3 tablespoons shortening
1/3 cup sugar
1 large egg
1/4 teaspoon vanilla extract
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup mashed ripe banana (about 1 large)
3 tablespoons chopped walnuts

Steps:

  • In a small bowl, cream shortening and sugar. Beat in egg and vanilla. Combine the flour, baking soda and salt; add to creamed mixture alternately with banana. Fold in walnuts. , Transfer to a 5-3/4x3x2-in. loaf pan coated with cooking spray. Bake at 325° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

1½ cups brown rice flour (375 ml)
1½ cups potato starch (375 ml)
1 cup tapioca flour (tapioca starch) (250 ml)
3/4 cups bean flour (175 mL)
3/4 cups brown rice flour blend (175 mL)
2 tsp baking powder (10 mL)
1 tsp xanthan gum (5 mL)
1 1/2 tsp cinnamon (7 mL)
1/2 tsp ground mace (optional) (2 mL)
1/2 tsp table salt (2 mL)
1/2 tsp ground nutmeg (2 mL)
1/8 tsp baking soda
2 large eggs, room temperature
2/3 cup honey (125 mL)
1/2 cup canola oil (125 mL)
2 large very ripe bananas, mashed
1 tsp vanilla (5 mL)
1/2 cup chopped pecans (optional) (125 mL)

Steps:

  • In a large container with a lid thoroughly combine brown rice flour, potato starch and tapioca flour. Store, tightly closed, in dark, dry place.
  • Place rack in middle of oven. Preheat oven to 350ºF (180ºC). Grease four 6×4-inch nonstick metal loaf pans. Pans can also be lined with parchment paper.
  • In a medium mixing bowl, whisk together the bean flour, brown rice flour blend, baking powder, xanthan gum, cinnamon, mace, salt, nutmeg and baking soda until well blended.
  • Add eggs, honey, oil, bananas and vanilla and beat with electric mixer on low speed just until blended. Increase speed to medium and beat another 30 seconds. Stir in nuts if desired. Spread batter evenly in pans. Let stand for 10 minutes.
  • Bake until loaves are browned and a toothpick inserted into center comes out clean, about 35 to 40 minutes. Lay a sheet of foil over loaves after the first 15 minutes to prevent over-browning.
  • Cool bread in pans on a wire rack for 10 minutes, then remove bread from pans and cool completely on the wire rack.

1 teaspoon salt
1 cup chopped nuts, if desired

Steps:

  • Heat oven to 350°F. Grease bottoms only of 10 (4 1/2x2 1/2x1 1/2-inch) mini loaf pans with shortening or cooking spray.
  • In large bowl, mix sugar and butter with spoon. Stir in eggs until well blended. Add bananas, buttermilk and vanilla; beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Divide batter evenly among pans, filling each with about 1/2 cup batter.
  • Bake 30 to 35 minutes or until toothpick inserted in centers comes out clean. Cool 5 minutes. Loosen sides of loaves from pans; remove from pans to cooling racks. Cool completely, about 2 hours. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

Steps:

  • Preheat an over to 325 degrees and spray 3 mini loaf pans with nonstick cooking spray

1 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup white sugar
1/2 cup brown sugar
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
2 cups mashed, over-ripe bananas (6 small bananas)

Steps:

  • Preheat oven to 350 degrees F. Grease your bread pans with butter or non-stick spray.
  • In a medium bowl, combine the flour, baking powder, baking soda and salt with a whisk and set aside.
  • In the bowl of a stand mixer, mix the butter, white sugar and brown sugar on medium until light and fluffy, about 2 minutes. Add the eggs, milk, vanilla extract, cinnamon and pumpkin pie spice to the butter/sugar mixture. Mix on medium speed until well combined.
  • Beat in the mashed bananas until evenly mixed in.
  • With your mixer at low speed, gradually add in the set-aside flour mixture, until just combined.

  • Preheat oven to 350°.
  • Add dry ingredients to a bowl and stir with a whisk. Set aside.

1/2 teaspoon Baking Powder

Steps:

  • Place bananas (unpeeled) in the air fryer and bake on 180C / 350F for 15 minutes. Remove the bananas and set aside to cool.
  • Mix the butter and sugar together in a large mixing bowl. Add egg, vanilla and milk and continue to mix.
  • Remove bananas from their skin then mash on a plate. Add mashed banana to the mixing bowl and mix until well combined.
  • In a seperate bowl mix together the flour, baking powder, baking soda, cinnamon and a pinch of salt. Pour wet ingredients on top and stir until just combined.

  • In a large bowl, combine the flour, baking soda, and salt; set aside. Place the bananas in another large bowl and mash them well with a whisk or a potato masher or a fork. Add the brown and granulated sugars and the melted butter and beat with an electric mixer or a whisk until well blended (there will be little bits of banana that don't get perfectly smooth). Beat in the eggs one at a time, and then beat in the vanilla. Add the dry ingredients, switch to a spoon, and stir just until the flour is incorporated.
  • Spoon the mixture evenly into the tins (they will be fairly full), and bake until a wooden skewer inserted into the middle of the mini loaves comes out clean, about 25 to 28 minutes. Let cool for a few minutes in the tins on a wire rack, then turn the little loaves out onto the rack to finish cooling. Serve warm or at room temperature.

  • Mix the flour, salt & baking soda, baking powder, cinnamon and nutmeg in a medium bowl until well combined. Set aside.
  • In a separate bowl peel and mash your bananas, add the egg, vanilla, milk, sugar and butter and mix all together until combined. Now fold through the dry ingredients until combined.
  • If you are adding any nuts or chocolate chips now you can mix them in. The batter will be thick and chunky. Place your mix into any desired pan I use mini loaf pan but also make 12 cupcakes if using my cupcake tray. Sprinkle oats on top.
  • Bake at 180° c, for about 20 minutes depending on your oven. I always check mine half way through and pop a toothpick in to see how much longer they may need. They are super soft and moist enjoyed eaten warm straight from the oven! Save some for the kiddies if you can.
