WHOLE GRAIN HEALTHY BANANA BREAD
Don't let the healthy name fool you, this banana bread is moist and full of flavor. Whole grains, high fiber and low fat and sugar are just the added benefits. My family devours it! This can also be made in 4 mini loaf pans, just bake for 25 to 30 minutes at the same temperature.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and a 9x5 inch loaf pan.
- In a medium bowl, mix together the sugar blend, flax meal, bananas, milk, sour cream and egg whites until well blended. Combine the flour, baking soda and salt; stir into the banana mixture until moistened. Spoon into prepared loaf pan.
- Bake for 1 hour and 10 minutes in the preheated oven, or until a toothpick inserted into the crown of the loaf comes out clean.

- 2. Mix dry ingredients in large bowl. Mix wet ingredients in medium bowl. Add wet ingredients to dry ingredients.

LOW-FAT, HIGH-FIBER YUMMY BANANA BREAD
I make this each and every time we have bananas that are over-ripe. I toast slices to have along with my coffee for breakfast. I also use toasted slices to make peanut butter sandwiches for the kids' lunches. Who says if it's good for you it can't taste good too? The original recipe, which I have adapted quite a bit, came from Nick Malgieri's book "How to Bake."

- Preheat oven to 375 degrees F, set rack at middle. Grease and flour one 8 1/2 x 4 1/2 x 2 3/4 - inch loaf pan.
- In a mixing bowl, combine both flours and oat bran, baking powder and soda, allspice and cinnamon and stir well to mix.
- In a separate bowl, whisk together the sugar, egg whites, applesauce, oil, vanilla and bananas.
- Fold the flour mix into the wet mixture, be careful not to overmix.
- Scrape the batter into the prepared pan. Bake for 45-55 minutes, until well risen and a skewer into the thickest part of the bread comes out clean.
- Cool on a rack 5 minutes, then unmold and finish cooling.
- Freezes well.

- Start by pre-heating the oven to 165 degrees C. Then lightly grease a loaf tin and line with strip of greaseproof paper (should be as wide as the length of the tin) (Paper just needs to cover the base and the 2 long inner sides). Peel the bananas and place in a large mixing bowl. Use a fork to mash the bananas to a rough pulp (no need for the banana to be pureed as a few lumpy pieces adds to the texture and flavour).
- Next add in all the other wet ingredients: 6 tbsp honey, 2 eggs and one egg white, 1 tsp vanilla extract, 1 tsp apple cider vinegar (or lemon juice), and 3 tbsp of olive oil. Whisk together until fully combined.
- Next add all the dry ingredients, apart from the flour, to the wet mixture: 50g ground almonds, 1 tsp cinnamon, 1/2 tsp nutmeg, 1 tsp bicarbonate of soda. Use a rubber spatula or wooden spoon to gently stir together.
- Lastly add the wholegrain spelt flour (or other variety of wholegrain flour) to the bowl and fold in gently using the spatula.
- Carefully pour the banana bread mixture into the lined loaf tin and sprinkle over the flaked almonds and chopped walnuts. Alternative fold the nuts into the mixture before transferring to the tin. Place the loaf tin in the centre of the pre-heated oven. Bake for 50 minutes until golden brown and a inserted skewer comes out clean.
- Remove from the oven and allow to stand for a minute or two before removing from the tin and placing on a cooling rack. When completely cool, remove the greaseproof paper, slice and serve.

- Grease a 8-1/2 x 4-1/2-inch bread pan; set aside.
- Mix together dry ingredients (flour through salt) in a bowl.
