it with breadcrumbs in a medium-sized bowl.
- In a separate small bowl, whisk the eggs with cream (or milk) and melted butter .
- Combine the wet ingredients with the salmon mixture and stir in the onion, parsley, dill, salt, and pepper.
- Use a spatula to turn the salmon mixture into the loaf pan.
- Bake uncovered for 45 to 55 minutes or until cooked through. Enjoy!

Steps:
- Preheat oven to 400°F (200°C).
- Line 2 baking sheets with parchment paper.
- On the first sheet, place the chicken, broccoli, and cauliflower with space between each piece.
- Drizzle the chicken and veggies with oil, and season with salt and pepper.
- Spoon the pesto on top of the chicken and spread into a thick, even layer.
- Season the veggies with the oregano and toss them on the sheet so that everything is evenly coated.
- Bake for 8 minutes, leaving room in the oven for the second baking sheet.
- On the second baking sheet, place the salmon, yellow squash, and bell pepper with enough space between each piece.
- Drizzle the salmon and veggies with oil, and season with salt and pepper.
- Squeeze the fresh lemon juice over the salmon fillet.
- Season the veggies with garlic powder and toss them on the sheet so that everything is evenly coated.
- Add the second tray to the oven and bake both sheets for 12 minutes, until the chicken and salmon are both cooked through.
- Slice the chicken and salmon and place an assortment of protein and veggies in food storage containers. These containers can be stored in the fridge for up to 4 days.
- To serve, remove the lid from the container and microwave until desired temperature is reached.

- Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x4-inch loaf pan with nonstick spray.
- Mix together ground chicken, bread crumbs, Parmesan cheese, onion, egg, garlic, basil, thyme, oregano, salt, black pepper, and chipotle chile powder until well combined. Press into the prepared loaf pan and top with marinara sauce.
