Steps:
- Banana Walnut Two-Bite Pie Servings: 12 Time: 15 minutes hands-on, 10-20 minutes in oven Fruit pies work well with any crust and they double as a tasty dessert. If you plan to enjoy them on a ride, use just 1-2 tablespoons of filling in each pie to limit the fiber content. Let the pies cool completely after baking so the filling firms up. Ingredients - 2 large bananas, diced - ¼ cup finely chopped walnuts - 1 tablespoon brown sugar -1 teaspoon ground cinnamon or your favorite baking spice To make fruit pie filling: Mix all the ingredients together in a bowl and pair with the piecrust of your choice. Use just enough dough to wrap the fruit mixture, trimming off the excess. If you use a traditional or gluten-free crust, you might find you have some dough left over. To make traditional pie crust: TIME: 15 minutes hands-on, 30-60 minutes to chill Traditional pie crusts work well with any filling and can be kept frozen for weeks. 3 cups flour ½ teaspoon salt ½ teaspoon ground cinnamon (optional) 2/3 cup cold unsalted butter, cut into ½-inch cubes ½ cup cold water In a small food processor pulse together flour, salt, and cinnamon. Add butter and blend until the butter pieces are no longer visible. Transfer the mixture to a large bowl and add cold water a little bit at a time, using a spatula to turn the dough and mix ingredients. Add more water or a bit more flour until the dough begins to take shape. Divide dough into 12 portions and pat each one into a firm ball. Wrap and chill the dough before handling (at least 30 minutes in the freezer or 1 hour in the refrigerator). You might have leftover dough if you are making sweet pies.

Steps:
- Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, stir brown sugar, butter, corn syrup and walnuts until smooth. Gently stir in bananas. Spoon mixture into baking dish.
- Reserve ends of bread for another use because they don't soak up the egg mixture very well. Arrange 2 layers of bread on banana mixture, tearing bread to fit if needed.
- In medium bowl, beat eggs, milk and vanilla with wire whisk until well blended. Pour over bread. Cover tightly; refrigerate at least 1 hour but no longer than 24 hours.
- Heat oven to 325°F. Uncover; bake 45 to 55 minutes or until knife inserted in center comes out clean. Serve portions upside down, spooning sauce from bottom of dish over each serving. Sprinkle with powdered sugar.

Steps:
- Crust:
- Place a rack in middle of oven; preheat oven to 350°F. Using your hands, crush graham crackers into a food processor; pulse until finely ground. Add peanuts and salt and pulse a few times until incorporated but with some flecks of peanut remaining. Pour in butter and pulse just until mixture holds together when squeezed in your palm.
- Press mixture firmly and evenly into the bottom and up the sides of a standard 9" pie dish using the bottom of a flat measuring cup or glass. Bake until golden brown, 12-15 minutes. The crust will most likely have slumped down toward the bottom of the dish; remove from oven and press crust back up the sides while still hot. Return to oven and bake until browned, about 5 minutes longer. Let cool.
- Do Ahead: Crust can be made 3 days ahead. Store tightly wrapped at room temperature.
- Filling and assembly:
- Whisk granulated sugar and cornstarch in a large saucepan to combine. Add eggs and egg yolks and whisk vigorously, making sure to get into corners of pan, until smooth and pale. Whisk in milk, vanilla, and ½ tsp. salt.
- Place saucepan over medium heat and bring to a simmer, whisking often and making sure to get into corners of pan, 8-10 minutes (mixture should be bubbling and thickened). Reduce heat and continue to simmer, whisking constantly, 3 minutes. Let pudding cool 5 minutes, whisking every minute.
- Add butter to pudding and whisk until melted and fully incorporated. Add bananas and stir once to incorporate. Scrape filling into cooled crust; smooth surface. Chill until cold and set, at least 2 hours and up to 1 day.
- Using an electric mixer, beat cream, powdered sugar, and a pinch of salt in a large bowl until soft peaks form. Spoon whipped cream over filling, swirling as desired. Top with peanuts.
