THE BEST BAKED MEATBALLS

Steps:
- Preheat oven to 400 degrees. Lightly spray a 9 x 13 pan or baking sheet with nonstick cooking spray.
- Combine all ingredients in a medium mixing bowl. Mix thoroughly until ingredients are evenly distributed.
- Shape into 1 to 1.5 inch balls. Whatever size you choose, they should all be roughly the same size for even cooking.
- Bake for 25 -30 minutes. Serve hot.

- Preheat the oven to 400 degrees F.
- In a large mixing bowl, combine the pork, lamb, ground round, spinach, cheese, egg, basil, parsley, garlic powder, salt, red pepper flakes, and 1/4 cup of the bread crumbs. Using your hands, mix all ingredients until well incorporated. Use immediately or place in refrigerator for up to 24 hours.
- Place the remaining 1/4 cup of bread crumbs into a small bowl. Using a scale, weigh meatballs into 1.5-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds, roll in the bread crumbs and place the meatballs in individual, miniature muffin tin cups. Bake for 20 minutes or until golden and cooked through.
EASY MEATBALLS
My husband makes these easy meatballs with simple ingredients like eggs, panko bread crumbs, garlic powder, and fresh basil, and they come out flavorful and delicious every time! Kids love them too! If desired, add the cooked meatballs to your favorite sauce until submerged (this brings out the moistness).

- Mix eggs, Italian seasoning, basil, salt, pepper, and garlic powder together in a large bowl. Add beef and panko bread crumbs and mix thoroughly.

- Preheat the oven to 425 degrees F.
- Add the arrabbiata sauce to a 12-inch cast-iron skillet and top with the peppers. Add the meatballs, then bake until the meatballs are cooked through, 18 to 20 minutes. Remove the meatballs from the oven, then turn the oven to the broiler setting.
- Sprinkle the crushed red pepper flakes over the meatballs, then lay a slice of mozzarella over the top of each meatball. Place under the broiler for 3 to 4 minutes to melt the cheese, watching closely so that nothing burns. Scatter over the torn basil.
- Serve with crusty bread and a dressed salad.

No it doesn't take the whole weekend to make! I've combined recipes #173026 and #84957 and modified them so much it's taken a life of it's own... enjoy!

- Preheat oven to 400°F.
- Generously spray cookie sheet with non-stick spray. I prefer using a sprayed broiling rack so the grease separates from the meatballs.
- Mix all ingredients; should be 'moist' but not 'sloppy' -- add a bit more breadcrumb if necessary.
- Form into meatballs, about inch and a half across or so
- Plan ahead! Slightly flatten a dozen meatballs so they don't roll away when you make sandwiches --
- Place on sprayed sheet or rack close together without touching.
- Bake 15-20 minutes or until done through.
- Serve on top of pasta with favorite sauce; they are *awesome* on long rolls with sauce and mozzarella or provolone.
- * Note: Can substitute some/all Romano cheese for shredded Parmesan cheese.
- * Number of meatballs and cooking length is dependent on how big you make them.

- Place rack in top third of oven; preheat to 425°. Lightly brush a large rimmed baking sheet with oil. Using a sturdy wooden spoon, vigorously stir eggs, panko, milk, salt, garlic powder, several cranks of pepper, 1 oz. Parmesan, and remaining 2 Tbsp. oil in a medium bowl until nearly a smooth paste. Mix in one quarter of meat (combining just a small amount of meat in the beginning makes it easier to incorporate the rest without overmixing). Add remaining meat and mix well to thoroughly combine, but don’t overwork it. Using oiled hands, form into 8 large meatballs and place on prepared baking sheet.
- Bake meatballs until well browned underneath, about 15 minutes. Using a stiff metal spatula, pry up and turn over meatballs (they may want to stick a bit). Bake until browned on second side and an instant-read thermometer inserted into the center of each one registers 160°, 5–7 minutes.
- Divide meatballs among plates and spoon some sauce over. Top with basil and more Parmesan.
