1 1/2 cups oat bran
1 cup flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp baking soda
1/8 tsp nutmeg
3/4 cup mashed ripe bananas
1/2 cup milk (2%)
1/4 cup liquid honey
1 large egg
2 tbsp canola oil
1 tsp vanilla
1/2 cup raisins

Steps:

  • Preheat oven to 400°F.
  • Combine oat bran, flour, baking powder, salt, cinnamon, baking soda, and nutmeg in a bowl; set aside.
  • Whisk together bananas, milk, honey, egg, oil and vanilla until blended. Add banana mixture to oat bran mixture and stir just until combined. Fold in raisins.
  • Spoon batter into paper-lined muffin cups, filling cups three-quarters full.
  • Bake at 400°F until a cake tester inserted in centres comes out clean, about 15 - 17 minutes. Cool muffins in pan for 5 minutes.
  • Remove from pan and cool on a rack. May be frozen for up to 1 month.
