Easy Whole Wheat Banana Muffins image

Very easy, moist banana muffins. Great basic recipe that you can change by adding nuts, chocolate chips, or raisins.

1 cup mashed bananas
1 cup creamy salad dressing (such as Miracle Whip®)
¾ cup white sugar
2 cups whole wheat flour
2 teaspoons baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix bananas, salad dressing, and sugar in a large bowl until smooth. Stir flour, baking soda, and salt into banana mixture until batter is just moistened. Divide batter evenly into 24 muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 17 minutes.

3/4 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups mashed bananas (about 3 bananas)
1 egg
1/2 cup margarine, melted

Steps:

  • Preheat oven to 375°F.
  • Combine dry ingredients in a large bowl and mix well.
  • Combine wet ingredients in a different bowl and beat well together.
  • Add beaten wet ingredients to dry ingredients; stir until moistened.
  • Fill baking cups 2/3 full and bake for 20-25 minute.

2 cups whole wheat flour
1/2 cup organic sugar
1/3 cup dry powdered milk
1 teaspoon baking soda
3 ripe bananas
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup warm water
1/2 cup unsweetened applesauce
1 egg
1 cup sourdough starter

Steps:

  • Mix all but last 4 ingredients in large bowl.
  • In another bowl combine final four ingredients till well bleneded.
  • Add liquid to the dry gradually.
  • Spoon into muffin tins and bake 30 to 35 minutes at 350 degrees.

  • Preheat oven to 350°F (176°C) and line a 12 count muffin tin with paper liners, or lightly grease.
  • Whisk the flour, salt, baking powder and baking soda together in a bowl and set aside. In a separate bowl, use a fork to mash the bananas until smooth.
  • Melt the butter in a mixing bowl and add the dark brown sugar. Use a spatula to cream the butter and sugar together. Add the eggs, mashed banana, sour cream, sourdough discard and vanilla extract and mix until combined.
  • Add the wet ingredients to the dry ingredients and mix with the spatula until just combined. (Do not over mix!) Gently fold in 2/3 cup of the chopped walnuts.
