BAKED SWEET POTATOES WITH BROWN SUGAR-PECAN BUTTER
After moving to Texas from the north, I was introduced to baked sweet potatoes as a side dish, a nice change from the usual baking potato. These are "baked" in the microwave, a real time-saver!

Steps:
- Try this method for toasting the pecans: Sprinkle chopped pecans on a paper plate and microwave on high for 1 or 2 minutes, they should smell toasted when they are done.
- Scrub, but do not peel, the potatoes.
- Pierce them in several places with a fork.
- Microwave on HIGH for 12 minutes until done.
- Meanwhile, combine the butter, sugar, and pecans.
- Once potatoes are done, slice length wise, about 2/3 of the way down (do not cut through) and push end toward each other to "fluff" the potato and create a well for the butter.
- Place a scoop of butter mixture into the center and wrap in foil until serving.

MASHED SWEET POTATOES WITH BROWN SUGAR AND PECANS
This maple-sweetened mashed sweet potato casserole has a brown sugar and pecan topping that bakes into a crunchy candylike crust.

- Preheat oven to 350°F. Mix sugar, pecans and butter in small bowl. Cover and chill until ready to use. (Can be made up to 2 days ahead. Keep refrigerated.)
- Butter 13x9x2-inch glass baking dish. Cook sweet potatoes in large pot of boiling salted water until very tender, about 12 minutes. Drain. Let stand in colander 15 minutes. Purée sweet potatoes in processor.
- Beat eggs, syrup, vanilla, lemon juice and salt in large bowl. Mix in puréed sweet potatoes. Transfer sweet potato mixture to prepared dish. Sprinkle pecan topping evenly over mixture.
- Bake until sweet potato mixture is set and topping bubbles, about 1 hour. Let stand 15 minutes and serve.
WHIPPED SWEET POTATOES WITH BROWN SUGAR-PECAN TOPPING

- Make sweet potatoes:
- Preheat oven to 400°F. Cook sweet potatoes in large pot of boiling water until tender, about 15 minutes. Drain; transfer potatoes to large bowl and add butter. Using electric mixer, beat until smooth. Add egg, sugar, spice and salt; beat to blend. Transfer mixture to 8 x 8-inch baking dish. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before continuing.) Bake potatoes until beginning to brown around edges and slightly puffed, about 25 minutes.
- Meanwhile, prepare topping:
- Mix together all ingredients in medium bowl.
- Spoon topping evenly over potatoes. Bake until golden brown and crisp, about 10 minutes longer.
TWICE-BAKED SWEET POTATOES
With the addition of cream cheese, they are very creamy and not overly sweet.

- Preheat oven to 375 degrees F (190 degrees C).
- Bake sweet potatoes in the preheated oven until tender, about 1 hour and 15 minutes. Set aside until cool enough to handle.
- Cut a thin lengthwise slice from the top of each sweet potato and discard slice. Scoop pulp from sweet potatoes, leaving thin shells. Place pulp into a bowl and mash with cream cheese. Stir brown sugar, pecans, and cinnamon into mixture and fill sweet potato shells with pulp. Place filled sweet potatoes onto a baking sheet.
- Bake until sweet potatoes are heated through, 15 to 20 minutes.

- Preheat oven to 325°. In a large bowl, beat the sweet potatoes, sugar, eggs, milk, butter, salt and vanilla until smooth. Transfer to a greased 2-qt. baking dish. , In a small bowl, combine the brown sugar, pecans and flour; cut in butter until crumbly. Sprinkle over sweet potato mixture. Bake, uncovered, until a thermometer reads 160°, 45-50 minutes.
