Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small baking dish, mix the pineapple with juice, sugar, cinnamon, eggs, and tapioca.
  • Bake 30 minutes in the preheated oven, until set.

Butter-flavored baking spray
1 (18.25-ounce) box vanilla cake mix (recommended: Betty Crocker)
1/3 cup canola oil
3 eggs
1 1/4 cups white cranberry juice
1 (3-ounce) box cool n' serve tapioca pudding (recommended: Jell-O)
1 (14-ounce) can light coconut milk (recommended: Thai Kitchen)
1 teaspoon coconut extract
1/2 cup shredded coconut
For the frosting:
3 (12-ounce) cans fluffy white frosting (recommended: Betty Crocker)
2 teaspoons coconut extract
Fresh blueberries
1 1/2 cups shredded coconut
3 recipes Blueberry Sauce, recipe follows
2 cups frozen blueberries
1/3 cup blueberry vodka (recommended: Stoli)
1/4 blueberry jelly
1 tablespoon cornstarch
1/2 orange, zested

Steps:

  • Preheat oven to 350 degrees F. Lightly spray 2 (8-inch) round baking pans with butter flavor baking spray; set aside.
  • In a large bowl, combine cake mix, oil, eggs, and white cranberry juice. Use an electric mixer to beat cake batter on low speed for 30 seconds. Scrape down sides of bowl and beat for 2 minutes on medium speed.
  • Divide batter evenly into prepared pans. Bake in preheated oven for 32 to 35 minutes, or until tester comes away clean.
  • Meanwhile, make cake pudding filling: combine pudding mix, coconut milk, 1 teaspoon coconut extract, and 1/2 cup shredded coconut in a medium saucepan.
  • Bring to a boil over medium heat, stirring constantly. Remove from heat and let cool.
  • In a small bowl, mix together frosting and 2 teaspoons of coconut extract; set aside.
  • For assembly:
  • With a serrated knife, cut cake layers in half horizontally; set aside.
  • Fill pastry bag or zip-top bag with a third of the frosting; set aside.
  • Place 1/2 of a cake layer on serving plate and pipe a ring of frosting around top edge. Fill middle of ring with 1/3 of pudding. Repeat with 2 more layers. Place final cake layer on top. Frost outside of cake with remaining frosting.
  • Top frosted cake with blueberries and shredded coconut and serve with Blueberry Sauce.
  • Combine all ingredients in saucepan.
  • Cook and stir over medium heat for 3 to 6 minutes or until jelly is dissolved and sauce has thickened.

1 package (3.4 ounces) instant vanilla pudding mix
1 package (3 ounces) tapioca pudding mix
1 can (15 ounces) mandarin oranges, drained
1 can (8 ounces) crushed pineapple, drained
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a saucepan, bring water to a boil. Whisk in gelatin and pudding mixes. Return to a boil, stirring constantly; boil for 1 minute. Remove from the heat and cool completely. Fold in oranges, pineapple and whipped topping. Spoon into a serving bowl. Cover and refrigerate for 2 hours.

It took them a while to convince them that there were no fish eyes in the salad and now they love this treat. They even request it by asking for the Fish Eye Salad--hence the name! 1 1/2 cups coconut milk
1 cup milk
3/4 cup sugar, divided
2 eggs, beaten
1/4 cup water
3 tablespoons quick-cooking tapioca
1/2 teaspoon vanilla
1 pinch salt
2 cups fresh pineapple, chunks
2 cups fresh strawberries, quartered
1 cup mango, diced
1 cup fresh blueberries
1 cup fresh blackberries
1 lime peel, grated
2 tablespoons lime juice

Steps:

  • Mix coconut milk, milk, 1/2 cup sugar, eggs, water, tapioca, vanilla and salt in medium saucepan. Let stand 5 minutes. Cook over medium heat, stirring, until full boil. Remove from heat. Cool 30 minutes. (Pudding thickens as it cools.).
  • Spoon into individual dessert bowls. Combine pineapple, strawberries, mango, blueberries and blackberries in large bowl. Stir in remaining 1/4 cup sugar, lime peel and juice; mix well. Spoon over tapioca.
  • Cover; refrigerate 2 to 3 hours before serving.

1 cup heavy cream

1 quart strawberries, trimmed and coarsely chopped
Equipment: an electric coffee/spice grinder or a mortar and pestle

Steps:

  • Bring water to a boil in a 1-quart heavy saucepan. Whisk in tapioca and simmer, uncovered, whisking occasionally, until tapioca is mostly opaque, about 15 minutes. Whisk in cream, 1/4 cup sugar, and 1/8 teaspoon salt and simmer, uncovered, whisking occasionally, until tapioca is cooked through, about 3 minutes. Transfer to a metal bowl and cool completely in an ice bath, stirring frequently, 5 to 10 minutes.
  • Meanwhile, grind fennel seeds in grinder. Pulse strawberries in a food processor with fennel and remaining 2 tablespoons sugar until coarsely puréed. Divide among (6-ounce) glasses.

This pudding offers you both the satisfying crack of using your spoon to break through a brûlée topping and the sensation of dipping that spoon into fluffy pudding. Tapioca generally isn't baked, but it is easier than cooking it on top of the stove. And once the pudding is in the oven you can leave it alone, as opposed to the stovetop method, which requires frequent stirring to prevent scorching. The use of pearl tapioca makes for a springy texture, and cinnamon in the topping adds a bit of spice.

3 cups whole milk
1 cup heavy cream
1 cinnamon stick
1/3 cup small pearl tapioca
4 large egg yolks
85 grams granulated sugar (about 1/3 cup)
1/4 teaspoon fine sea salt
45 grams Demerara sugar (about 3 tablespoons)
1/4 teaspoon ground cinnamon.

Steps:

  • Heat oven to 300 degrees
  • In a medium saucepan, bring the milk, cream and cinnamon stick to a simmer. Whisk in the tapioca. Simmer until the pearls are completely tender, about 20 minutes.
  • In a large bowl, whisk together the egg yolks, granulated sugar and salt. Whisking constantly, pour in a third of the tapioca mixture. Whisk yolk mixture into the pot of tapioca; simmer over medium-low heat, stirring constantly with a heat-proof spatula, until thick enough to coat the back of a spoon, about 5 minutes.
  • Transfer pudding to a buttered 1.5-quart gratin dish. Sprinkle the top with Demerara sugar and cinnamon. Bake, uncovered, until the pudding is firm around the edges and jiggly in the center, about 30 minutes. Put under the broiler until top is bubbling and golden, 3 to 5 minutes. (Watch carefully to make sure it doesn't burn.) Eat warm, or chill and serve cold, removing the cinnamon stick while serving.
