A large salmon filet, steamed in foil and cooked either in the oven or barbecue. It's seasoned with minced garlic, fresh baby dill, lemon slices, fresh ground pepper and green onions.

1 ½ pounds salmon fillet
salt and pepper to taste
3 cloves garlic, minced
1 sprig fresh dill, chopped
5 slices lemon
5 sprigs fresh dill weed
2 green onions, chopped

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Spray two large pieces of aluminum foil with cooking spray.
  • Place salmon fillet on top of one piece of foil. Sprinkle salmon with salt, pepper, garlic and chopped dill. Arrange lemon slices on top of fillet and place a sprig of dill on top of each lemon slice. Sprinkle fillet with chopped scallions.
  • Cover salmon with second piece of foil and pinch together foil to tightly seal. Place on a baking sheet or in a large baking dish.
  • Bake in preheated oven for 20 to 25 minutes, until salmon flakes easily.

16-ounces canned salmon (drained)
1 1/2 cups soft fresh breadcrumbs
2 large eggs (beaten)
1/2 cup light cream (or evaporated milk)
2 tablespoons butter (melted)
3 tablespoons onion (finely chopped)
1 tablespoon fresh parsley (chopped)
1 teaspoon dry dill weed
1/2 teaspoon salt
Ground black pepper (to taste)

Steps:

  • Gather all the ingredients.
  • Grease an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan . Preheat the oven to 350 F.
  • Flake the salmon and combine it with breadcrumbs in a medium-sized bowl.
  • In a separate small bowl, whisk the eggs with cream (or milk) and melted butter .
  • Combine the wet ingredients with the salmon mixture and stir in the onion, parsley, dill, salt, and pepper.
  • Use a spatula to turn the salmon mixture into the loaf pan.
  • Bake uncovered for 45 to 55 minutes or until cooked through. Enjoy!

1 ½ cups broccoli floret
1 ½ cups cauliflower florets
oil, for drizzling
salt, to taste
black pepper, to taste
3 tablespoons pesto
1 teaspoon dried oregano
1 salmon fillet
1 yellow squash, diced
1 red bell pepper, diced
2 tablespoons fresh lemon juice
½ teaspoon garlic powder

Steps:

  • Preheat oven to 400°F (200°C).
  • Line 2 baking sheets with parchment paper.
  • On the first sheet, place the chicken, broccoli, and cauliflower with space between each piece.
  • Drizzle the chicken and veggies with oil, and season with salt and pepper.
  • Spoon the pesto on top of the chicken and spread into a thick, even layer.
  • Season the veggies with the oregano and toss them on the sheet so that everything is evenly coated.
  • Bake for 8 minutes, leaving room in the oven for the second baking sheet.
  • On the second baking sheet, place the salmon, yellow squash, and bell pepper with enough space between each piece.

1 can (14-3/4 ounces) salmon, drained, bones and skin removed
1 small onion, finely chopped
1/2 cup soft bread crumbs
1/4 cup butter, melted
3 large eggs, separated
2 teaspoons lemon juice
1 teaspoon minced fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper
OLIVE CREAM SAUCE:
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 cups whole milk
1/4 cup chopped pimiento-stuffed olives

Steps:

  • In a large bowl, combine the salmon, onion, bread crumbs and butter. Stir in the egg yolks, lemon juice, parsley, salt and pepper. , In a small bowl, beat the egg whites on high speed until stiff peaks form. Fold into salmon mixture. , Transfer to a greased 8x4-in. loaf pan. Place in a larger baking pan. Add 1 in. of hot water to larger pan. Bake at 350° until a knife inserted in the center comes out clean, 40-45 minutes. Let stand for 10 minutes before slicing., Meanwhile, in a small saucepan, melt the butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in olives. Serve with salmon loaf.
