Cheesy Shrimp and Spinach Dip is an unbelievably creamy and rich seafood dip. Two kinds of cheeses, mozzarella and Parmesan, give the dip plenty of cheese flavor.

2 tablespoons butter
1/2 cup diced onion
2 garlic cloves, (minced)
2 1/2 tablespoons all-purpose flour
1 cup heavy cream
1 teaspoon Worcestershire sauce
1/4 teaspoon Creole seasoning
1/4 teaspoon crushed red pepper flakes
pinch of nutmeg, (optional)
2/3 cup freshly shredded Parmesan cheese
2/3 cup shredded mozzarella cheese
1/4 cup sour cream
2 cups fresh spinach leaves, chopped up some
1 pound shrimp, peeled and deveined and cut into bite-sized pieces

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter over medium heat in a large nonstick pan. Add onion and cook until soft.
  • Add garlic and cook 1 more minute.
  • Sprinkle flour into pan. Cook and stir for 1 minute.
  • Gradually whisk in heavy cream. Add Worcestershire sauce, Creole seasoning, red pepper flakes, and nutmeg.
  • Stir in cheeses until melted.
  • Stir in sour cream and spinach until spinach is wilted. Remove from heat and stir in shrimp.
  • Transfer mixture to a baking dish. Bake for 15 minutes.

2.5 cups Chopped Spinach
1/4 cup Cream Cheese (softened )
1/4 cup Sour Cream
1 tbsp Mayo
1 tbsp Green Onion
1/2 tsp Old Bay Seasoning
1/4 tsp Lemon Pepper Seasoning
1/2 cup Mozzarella Cheese
1 cup Muenster Cheese (split into 1/2 for topping)
1/4 tssp Pepper
1/2 lb Medium Sized Raw Shrimp (peeled and deveined )
1/3 cup Onion (small diced)
1 tsp Garlic Paste (minced garlic)

Steps:

  • Preheat oven to 375 degrees.
  • In a medium to large mixing bowl, combine all ingredients except shrimp, onion and garlic.
  • Mix thoroughly until well combined, adjust seasonings for flavor and set aside.
  • In a small pan, saute onion and garlic until translucent and soft.
  • Add shrimp and cook for one minute until shrimp begin to turn pink.
  • Remove shrimp, onion and garlic mixture from heat. (the shrimp will not be cooked through but will fully cook in oven)
  • Combine the shrimp mixture with the creamed spinach and mix until combined.
  • Transfer spinach and shrimp dip to an oven safe dish and top with additional muenster cheese.
  • Bake for twenty minutes until shrimp is cooked through.
  • After twenty minutes, turn oven to broil and brown until cheese becomes brown and bubbly-about 30 seconds to 1 minute.
  • Enjoy!

2 packages (10 ounces each) frozen chopped spinach, thawed
1 tablespoon butter
2 garlic cloves, minced
1 tablespoon all-purpose flour
1 can (12 ounces) evaporated milk
1/2 cup grated Parmesan cheese, divided
1/4 cup cream cheese
1/4 cup ricotta cheese
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon pepper
Bagel chips

Steps:

  • Preheat oven to 350°. Place spinach in a colander over a bowl; squeeze dry, reserving 1 cup spinach liquid., In a large saucepan, heat butter over medium heat. Add garlic; cook 1 minute. Stir in flour until blended; gradually whisk in milk and reserved spinach liquid. Bring to a boil, stirring constantly; cook and stir 2-3 minutes or until thickened. Stir in 1/4 cup Parmesan cheese, cream cheese, ricotta cheese, seasonings and spinach; cook and stir until blended., Transfer to a 1-1/2-qt. baking dish. Bake 25-30 minutes or until bubbly and top is lightly browned. Remove from oven; top with remaining Parmesan cheese. Bake 4-5 minutes longer or until cheese is melted. Serve with bagel chips.

This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

Nonstick cooking spray
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated
One 10-ounce box frozen leaf spinach, thawed, drained, squeezed dry and coarsely chopped (see Cook's Note)
One 14-ounce can artichoke hearts, drained well and coarsely chopped
1/2 cup shredded whole-milk mozzarella
3/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
Crackers, chips or toasted bread, for serving

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
  • Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.

Last summer I created this variation on the classic Knorr Spinach Dip ... and it was gone in a flash. Try it; it's really yummy. Don't expect any to be left.

1 (10 ounce) package chopped frozen spinach
1 cup low-fat sour cream
1 cup mayonnaise
1 tablespoon horseradish
1 package Knorr vegetable soup mix (no substitutes)
1 (8 ounce) can water chestnuts, well drained and chopped
4 tablespoons finely chopped red onions
2 cups cooked peeled baby shrimp
1 loaf pumpernickel bread (round loaf)

Steps:

  • Thaw the spinach, then squeeze out as much water as possible.
  • Combine spinach, sour cream, mayonnaise and horseradish in a mixing bowl; you can also do this in a food processor if you like a more pureed consistency (I often do it by hand, or do it VERY CAREFULLY in the food processor so as not to over-process).
  • Stir in the dry soup mix, the chopped water chestnuts and the onion; stir well.
  • Refrigerate for at least 2 hours to let flavours meld.
  • Before serving, stir shrimp into dip mixture.
  • Cut off the top of the loaf of bread and hollow it out, reserving the lid and the inner bread chunks to serve alongside.
  • Fill hollowed bread shell with dip and serve with the bread, cut into chunks, along with an assortment of crackers and carrot sticks.
  • People are drawn to this; watch it disappear!

  • Heat a large cast iron skillet over medium heat. Melt butter and saute onion for 5 minutes or until tender. Add in spinach and stir for 1 minute to wilt. Transfer cooked onions and spinach to cutting board to cool slightly. Chop into small pieces.
  • Place cream cheese into hot skillet over low heat and begin to stir to melt. After about 2 minutes, cream cheese should be very soft and smooth. Stir in chopped onions and spinach, artichoke hearts, yogurt, mayonnaise, shrimp, 1 cup parmesan cheese, salt and pepper. Stir to combine. Spread evenly in pan and sprinkle with remaining 1/4 cup of parmesan cheese.
