BANANA BARS
Wonderful, soft banana bars with banana frosting. Yum, yum!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together the shortening and sugar until smooth. Stir in the milk and 1 teaspoon vanilla. Combine the flour, baking soda and 1/2 teaspoon salt; stir into the sugar mixture. Mix in 1 banana, 1 teaspoon lemon juice and walnuts. Spread evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Let bars cool in the pan on a wire rack.
- To make the frosting: In a medium bowl, mix together the melted butter, 1 teaspoon vanilla, confectioners' sugar, 1/2 banana, 1/2 teaspoon of salt and 1/4 teaspoon lemon juice using an electric mixer. Beat until smooth. Spread over cooled bars and then cut into squares.

CHOCOLATE AND BUTTERSCOTCH FROZEN BANANAS
Steps:
- Insert ice-pop sticks into the cut end of the bananas, halfway up. Place on a baking sheet and freeze until firm, at least 4 hours.
- Melt the chocolate in a double boiler, about 5 minutes.
- Line a large baking sheet with wax paper and set aside. Dip the frozen bananas in the butterscotch and then sprinkle with candied nuts or sprinkles. Place on the prepared baking sheet and drizzle with melted chocolate. Place back in the freezer for at least 30 minutes to set.
- Melt the butter in a medium saucepan over medium heat. Whisk in the brown sugar and salt. Cook, whisking continuously, until the sugar dissolves and caramelizes, about 5 minutes. Remove from the heat, carefully pour in the heavy cream, and then return to heat. Continue to cook until the mixture is smooth. Remove from the heat and let cool completely.
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk the egg white until frothy. Fold in the brown sugar and salt, and then the peanuts, pecans and walnuts. Spread in a single layer on the prepared baking sheet. Bake until toasted and the sugar has melted, about 10 minutes. Let cool to room temperature, then roughly chop.
BANANA WAFFLES
The most delicious waffles! Usually served as a snack or dessert. Also try them with Korean red bean paste instead of the banana, it's even better! I remember eating these while visiting Korea, and recreated the taste at home.

- Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder, salt and nutmeg. Stir in milk and eggs until mixture is smooth.
- Spray preheated waffle iron with non-stick cooking spray. Pour two tablespoons of the waffle batter onto the hot waffle iron. Place two slices of banana on top of the batter and then spoon another two tablespoons of batter on top of the banana. Cook until golden brown. Serve hot.

- Sprinkle granola onto a large piece of waxed paper; set aside. In a microwave, melt chocolate chips; stir until smooth. Stir in peanut butter until blended., Insert a pop stick into each banana half. Spread with chocolate mixture; roll in granola. Wrap in foil and freeze for 24 hours.

HOT BANANA SOUFFLE
We were shown how to make this whilst on holiday Mauritius. Fabulously easy to make and goes well with hot chocolate sauce

- Preheat over to 200c/fan 170/gas 6
- Butter 3 individual ramekins then dust with sugar, by placing a tablespoon of sugar in each, and rolling it around the ramekin ensuring that it sticks to the bottom and sides. Shake off any excess.
- Mash the banana with 2 egg yolks until smooth - can be done in a liquidizer or processor.
- In a separate large, clean bowl, whisk the egg whites and caster sugar until firm
- Fold in the banana & egg yolk puree into the beaten egg whites
- Pour mixture into individual ramekins
- Cook in oven for 10 minutes, until risen and golden on top
- Serve with hot chocolate sauce and suggest to your guests to make a hole in the middle of the souffle and pouring in the chocolate sauce, then sit back and watch the wonder on your guests faces - they will love it!

- Grease bottom and sides of 13 x 9 pan.
- In large bowl, mix granulated sugar, bananas, oil, and eggs with spoon.
- Stir in flour, baking powder, baking soda, cinnamon, and salt.
- Spread in pan.
- Bake bars 25 to 30 minutes or until toothpick inserted in center comes out clean.
- Cool completely, about 1 hour.
- In medium bowl, mix cream cheese, butter, and vanilla with electric mixer on medium speed until blended.
- Gradually beat in powdered sugar with spoon, scraping bowl occasionally, until smooth and spreadable.
- Spread cooled bars with cream cheese frosting.

BANANA BUTTERSCOTCH SOUFFLES YOU WON'T BELIEVE ARE LOW FAT
This is a wonderful low-fat dessert. It is easy to prepare but looks fancy. The bananas need to be pretty firm. It needs to be served right away as the souffles will fall very quickly. Also, if you have ramekins big enough to hold 2 cups then use those. If not, use ceramic bowls that are oven safe. From "Eating For IBS".

Steps:
- Preheat the oven to 450 degrees.
- Spray your bowls (or ramekins) with cooking spray.
- Beat the egg whites until there are soft peaks.
- Slowly add the sugar as you continue to beat the egg whites until they hold stiff peaks.
- Put the butterscotch chips in a food processor and pulse until they are chopped.
- Set aside.
- Using a small hand grater, grate the bananas into the egg whites.
- Then add the butterscotch chips.
- Fold everything together.
- Put the bowls onto a cookie sheet.
- Put the egg mix into each bowl.
- Run a knife around the inside of each bowl.
- Bake in the center of the oven for 15 minutes or until puffed and golden brown.
