SALMON CURED WITH DILL AND PERNOD

1 (3-pound) center-cut fresh salmon fillet
1 large bunch of fresh dill, plus extra for garnish
1/2 cup kosher salt
1/2 cup sugar
2 tablespoons of Pernod
2 tablespoons whole peppercorns, crushed
1 tablespoon whole fennel seeds, crushed
Thin, dark pumpernickel bread, for serving
Gravlax Sauce, for serving, recipe follows
2 tablespoons Dijon mustard
1 tablespoon honey mustard
1 teaspoon whole-grain mustard
1/2 teaspoon ground mustard
1 1/2 tablespoons sugar
2 1/2 tablespoons good white wine vinegar
2 1/2 tablespoons good olive oil
1 1/2 tablespoons grapeseed oil
2 tablespoons minced fresh dill
1/2 teaspoon kosher salt

Steps:

  • Cut the salmon fillet in 2 pieces crosswise and place one piece in a deep dish, skin side down. Combine the salt, sugar, peppercorns, and fennel seeds in a small bowl. Wash and shake dry the dill and arrange it over the fish. Sprinkle dry mixture evenly over the dill and salmon. Add Pernod over the top of salmon. Place the other piece of salmon over the dill and spices, skin side up. Cover the dish with plastic wrap or aluminum foil. Place a smaller dish on top of the plastic wrap and weight it with heavy cans. Refrigerate the salmon for at least 2 to 3 days, turning it every 12 hours and basting it with the liquid that collects.
  • To serve, lay the salmon fillets flat on a cutting board and scrape off most of the dill and spices. Slice with a long, thin knife, as you would for smoked salmon. Lay the slices of bread on a cutting board, spread with the Gravlax Sauce, and place a slice of salmon on top, covering the bread completely. Cut each bread slice in half, decorate with a sprig of dill, and serve at room temperature.
  • Whisk together the Dijon mustard, honey mustard, whole-grain mustard, ground mustard, sugar, and vinegar in a medium bowl. Combine the olive and grapeseed oils in a small measuring cup. Slowly add the oil mixture to the mustard mixture, whisking constantly, until emulsified. Stir in the dill and salt.

Easy, No-Mess Baked Salmon image

This is an easy, no-mess, no-cleanup recipe that tastes delicious! If I don't feel like scrubbing a lot of pans after dinner, I just throw this in the oven next to some rice and vegetables, or just throw it over some lettuce and tomatoes for a nice salad, and my husband thinks I was cooking for hours! People will think you put a ton of effort into this fancy entree.

½ pound boneless salmon fillet
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon pepper seasoning
1 teaspoon lemon juice
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lay salmon fillet skin-side down on a wide piece of aluminum foil.
  • Drizzle olive oil and balsamic vinegar over salmon. Sprinkle lemon pepper, lemon juice, and salt on top. Fold foil up and over the fillet, tenting it at the top. Roll top down to seal salmon in foil. Transfer to a baking sheet.
  • Bake in the preheated oven until salmon flakes easily with a fork, about 15 minutes.

3 tablespoons olive oil
1 large red onion, thinly sliced
1/4 cup clam juice
6 tablespoons anise liqueur (such as Pernod or anisette)
2 garlic cloves, minced
2 teaspoons herbes de Provence or dried salad herbs
1 1 3/4-pound salmon fillet with skin

Steps:

  • Preheat oven to 375°F. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add onion and sauté until deep brown, about 8 minutes. Remove skillet from heat. Mix in clam juice, then 4 tablespoons anise liqueur, garlic and 1 teaspoon herbs. Boil until most liquid evaporates, about 3 minutes. Set aside.
  • Lightly oil large baking sheet. Place salmon, skin side down, on prepared sheet. Sprinkle with salt and pepper. Whisk remaining 1 tablespoon oil, 2 tablespoons anise liqueur and 1 teaspoon herbs in bowl to blend; drizzle over salmon. Bake until just opaque in center, about 20 minutes. Top with onion mixture.

Home Cured Salmon With Tarragon and Pernod image

I love salmon in all ways, shapes and forms! This is related to gravlax, but with different flavorings. You can sub another herb with anise notes, such as basil, for the tarragon if you wish. Prep time includes curing time. Originally I posted this in response to a request for Pernod recipes, but I have now made it myself and it is really yummy. I have added a simple sauce to accompany the salmon. I could eat this for breakfast, lunch and dinner... and have!

1 1/2 tablespoons kosher salt
1 tablespoon light brown sugar
1 teaspoon lemon pepper
1 lb salmon fillet, skin on
1 1/2 tablespoons Pernod (or other anise liqueur)
1 small bunch fresh tarragon
1 1/2 cups Greek yogurt
1/3 cup fresh dill, chopped
1/3 cup fresh fennel leaves, chopped
1 -2 tablespoon Dijon mustard

Steps:

  • Combine salt, sugar and lemon pepper.
  • Rub evenly over both sides of fish.
  • Drizzle the non-skin side with the Pernod.
  • Roll the salmon in the tarragon.
  • Wrap tightly in plastic wrap, including all of the tarragon.
  • Place in a container with sides and place a skillet or plate on top of the salmon filet.
  • Weight down the plate with several cans (whatever is in the pantry).
  • Refrigerate for 36-48 hours, turning once in that time.
  • Unwrap salmon and brush off tarragon leaves.
  • Serve sliced thinly, or re-wrap in a fresh sheet of plastic and refrigerate.
  • For sauce, combine all ingredients in a bowl.
  • Serve on thinly sliced rye or pumpernickel bread.

1 2 1/2-pound sea bass, weighed with head and tail on, then cleaned, with fins removed
Salt and freshly ground black pepper to taste
3 parsley sprigs
2 tablespoons chopped shallots
2 pounds all-butter puff pastry, defrosted according to package directions
1 egg yolk beaten with 1 tablespoon of water
1 tablespoon of water
1/4 cup minced shallots
3/4 cup dry white wine
1/4 cup heavy cream
8 tablespoons unsalted butter
2 tablespoons minced fresh parsley leaves
2 tablespoons minced fresh tarragon leaves, or 2 teaspoons dried
2 tablespoons minced fresh chervil leaves
2 tablespoons minced fresh chives
Salt and freshly ground white pepper to taste
1 tablespoon Pernod or Ricard

Steps:

  • Preheat the oven to 450 degrees.
  • Place the fish on a flat surface and sprinkle the cavity with salt and pepper. Stuff it with parsley and shallots.
  • Roll out one sheet of puff pastry into a rectangle about 16 by 9 inches. Arrange the pastry on a large baking sheet. Arrange the fish lengthwise over the center of the pastry and brush around the fish with some of the egg yolk mixture.
  • Roll out the second sheet into a rectangle and place it over the fish. Press the pastry around the sides of the fish to seal it. Use a sharp knife to cut away the pastry around the fish, leaving a border of about one-and-a-half inches. Use the sharp knife to vent the pastry in the middle of the fish if desired. If you wish, trim the pastry into the shape of a fish and decorate the top with a scale pattern or cutouts. Brush the pastry with the remaining egg yolk mixture.
  • Place the fish in the oven and bake for 30 minutes or until the pastry is lightly browned. Reduce the temperature to 400 degrees. If necessary, cover the crust with aluminum foil. Cook for 15 minutes longer.
  • While the fish is baking, combine the shallots and wine in a heavy saucepan. Cook over medium-high heat until the wine has nearly evaporated.
  • Add the cream and reduce by half. Add the butter quickly, one tablespoon at a time, whisking constantly. Remove the saucepan from the heat and stir in the herbs, salt, pepper and Pernod.
  • Remove the fish from the oven and serve with the Pernod beurre blanc sauce.

8 fresh shrimp, very large, shelled & deveined
2 tablespoons butter
1 teaspoon green peppercorn
2 tablespoons Pernod
2 tablespoons chopped fresh chives
1/2 cup cream

Steps:

  • Melt the butter in a skillet, add the peppercorns and sauté for about 1 minute.
  • Add the shrimp and cook 1 to 1 1/2 minutes on each side or until they are just pink.
  • Pour over the Pernod and flame. Add chives and cream and heat just to simmer. Serve immediately with lots of crusty bread to mop up the sauce!

  • Melt 1 tablespoon butter mixture in same large nonstick skillet over medium heat. Add sliced fennel bulb and 1/4 cup water to skillet; cover and cook until fennel is crisp-tender, about 8 minutes. Uncover skillet and sauté until fennel begins to brown, about 2 minutes. Transfer fennel to plate.
