Gourmet Grilled Cheese image

A little twist on an old favourite. Oozing with cheese, in a crisply grilled bread, this sandwich is indulgent.

Number Of Ingredients 6

4 ounces cream cheese, softened
1/4 cup Miracle Whip
1 cup monterey jack cheese, shredded
6 thick cheese slices
12 slices bread
1/4 cup Miracle Whip

Steps:

  • Stir the cream cheese, Miracle Whip and Montery Jack cheese together.
  • Spread the cream cheese mixture over half of the bread, top with a cheese slice.
  • Place another slice of bread over the cheese slice making a sandwich.
  • Spread the second amount of Miracle Whip over the bread, using it like butter.
  • Turn the sandwich over, spreading it onto that slice.
  • Spray a frying pan with cooking spray and grill the sandwiches, turning once, until brown.

Alton Brown's take on grilled cheese for grownups. My version lacks the humor of his recipe because of copyright, but it's GOOD.

Yield 1 Sandwich, 1 serving(s)

Number Of Ingredients 4

2 slices bread, sliced thin (your choice of loaf, but the bigger the loaf, the bigger the sandwich)
1 teaspoon smooth Dijon mustard (or more)
1 cup grated sharp aged cheddar cheese (or a combo of smoked Gouda and Gruyere, or Fontina and young Asiago. The flavors are up to you, but)
olive oil, for spraying

Steps:

  • Take two heavy skillets which nest (2 10-inch cast iron skillets are ideal). Set both over high heat.
  • Spread mustard on one slice of bread. Cover the bread with cheese, then sprinkle with black pepper and cover with the other slice of bread.
  • Spritz the upper surface of bread lightly with olive oil.
  • When the pans are hot enough for a drop of water to sizzle, remove from heat and place the oiled side of the sandwich down in one pan. Spritz the dry (now upper) surface with oil, as well as the bottom of the second skillet. Lay the skillet on the sandwich. If the top skillet isn't cast iron, weight it down with a brick or large can.
  • When the cheese begins to run out onto the pan surface (you'll hear it sizzle), it's done. This will take 3-5 minutes.
  • Remove from the pans (you may need a spatula to coax the pans free) to a plate. Wait 10 seconds before cutting in half and enjoying.

A grown-up gourmet grilled cheese! For meat-eaters, add crispy applewood bacon! My husband loves it! You can also use American cheese in place of sharp Cheddar cheese if desired. Enjoy!

4 slices marbled rye bread, divided
4 teaspoons softened salted butter, or as needed, divided
2 teaspoons Dijon mustard, or to taste
4 slices shredded sharp Cheddar cheese
4 slices Swiss cheese (such as Lorraine®)
1 tomato, thinly sliced
1 avocado - peeled, pitted, and thinly sliced

Steps:

  • Heat a cast-iron skillet or non-stick pan over high heat until skillet is warm; reduce heat to medium.
  • Arrange 2 bread slices in the hot skillet. Add 1 teaspoon butter under each slice in the skillet; flip bread so butter-side is face-up. Spread about 1 teaspoon mustard onto each bread slice; top with 1 slice Cheddar cheese, 1 slice Swiss cheese, tomato slices, and avocado slices. Top each avocado layer with 1 slice Cheddar cheese, 1 slice Swiss cheese, and 1 slice bread. Spread butter onto top piece of bread; flip sandwich and cook until cheeses are slightly melted, 2 to 3 minutes.
  • Transfer sandwiches to a microwave-safe plate and heat in microwave until cheeses are fully melted, no longer than 30 seconds.
