BAKED MOZZARELLA BITES
These easy-to-make appetizers are sure to both surprise and delight your guests with the great flavor of fried mozzarella sticks without the frying step!

Steps:
- Heat oven to 325°F.
- Cut cheese crosswise into 15 slices, then cut each slice in half.
- Top 30 crackers with cheese; cover with remaining crackers. Place on rimmed baking sheet.
- Bake 8 min. or until cheese begins to melt. Meanwhile, heat pasta sauce. Serve cracker sandwiches as dippers with sauce.

Steps:
- Preheat a toaster oven on broil setting, or set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Spray a small baking sheet with cooking spray.
- Insert toothpick vertically into each cheese stick half to mid-way point. Beat egg in a small bowl. Place bread crumbs in a separate small bowl.
- Dip each cheese stick into egg, then press into bread crumbs. Repeat dipping in egg and breadcrumbs for a double-thick coating. Place cheese sticks on prepared baking sheet and spray with additional cooking spray for uniform browning.
- Broil in preheated oven until golden brown, 4 to 5 minutes. Allow cheese sticks to set before serving, about 1 minute.

Steps:
- Roll each mozzarella ball in panko and place on a parchment lined baking sheet.
- Freeze for 2 hours or overnight. You can then either place the mozzarella in a ziploc or cook immediately.
- Heat the oven to 400 degrees.
- Place the mozzarella on a parchment lined baking sheet, spray the breadcrumbs liberally to help with browning and bake for 6-10 minutes or until lightly golden and gooey.
- Serve with warm marinara sauce

- Line a large plate with several layers of paper towels. In a small pot, heat the oil over medium heat until it reads 360°F to 370°F on a thermometer.
