Steps:
- For the topping: In a small bowl, combine 1/4 cup oats, 1/4 tsp. cinnamon, 1 tbsp. brown sugar, and 1 tbsp. melted butter; set aside.
- For muffins: Mash bananas in a medium bowl.
- Stir in egg and milk. In a large bowl combine the flour, baking soda, baking powder, salt and remaining amounts of oats, brown sugar and cinnamon.
- Stir the banana mixture into the dry ingredients until just combined.
- Gently stir in raisins, don't over mix, the batter will be lumpy.
- Spoon into prepared muffin cups and sprinkle each with topping.
- Bake at 400 degrees for 18-20 minutes.

- Preheat the oven to 350°F (175°C).
- Grease or line a 12 cup muffin pan.
- In a large bowl, mix together the flour, oats, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, ginger and nutmeg.
- Stir in the raisins or sultanas. Set aside.
- Crack the egg into a medium bowl and beat lightly.
- Whisk in the buttermilk, oil and vanilla.
- Stir in the bananas with a fork, making sure they are mashed into small chunks as you stir.
- Stir the wet ingredients into the dry ingredients thoroughly.
- Divide between the 12 muffin cups.
- Bake for 20 to 25 minutes or until a toothpick, skewer or piece of dried spaghetti inserted in the centre of the muffins comes out clean.
- Cool on a wire rack.
- These muffins are delicious warm. Store any leftovers in an airtight container at room temperature and re-warm gently before serving.
- Muffins may be frozen. Thaw overnight in the fridge and re-warm gently before serving.

- Soak raisins with 1 tablespoon water. Chill for 2-3 hours. When ready to use, remove from the refrigerator, squeeze dry and pat with paper towel.
- Preheat the oven to 380°F (190°C). Line a 12-muffins/cupcakes baking pan.
- Sieve the flour, baking powder, baking soda and salt into a bowl. Add in the brown sugar and whisk to mix the dry ingredients together. Set aside.
- Combine the quick oats and milk together in another bowl. Set aside.
- In a new bowl, beat the egg, add in the vegetable oil and beat to incorporate. Add in the mashed banana and mix well.
- Make a well in the center of the dry ingredients and pour in the egg, oil and banana mixture. Use a spatula to fold the flour into the center until all combined with no traces of flour.
- Next, fold in the oats and milk mixture. Add the raisin and fold a few more times. Do not over mix.
- Spoon the batter into the liner until 75%-80% full. Sprinkle some oats on the top.
- Bake at 380°F (190°C) for 10 minutes. Then reduce the temperature to 350°F (180°C) for another 8-10 minutes or until a cake tester inserted into the center come out clean. Transfer muffins to wire rack to cool completely before storing the muffins in air tight containers.

- Preheat your oven to 400°F, and coat the baking tins with a bit of olive oil to prevent sticking.
- Combine the dry ingredients (flour, oats, cinnamon, nutmeg, brown sugar, baking soda, baking powder) in a large bowl and mix well.
- Mash the bananas into a pulp and then combine with the banana yogurt until thoroughly mixed.
- in a separate bowl, whip the egg whites for 3 minutes until they are somewhat stiff and fluffy.
- Then mix the egg whites with the yogurt and banana mixture.
- Finally, add the raisins.
- Now pour the wet ingredients (banana/yogurt/egg/raisin mixture) into the dry ingredients (flour/oats/nutmeg/cinnamon/baking powder/baking soda).
- Mix until just combined (make sure nothing stays dry).
- Fill the muffin tins and bake for about 20 minutes.
- Cool for 5 minutes and then remove from tins and place on cooling racks to cool further.
