¾ cup white sugar
6 tablespoons butter, softened
6 tablespoons ground flax seed
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3 ripe bananas, mashed
¾ cup chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with cooking spray or line with paper liners.
  • Beat sugar, butter, flax seed, vanilla, and eggs together in a bowl with an electric mixer until smooth and creamy.
  • Sift flour, salt, and baking soda together in a separate bowl. Mix creamed sugar mixture, 1/2 cup at a time, into the flour mixture until fully incorporated and batter is stiff. Beat bananas into batter with an electric mixer on low. Fold chocolate chips and walnuts into batter; spoon into the prepared muffin cups, filling each cup 3/4 full.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 25 minutes. Cool in the tins for 10 minutes before removing to cool completely on a wire rack.

¼ cup milk chocolate chips

Steps:

  • Preheat oven to 375°F. Line a muffin pan with paper liners.
  • Combine flour, baking soda, and salt in a small bowl. Stir in chocolate chips.
  • Combine sugar, bananas, egg, oil, and vanilla in a medium bowl.
  • Add dry ingredients and mix just until combined.

1 flax egg (1 tablespoon ground flaxseed + 3 TBSP water)
3 medium ripe bananas, mashed
1/4 cup pure maple syrup
1/4 cup unsweetened almond milk
1/4 cup plain applesauce
1 cup oat flour
1 cup gluten-free old fashioned rolled oats
1/4 cup unrefined coconut sugar
1/4 cup white chia seeds
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 cup semisweet chocolate chips
Optional: stir in 1/2 c. chopped nuts

Steps:

  • Preheat the oven to 350°F and line a muffin tin with liners or spray with nonstick spray.
  • In a small bowl, mix together ground flax and water and allow to sit for a few minutes to gel. Add the mashed bananas then mix in the rest of the wet ingredients.
  • Sift in all dry ingredients to the same bowl except the chocolate chips.
  • Mix until well combined, then fold in the chocolate chips.
  • Fill each muffin cup about 3/4 of the way full and sprinkle the top with more chocolate chips, chia seeds, and oats (optional).
  • Bake the muffins for 20-25 minutes, or until a toothpick comes out clean.
  • Allow the muffins to cool for 10 minutes, then remove them from pan.
  • Store leftover muffins in an airtight container in the fridge for up to a week and freeze for long term storage.

Steps:

  • Preheat oven to 350 degrees.

2 large eggs, at room temperature
2 medium bananas
1/3 cup 2 percent milk
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Line a 12-cup muffin pan with parchment squares so they come up over the sides, and set aside.
  • Whisk together the flours, wheat germ, baking soda and salt in a medium bowl. Beat the butter and sugars together with an electric mixer until light and fluffy, about 5 minutes. Add the eggs one at a time, beating well after each addition.
  • Mash the bananas with a fork in a separate bowl. Stir in the milk and vanilla.
