Balsamic and Garlic Marinated Steak image

Make sure your grill is hot before adding your steak. A hot grill quickly sears the outside of the meat, sealing the meat so it stays juicy and tender. Adding a packet of potatoes or vegetables while the steak cooks will save you time and work and supply you with a great side.

1/2 cup balsamic vinegar
1/4 cup chili sauce
2 tablespoons packed brown sugar
2 tablespoons olive oil
2 teaspoons minced garlic
1/2 teaspoon italian seasoning
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 lbs beef boneless top round steaks, 1 to 1 1/2 inches thick

Steps:

  • Mix all the ingredients except for the steak in a shallow glass dish or a food storage bag.
  • Add steak, turning to coat.
  • Cover the dish or seal the bag.
  • Refrigerate at least 8 hours or overnight, turning occasionally.
  • Remove steak from the marinade; reserve marinade.
  • Grill over direct high heat for 5 minutes; turn steak and sear the other side.
  • Move steak to a cooler part of the grill; cover and grill until desired doneness, turning and brushing with reserved marinade once or twice. (This is a good time to place packet potatoes or a vegetable packet over the hot side of the grill to go with your steak. Don't forget to turn them occasionally while your steak cooks).
  • Discard any remaining marinade.
  • To serve, cut beef into slices across the grain into slices.

1/2 cup balsamic vinegar
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme
2 teaspoons bottled minced garlic
1 teaspoon cracked black peppercorns
1 1/2 teaspoons salt
2 (1 lb) beef t-bone steaks, cut 1-inch thick

Steps:

  • In small saucepan cook vinegar over low heat until reduced to about 3 tablespoons and vinegar is syrupy.
  • In small bowl stir together thyme, garlic, peppercorns, and salt. Rub on both sides of steaks.
  • Coat grill rack with nonstick cooking spray. Preheat grill to medium direct heat. Grill steaks, uncovered, to desired doneness, turning once halfway through grilling. (Allow 11 to 14 minutes for medium-rare or 13 to 16 minutes for medium).
  • Serve steaks drizzled with vinegar syrup.

1 (5 pound) blade chuck roast
2 cups balsamic vinegar
1 cup olive oil
1 tablespoon salt
1 tablespoon whole black peppercorns
1 tablespoon dried savory
1 tablespoon dried mint
1 tablespoon dried rosemary
1 tablespoon dried thyme
1 tablespoon butter
3 cups beef stock

Steps:

  • Combine roast, vinegar, olive oil, salt, peppercorns, savory, mint, rosemary, and thyme in a resealable plastic bag. Coat roast with the marinade, squeeze out excess air, and seal the bag. Marinate roast in the refrigerator, 8 hours to overnight.
  • Preheat oven to 250 degrees F (120 degrees C).
  • Melt butter in an oven-safe pot over medium heat. Transfer roast to hot butter, reserving marinade in bag. Cook roast until browned on all sides, 2 to 3 minutes per side. Place roast on a work surface.
  • Pour marinade into the pot and bring to a boil while scraping the browned bits of food off the bottom of the pot with a wooden spoon. Add broth and simmer until sauce is reduced by half, about 10 minutes. Return roast to pot and cover.
  • Cook roast in the oven until meat falls apart when poked with a fork or knife, 6 to 8 hours. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Serve meat with reduced sauce.

10 medium potatoes, peeled and cubed, or more to taste
4 large carrots, peeled and cut into 1/2-inch chunks
1 medium onion, cut into 1/4-inch slices
⅓ cup balsamic vinegar
¼ cup unsalted butter, melted
8 sprigs fresh thyme
1 teaspoon minced garlic
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Coat a 9x13-inch baking pan with cooking spray.
  • Mix potatoes, carrots, onion, balsamic vinegar, butter, thyme, garlic, salt, and pepper together in a large glass bowl. Spread mixture into the prepared pan in an even layer. Cover with foil.
  • Roast in the preheated oven, giving the pan a shake every 15 minutes to ensure even cooking, for 45 minutes.

  • In a small bowl combine balsamic vinegar and garlic. Salt your steaks with one-half teaspoon of salt on each side. Brush the balsamic vinegar mixture on top of both sides. Allow the steaks to sit for about 30 minutes.
  • Preheat your oven to 400 degrees. In a small saucepan, over low heat, heat your caramelized onions and thyme. Stir periodically.
  • Prepare a rimmed baking sheet with tinfoil and a rack, lightly coated in cooking spray. Set aside. Add some oil to a large skillet and place it over medium to medium high heat. Wait until the oil is shimmering or a drop of water flicked in it dances. Coat both sides of steak with balsamic mixture. Sear or brown steaks, about 3 minutes per side. Sear the sides as well if you can. After each steak is brown on all sides place it on your prepared baking sheet. If you have any of the balsamic mixture left brush it on top of the steaks before going into the oven. Bake for 5-6 minutes per side. Flip steaks once. If steaks are not cooked well enough at this point flip and check every 5 minutes until done. This next step is optional. Move oven rack close to your broiler and set your oven temperature to broil. Broil steaks for a minute or two per side. This will crisp the steaks up a bit on the outside. Delicious.
