4 Salmon Fillets
1 Orange
4 tbsp Cranberry Sauce
2 tsp Sweet Paprika
Hot Paprika
2 tbsp Honey
2 tbsp Olive Oil
Juice of 1 Orange

Steps:

  • Place the salmon on a chopping board skin down, and with a sharp knife remove the skin. Season the fillets with salt and pepper.

  • Mix the orange juice, honey, and olive oil, then drizzle over the fillets. Cover and rub the salmon in the marinade and leave to rest for 30 mins.
  • Heat the oven to 210C. Place slices of orange on top of the salmon fillets. Bake in the oven for 20 mins.
  • Serve topped with the cranberry jam. This dish goes well with white rice and fresh dill.

1 orange, sliced
4 tbsp. cranberry sauce
2 tsp. sweet paprika
½ tsp. hot paprika
juice of 1 orange
2 tbsp. honey
2 tbsp. olive oil

Steps:

  • Place the salmon on a chopping board skin down, and with a sharp knife remove the skin. Season the fillets with salt and pepper.
  • Next, rub the salmon with the sweet and hot paprika and place in a baking dish.
  • Mix the orange juice, honey, and olive oil, then drizzle over the fillets. Cover and rub the salmon in the marinade and leave to rest for 30 mins.
  • Heat the oven to 410F (210C). Place slices of orange on top of the salmon fillets. Bake in the oven for 17 min.
  • Serve topped with the cranberry jam. This dish goes well with white rice and fresh dill.

2 tablespoons Dijon mustard
4 6-ounce boneless salmon fillets with skin
1/3 cup raw cranberry relish, room temperature
2 tablespoons chopped shallots
2 tablespoons red wine vinegar

Steps:

  • Preheat oven to 450°F. Spray small baking sheet with nonstick spray. Whisk oil and mustard in medium bowl to blend. Sprinkle salmon with salt and pepper. Place on prepared baking sheet, skin side down. Brush top of salmon with 2 tablespoons mustard-oil mixture. Roast salmon until fish is cooked through, about 13 minutes.
  • Preheat broiler. Whisk cranberry relish, shallots, and vinegar into remaining mustard-oil mixture. Season sauce with salt and pepper. Broil salmon until top is browning in spots, about 30 seconds. Transfer to plates. Spoon sauce over; serve.
