Peanut Butter Banana Fritters Drizzled with Chocolate Sauce image

2 cups flour
2 tablespoons confectioners' sugar
2 teaspoons baking powder
Pinch sea salt
Small pinch baking soda
3 ripe bananas, mashed
1/2 cup smooth organic peanut butter
2/3 cup milk
1 egg
Peanut or Canola oil, for deep frying
1/2 cup dark chocolate chunks
1/2 cup whipping cream
1 cup water, for double boiler

Steps:

  • To make the fritters: Combine the flour, sugar, and baking powder in a bowl and mix. Add the bananas, peanut butter, milk, and egg and whisk until the consistency is such that it can be balled up in a spoon. In a medium sauce pan, heat the peanut oil to 375 degrees F. Using a teaspoon, delicately spoon the peanut-butter-banana batter into the oil, a few balls at a time and deep fry until they fluff up and become crispy and golden brown, about 5 minutes. Strain on wire rack.
  • To make the chocolate sauce: In a pot, bring a cup of water to a simmer. Add a large metal bowl over top of the pot. In the metal bowl, add the chocolate chunks and whipping cream, then whisk until it melts together.
  • Generously drizzle the chocolate sauce over the fritters and serve.

2 bananas, mashed
2 cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1 tablespoon margarine, melted
1 quart vegetable oil for frying
½ cup confectioners' sugar

Steps:

  • In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
  • Heat the oil in a large skillet to 365 degrees F (180 degrees C).
  • Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

Soon after I made these fritters for the first time, my husband began requesting them on a regular basis. I also like to serve them to overnight guests as a sweet breakfast treat.

1/2 cup milk
1 teaspoon canola oil
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
4 large firm bananas
Additonal oil for deep-fat frying
Confectioners' sugar, optional

Steps:

  • In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; stir into egg mixture until smooth. Cut bananas into quarters (about 2 in. long). Dip each banana piece into batter to coat. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry banana pieces, two to three at a time, until golden brown. , Drain on paper towels. I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

Steps:

  • In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.

1 cup sifted flour
2 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
1 egg, beaten
1/3 cup milk
2 tablespoons shortening, melted
2 -3 firm bananas
oil (for deep frying)
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
2 cups boiling water
4 tablespoons butter
2 tablespoons brandy
1/4 teaspoon ground nutmeg

Steps:

  • Sift together the flour, baking powder, salt and sugar.
  • Combine the egg, milk and melted shortening; add the liquids to the dry ingredients and mix until smooth.
  • This will make a very stiff batter, but it will remain refreshingly crisp for some time after it's been cooked.
  • Cut each of the bananas into 3 chunks, dust with flour and coat with the fritter batter.
  • Fry in hot deep oil (375 F) until golden brown, turning often.
  • Drain on paper towels.
  • To Make Brandy Sauce:.
  • Measure the sugar, cornstarch and salt into a saucepan.
  • Gradually add the boiling water, stirring constantly.
  • Simmer over low heat for about 5 minutes, or until clear and thickened.
  • Remove from the heat and stir in butter, brandy and nutmeg.
